No pastry quiche recipe

Hi everyone, 

This is something amazing i would love to share with you, hope you will like it and make your family happy,

Ingredients:

- 2 large potatoes or 3 medium

- 3 large eggs

- 150 g fresh spinach

- 1 cup ricotta

- 1 cup feta cheese

- Handful of chopped fresh parsley

- 1 table spoon cream "crème fraîche" optional

- Salt and paper

- 2 to 3 Table spoon olive oil, "depend of the way you cook the potatoes" 

Ok let's start the magic

- Cut the potatoes into slices about 3 millimeters, then fried them into a little bit of olive oil until both side is brown. if you prefer you can bake them.

- Cook fresh spinach until all the water has evaporate out, chop the spinach and put to the side.

- In a bowl, mix the eggs, the cream, the ricotta and the feta with a fork

- Add the parsley, the spinach and season.

- Grease a 9 inch pie pan with a little butter or spray with oil, then begin to put the fried potato slice into the pan to cover the bottom overlapping each other. Do the same on the edges.

- Pour the mixture and bake at 350 F for 45 minutes or until knife inserted near center comes out clean.

- Let it stand a few minutes then place a dish/plate on top. Flip the pie over to take the pie pan off. Replace it with another dish/plate and flip over again to the original position.

- Attention: The Tarte must be firm when you flip it so not fall apart and crumble.
