DAY 15: RAW VEGAN CAULIFLOWER BITES featuring CFC spice blend by my friend @zaccharybird! I’ve been wanting to try out Zac’s spice blend since I met him at the @perthveganexpo in March earlier this year and it took me sooooooo loooooong to finally do it. In case you didn’t know, Zac is the man behind the CFC (Cruelty Free Cauliflower) drumsticks fame! Go check his feed & his original recipe on his website. Got some cauliflower at the TTDI wet market the other day and figured it’d be great to make this dish as part of my 21-day raw vegan challenge. As I don’t deep fry my food, this is a reincarnation as cauliflower bites instead, using the @excaliburdehydrator. Here’s what I did: INGREDIENTS: 1 medium cauliflower, use florets only . *For Spice Blend* - adapted from Zac Bird’s recipe: 3/4 tablespoon Masarang Arenga Forest Sugar from @straitswholefoods 1/2 teaspoon Truffle & Black Garlic Salt (more on that later) 1/2 teaspoon smoked paprika 1/2 teaspoon onion powder 1/2 teaspoon chilli powder 1/4 teaspoon sage 1/4 teaspoon all spice 1/4 teaspoon dried basil Pinch of dried oregano Pinch of turmeric 1/2 teaspoon kala namak 2 teaspoons nutritional yeast 1 tablespoon @clearspringuk organic unpasteurised Japanese Hatcho miso @olivegrov.es EVOO Sweet basil microgreens from @greenpatchmalaysia METHOD: Place all spice blend ingredients into a large bowl. Toss cauliflower florets in spice blend until evenly coated. Place on non-stick dehydrator sheet and dehydrate in Excalibur Dehydrator at 45 C for 3 hours or desired texture. Game changer alert! I just made Zac's cruelty free chicken and it tastes EXACTLY the same as southern fried chicken. EXACTLY! I made six pieces and only two came out great, but the others tasted amazing even if they looked a mess. I also wasn't able to get a drumstick either, but big chunks are nice right? Raw Vegan Spanakopita - Attempt No. 1 (Gluten-free and Oil-free) 🙌 💚💚💚 The great thing about vegan festivals is that you get to meet so many vegan chefs and be inspired by them. I really enjoyed @zaccharybird's demo on Spanakopita (haven't had any since I turned vegan) and wanted to try to see if I could make a raw vegan version. - There are 2 recipes online and I used that as a reference to make this one below. It turned out yummy altho it doesn't have any of the crispiness of the real filo pastry. - Be sure to check out Zac's website for the original recipe. Thanks Zac and @perthveganexpo for the inspiration! I may try attempt number 2 with a coconut wrap or a zucchini wrap instead when I can find the time 😁 INGREDIENTS 2 cups activated walnuts 2 dates, pitted 1 teaspoon salt Dried dill (fresh is better but I only had dried with me) 1 teaspoon organic salt Pinch nutmeg powder 1 bunch of spinach (200gm), chopped Raw vegan cashew cheese ➡️➡️ I teach this at my cheese classes, both group and 1-on-1 private sessions. DM for details 1 Lemon METHOD For the crust (this is supposed to be the filo pastry): 1. Process walnuts in food processor till flour-like consistency. Add dates and salt, process further till well combined and it sticks when pressed together. 2. Divide mixture into half. Roll out mixture into a flat crust and place onto baking pan or container of your choice. I placed mine in my bento box actually. 3. Place chopped spinach onto the crust. - 4. Add on blobs of cheese onto the spinach and layer them accordingly. This way when you slice through you’ll see the bits of cheese sandwiched between the spinach. - 5. Sprinkle on dill and nutmeg powder on top of the spinach and cheese. 6. Take the remaining crust mixture, roll it out flat and cover the rest of your pie. 7. Dehydrate at 42-45 degrees Celsius in a food dehydrator till desired texture. I dehydrated mine in my @excaliburdehydrator for 8 hours, and halfway through removed the spanakopita from the pan so that it could dehydrate better. - 8. Slice and plate and enjoy! Plantain Peel Experiment No. 1️⃣ (raw vegan). - At the @perthveganexpo, @zaccharybird mentioned how people are now making vegan pulled pork with banana peels and then @sama_hati asked me if I had made any dishes with them and it so happened that I had bunch of plantains hanging from my kitchen doorknob so I decided to experiment with it. So I read up about this whole banana peel trend that's hitting the vegan world and also watched a bunch of videos including this one by @cilantro_and_citronella that has gone viral. I thought I'd just use the Cheatin' Gochujang sauce I previously made from @shisodelicious #BentoPowerBook which has: - Korean chilli flakes - Miso - organic soy sauce from @tais_choice_kitchen delivered by @everleafstoremalaysia - Masarang Arenga Forest Sugar Syrup from @straitswholefoods - sesame oil I massaged the sauce into the peels and then dehydrated them in my @excaliburdehydrator The "pulled pork" went on top of my raw vegan bagel after I spread on the cheese from @thevegandairy. Figured this time I'd move away from my usual style of plating and go for the big bold plates that I saw in Melbourne. They really pile their plates high with good stuff. I plonked these all onto my plate: - Japanese cucumbers - Starfruit - Cherry tomatoes - Purple cabbage - Watercress - Lacto-fermented belimbing - Shivakraut - Pomegranate - Coconut Fakeon I also made a sauce with the walnut milk from @farmerly.com.my. VERDICT? I liked the taste. It didn't have the texture of pulled pork as it was a bit too chewy but maybe I need to play around with the dehydration times and maybe shred the peels into thinner slices? I'd definitely would make more dishes with it. I do have a raw vegan BBQ sauce recipe so maybe I'll try that one of these days.
