This may not be the most picturesque cake slice, but it is pleasantly spongy and tart.
#i fucked up and added all the lemon juice and zest to the batter i was supposed to separate for the glaze#panicked and added more flour and baking powder to offset the fact there was too much liquid now mixed into the wet ingredients#so the texture is not what i think it was supposed to be based on the original recipe but it is not bad at all#i still cant believe i did that. one of the last steps i dumped it in and immediately went NOOOOOOO#lue's adventures in baking#this is the raspberry blueberry lemon loaf cake#-pers

gf baking recipes are so deeply annoying because like. i am not going to use four different flours and a laxative made from plant husks you have to grind by hand to make this snickerdoodle
#the husks thing is real psyllium fiber is used so much in gf baking and it's also the thing that makes like. metamusil work. no#and there's always a recipe note saying DON'T buy the powder form of this shit. grind it YOURSELF. well first of all im not doing that#and okay i GET not liking commercial flour blends but jesus christ i can't just buy ALL of these flours man. bc every recipe has em in diff#rent ratios so i'd have to keep the whole bags sitting around. and theyre SO fucking expensive man. for what. for WHAT#i just want recipes to use my sourdough discard man. MAN#guess i will be making and freezing a lifetimes supply of pancakes

From what I've observed Xie Lian's 'cooking style' mostly seems to consist of;
"Throw a bunch of shit into the thing, stick it on the heat, put the lid on, and hope it turns into something delicious after an hour or two."
And I realized that while he is terrible at cooking, he might not be half bad at baking.

cooking, and especially baking, are actually easy when you approach them from a chemistry mindset
#if you know what every ingredient does its so easy to substitute too!!#people are shocked i can do this for baking but baking is almost easier bc there are very few essential ingredients#just#if it was cakey the first time add less flour than the recipe says too. or if it wasnt tall enough add more rising agent#i also skip most recipes that call for baking powder AND soda. bc it should just be one or the other#from a chemistry standpoint#please correct me if im wrong#im literally skipping recipes bc of that

baking never feels more like science to me than when i'm trying to cobble together an intricate multi step recipe together from several different recipes and tutorials online because the recipe I'm imagining doesn't exist....
#genuinely feels like a science experiment making something fancier than a frosted layer cake#have to do all kinds of volume and weight conversions because one recipe is japanese and the other is indian and the other is english lmfao#none of the recipes are probably the exact volume I need so i might have to make some minis with my extra stuff#i have to find a very precise sheet pan size tomorrow for the patterned cake i'm gonna use as the outer bit#otherwise i'll have to make my own from parchment paper??? or tin foil??? man idk.....#i had to write out all of my instructions and ingredient lists so i don't have to go between 6 different websites tomorrow/sat#i had to do research on fucking. gelatine 😭because it's impossible to find gelatine sheets here and they're used in EVERY mousse recipe#and there's apparently a huge debate on what the ACTUAL conversion of sheet gelatine to powdered gelatine is for baking#I also had to type up like an exact order to make each component because most need a significant amount of cooling time#grayson im gonna try my hardest to make you this fancy ass lemon cake and i pray i succeed this time where i failed on my own birthday#2 yrs ago but also i think this will go better bc i'm not doing a jelly insert or a candied mirror glaze#I'm also making my own candied lemons and lemon curd even though i don't have to#mostly because i wanna try doing it and the sheer power of getting to say i made the whole thing from scratch *#minus the actual cake mix because i don't have a good from scratch cake track record and box mixes are so so reliable#and i have too many moving parts to worry about finding a new cake recipe#every fucking cake recipe now is a fucking genoise sponge for SOME REASON#which is NOTORIOUSLY DIFFICULT AND A HUGE PAIN IN THE ASS BECAUSE IT USES NO RISING AGENTS#i want to throttle whoever it was that made online recipe people turn to only using variations of a genoise sponge for their cake recipes#honestly i need to maybe join the baking subreddit and ask for some good old baking/cookbooks with reliable baking recipes#ones that aren't crazy labor intensive for fucks sake i'm not a french patisserie#my stuff#it would be cool to one day have baked enough and have enough know how of how standard baking recipe components work#so i can just come up with my own recipes on my own#and just use whatever flavors i want#i feel like i would enjoy being a baker except if i had to make wedding cakes

Quick note foranyone who likes to bake:
If you're sifting powered sugar with a metal sifter into a metal bowl, DON'T DO IT ON TOP OF A FOOD SCALE.
The powered sugar through the sifter generates a ton of static electricity and touching the bowl will release it, causing the food scale to short out and reset. You won't know how much sugar you have sifted already.
Also it lowkey hurts 0/10 do not recommend. totally didn't shock myself on purpose a few times before realizing it was fucking with the scale
Weigh the sugar out first, then sift it into another bowl away from the food scale to avoid shorting it out

i made this cheesy garlic broccoli "bark" last night and it fucking slapped so hard
#sami rambles#okay so slap a cheese of your choice onto a sheet of baking parchment i used mozzarella bc it's what we had#DONT BE STINGY#then you want to cover the cheese with your purple sprouting broc salt over the tap garlic powder bit of chilli powder if you're feeling it#a little more cheese on top and bake until the edges go brown and crispy#YUMMERS
