Weight Loss Breakfast Recipes That Could Be the Most Important Meal of the Day
INGREDIENTS
1 1/2 c. raw cashews, roughly chopped 1 c. raw pumpkin seeds, roughly chopped 2 c. old-fashioned oats 2 c. crispy brown rice cereal 2 large egg whites 2 tsp. ground cinnamon 1 tsp. kosher salt 2/3 c. honey
DIRECTIONS 1.Heat oven to 325˚F and line large rimmed baking sheet with parchment paper; lightly coat parchment with nonstick spray. 2.In large bowl, combine cashews, pumpkin seeds, oats, and rice cereal. 3.In bowl, whisk together egg whites, cinnamon, and salt. Add honey and mix to combine. Add to oat mixture and mix to coat evenly. 4.Spread in even layer on prepared sheet and bake, stirring and rotating pan halfway through, until golden brown, 25 to 30 min. Let cool completely in pan (as it cools, it will become super crunchy). Store in airtight container up to 1 month.
PER 1/2-cup SERVING: 165 calories, 7.5 g fat (1.5 g saturated), 5 g protein, 105 mg sodium, 21 g carb, 2 g fiber

Pinto Bean Tostadas
Ingredients
1/4 cup sour cream
3/4 teaspoon grated lime zest
1/4 teaspoon ground cumin
1/2 teaspoon salt, divided
2 tablespoons canola oil, divided
2 garlic cloves, minced
2 cans (15 ounces each) pinto beans, rinsed and drained
1 to 2 teaspoons hot pepper sauce
1 teaspoon chili powder
6 corn tortillas (6 inches)
2 cups shredded lettuce
1/2 cup salsa
3/4 cup crumbled feta cheese or queso fresco
Lime wedges
Directions
In a small bowl, mix sour cream, lime zest, cumin and 1/4 teaspoon salt. In a large saucepan, heat 1 tablespoon oil over medium heat. Add garlic; cook and stir just until fragrant, about 45 seconds. Stir in beans, pepper sauce, chili powder and remaining salt; heat through, stirring occasionally. Keep warm.
Brush both sides of tortillas with remaining oil. Place a large skillet over medium-high heat. Add tortillas in 2 batches; cook until lightly browned and crisp, 2-3 minutes on each side.
To serve, arrange beans and lettuce over tostada shells; top with salsa, sour cream mixture and cheese. Serve with lime wedges.

Easy Vegan Green Bean Curry
Here are the ingredients you’ll need (find the exact amounts in the recipe card):
green beans (pre-cooked)
potatoes
tofu
red onion
garlic
tomato paste (22-24%)
canned coconut milk
curry powder
soy sauce
salt, pepper
How to make this vegan green bean curry
Step 1.)
Peel and cut up the 2 medium potatoes (~300g) into small and thin slices (as seen above). Fry them on all sides with 1/2 tsp salt and 1 tbsp oil.
Cut up the tofu into small cubes and fry them as well with 1/2 tsp salt and 1 tbsp oil until golden brown and crispy.
When you are done, set the tofu and potatoes aside.
Step 2.)
Caramelize 1 onion and 3 garlic cloves in 1/2 tbsp oil, then add the curry powder and stir for 1 minute.
Step 3.)
Add the whole can coconut milk, 70g tomato paste, 3 tsp curry powder, 1 tbsp soy sauce, 1 tsp salt and 1/2 tsp black pepper.
Stir everything for 1-2 minutes.
Step 4.)
Add the 200g green beans. Simmer for 5 minutes.
Step 5.)
Take the pan off the stove and as the last step, add the potatoes and the tofu. Stir everything together for one last time.
You are done! All that’s left is to serve your curry with fresh rice.
