This Chopped Spinach Winter Salad is a delightful blend of flavors and textures, perfect for the colder months. For the vinaigrette:. 1/4 cup fresh cranberries. 1/4 cup orange juice. 2 tablespoons olive oil. 1 tablespoon honey. 1 teaspoon Dijon mustard. Salt and pepper to taste.
Instructions: In a large salad bowl, combine the chopped spinach, fresh cranberries, orange segments, chopped pecans, crumbled feta cheese, and sliced red onion. In a blender or food processor, combine the 1/4 cup fresh cranberries, orange juice, olive oil, honey, Dijon mustard, salt, and pepper. Blend until smooth to make the vinaigrette. Drizzle the fresh cranberry orange vinaigrette over the salad and toss to coat evenly. Serve the chopped spinach winter salad immediately, garnished with extra cranberries and pecans if desired. Just a week since feasting on Thanksgiving turkey, stuffing, pumpkin pie and all the inevitable leftovers, we are now at the very outset of December and the upcoming holidays. This is the juncture when we leave one food-centric celebration only to glide seamlessly into a whole new round of potential over-indulgences in the form of bacon-wrapped everything holiday party appetizers, multi-course dinners and other tempting delights. However, if you’re already craving some lighter, healthier options and want to take a break from cooking and complicated meal prep, there’s nothing quite as refreshing and recharging as a “winter” salad. Your local farmers markets remain replete with a range of late fall bounty and will continue to have plenty of freshly harvested produce on hand. So read on for some recipe tips and compelling reasons to serve up a seasonally appropriate salad for dinner this month: Hydration Many raw fruits and vegetables contain high levels of water which is helpful in keeping our bodies well-hydrated during the colder months when we may not feel as thirsty or pay as much attention to drinking enough fluids as we do in the summer. Plus, low humidity levels both indoors and outside in the fall and winter can dry out and irritate one’s eyes and skin and parch the mucous membrane lining the respiratory tract. As a result, the risk of cold, flu and other infections is substantially increased. A diversity of locally grown apples abounds at farmers markets during the late fall and early winter months. There are several reasons why the old saying goes that “an apple a day keeps the doctor away” including the fact that apples are one of the most hydrating fruits available this time of year with an 86% water content. Raw apples will add a crisp sweetness and refreshing crunch to many winter salad recipes including this delicious kale, apple and goat cheese medley. Pears are also in season right now and, with an 80-84% water content, they will add hydration and a mildly exotic splash of autumnal flavor to a variety of unique salad recipes: Smoky Seared Pear, Blue Cheese, and Candied Pumpkin Seed Salad Winter Salad with Pears and Pomegranates Nutritional Value The technical definition of a salad is “a cold dish of various mixtures of raw or cooked vegetables, usually seasoned with oil, vinegar, or other dressing.” And what could possibly be more nutrient laden than a variety of fresh, seasonal vegetables forming the basis of one’s meal? Large storage radishes reach peak season towards the colder months and boast high amounts of phosphorus, potassium, magnesium, calcium, vitamin A and vitamin C. The candy-pink interiors of watermelon radishes will add a splash of fun color to any winter salad such as this beet radish winter green salad. These root veggies are also a good source of phytochemicals and antioxidants. Carrots of all kinds contain an abundance of beta-carotene and can be added to salads both raw or roasted. This colorful roasted beet and kabocha squash salad can be categorized as winter comfort food without the guilt, but all the goodness. Storage and Longevity Another advantage of winter vegetables is that their natural hardiness to the elements translates to an extended shelf life in your refrigerator. A lot of these vegetables are known as “storage crops” because they can last for months without spoiling within a controlled environment. Root and tuberous vegetables; hard-shelled cucurbits (winter squashes and pumpkins); and some brassicaceous head crops, such as cabbages, are all good examples. This means that you can always keep these vegetables on hand so that they are readily available for easy meal prep and eating healthy all winter long. Shredded white, green or purple cabbage makes for a seasonally appropriate salad base instead of lettuce during the winter months, as will kale and shaved Brussels sprouts. A head of cabbage stored properly in your crisper drawer will stay fresh for weeks and can be used as the anchor for some deliciously vibrant and nutritious recipes such as these:

Winter salads are one of my favourite things. Loaded with a lot of vitamins you need to get through the dark season.
Baby spinach leaves are the perfect base for a salad, that matches with nearly everything you may want to add. Another advantage is that you don’t have to worry about remains since you can just freeze the rest of it or use it for cooking.
I also love to add a sweet component to my salads. Orange, pears, apple, grapes or some fruit vinegar will give a special taste to just some basic salad. For some extra protein I like to add chickpeas, any kind of beans or lentils. Grilled vegetables or tofu give the salad the feeling of not being just a salad, but a more ‘real’ meal. Lastly, there has to be some fresh, crispy vegetables like tomatoes, cucumbers or bell peppers.
If you add all that to your salad you don’t have to worry about the dressing too much. A little bit of olive oil, vinegar, salt & pepper, maybe a drizzle of balsamic vinegar is enough to finish your taste explosion.

Hearty roasts, stews and casseroles make the perfect warming comfort foods when temperatures dip and there’s snow and ice outside. But, even during the depths of winter, we also crave the raw crunch and quenching refreshment served up in a bowl of delicious, nutritious salad. Filled with fresh, flavorful veggies, winter salads are a great way to celebrate the bounty of seasonal produce available in the farmers market right now, while mixing up your cold weather meal routine and breaking you out of any dining ruts.
Fennel Salad with Apples & Radishes Noted for its frilly fronds, bulbous base and delicate licorice flavor, fennel is a cool weather crop that enters the farmers market in the fall and graces farmstalls throughout the spring. All parts of the fennel plant are edible and contain a range of important nutrients including significant amounts of dietary fiber.
This fennel, apple and radish salad provides the perfect combination of in-season fruit and veggies that come together with a bright splash of piquant bite, juicy crispness, and hydrating crunch. You can serve it as a light, standalone dish or alongside white fish, pasta or roast chicken. It’s quick and simple to prepare and you can easily find the bulk of ingredients at the farmers market this weekend:
1 small shallot from Sun Sprout Farm
2 tbsp. apple cider or white wine vinegar
2 tbsp. Kontoulis Family Olive Oil extra-virgin olive oil
3 fennel bulbs (1 to 1½ lbs) from Great Joy Family Farm
1 Granny Smith or other tart apple from Orchards of Concklin
3 to 4 radishes from Newgate Farms
½ cup walnuts
½ pomegranate seeds
Zest and juice of 1 lemon
Kosher salt
½ tsp. fennel seeds
Kohlrabi and Pear Salad One of the more off-beat vegetables you’ll find in the farmers market this winter, kohlrabi is often compared to an alien spaceship thanks to its squat, cylindrical bulb sprouting skinny stalks. This sputnik-like vegetable’s tough, thick outer skin needs to be thoroughly peeled off and removed whether you’re cooking it or serving it raw. Kohlrabi’s interior flesh is very firm, sweetly crisp and vaguely peppery, making it the ideal addition for adding crunch, texture and taste to a range of winter salads.
More akin to a slaw than a salad, the julienned apple in this recipe can be easily swapped out with a ripe pear:
1 bulb kohlrabi from Newgate Farms One ripe pear or one Honeycrisp apple from Orchards of Concklin ½ red onion from Sun Sprout Farm Dressing (2 tbsp. Kontoulis Family Olive Oil extra-virgin olive oil, 2 tbsp. apple cider, 1 tsp. mustard, 1 tsp. SOVA Farms honey, salt & pepper) ½ cup hazelnuts ½ cup parsley from Great Joy Family Farm
Massaged Kale Salad with Lemon Dressing I had you at massaged, didn’t I? If you haven’t jumped on the kale bandwagon yet, massaging it in olive oil before tossing it into this basic yet hearty winter salad will make all the difference! The process tenderizes the sturdy leaves, infuses them with a deep, glistening green and mellows their bitter taste.
I prefer using curly kale in this recipe, but Tuscan kale works just as well. To effectively massage your kale-of-choice, strip leaves from the fibrous stalks and cut them into large pieces. Place chopped kale in a spacious bowl and drizzle with Kontoulis Family Olive Oil extra-virgin olive oil and sprinkle with coarse salt. Now comes the fun part! Wash hands, roll up your sleeves and gently work the individual pieces of kale by rubbing them together between your fingers. Work the pieces for no more than 2-3 minutes until their texture becomes tender but firm and not mushy.
Once kale is massaged, spritz with fresh lemon juice, sprinkle with crushed red pepper flakes, grated parmesan cheese, panko breadcrumbs and toss in some minced garlic. You can enjoy this simple salad as a side or main dish or top it with protein like grilled American Pride Seafood shrimp or Stone & Thistle Farm chicken to round it out as a flavorful, healthy and satiating winter meal.
