Another day in the gym, but in a body that feels so different. As an unintended consequence of my major weight loss, I lost my cycle. My caloric intake was super (way too) low, and my body understandably had to focus its energy on things other than reproduction, like keeping my heart beating lol, as I was dieting. So, I haven't had it since September of last year. I thought that if I increase my calories it would come back, but since I was seeing no signs, we were now heading into a dangerous territory of early-onset menopause. Oh no! In an attempt to figure out where we go from here with my doctors... We thought I could jump start my system by taking Progesterone for 2 weeks. In a sense, we are rebooting the system. Happily, it is working! I'm now starting to see signs that things are moving in a better direction, so so so good!! Ugh, hahaha. I do not complain about this...but MY GOODNESS! I gained 10 lbs so far from taking this pill. Oh my. All water weight and hopefully I can do something about it soon, but whyyyyy. This is so cruel haha. I guess this is a small example to say that this maintenance journey has-been very tough. I've been trying to work up towards having a healthy diet while maintaining what I've worked so hard to achieve... Keeping at my ideal body weight. Moments like this just adds to the frustration, but reveal how much I want to succeed in this journey. I'm happy to be healthier, which is amazing! Rudy and I are at it again! Happy to share that the last of my workout videos with Shake & Shrink has been released. Still amazed that about two years ago my ankles couldn't my larger-than-life weight... Now I'm in a fitness video and feeling like my best self :D! Thank you for the amazing interest I received from yesterday's brussel sprout chips post! I had a few more pictures on hand, so I thought I could detail step by step how I make them. Personally, I love it when recipes are intuitively easy. So effortless they are mindless in a way and I could listen to a podcast or audiobook at the same time. How I prepare these chips reflects that kind of sentiment. Top trick is that I collect the fallen leaves from the brussel sprouts I'm preparing to roast whole. When the sprout is cut and halved, typically one or two leaves fall at the same time. Over time, that accumulates to a lot of chips, as you can see in the left vertical pic. No fuss! 😊 Set your oven to 400°F and coat your soon to be chips with olive oil, salt and pepper (to your taste). I've even seen a few spices used like cayenne and paprika... You would add that at this stage. Carefully lay each brussel sprout face up on aluminum foil, ready to go in the oven. Best if they do not overlap (top right corner). Once the oven is ready, place the sprouts in the middle rack and roast for a total of 20 minutes. Up to you if you would like to flip it halfway (10-minute mark), it would allow for an even chip. Haha- my bottom right photo is an example of an uneven chip lol, but I don't mind it. Now! Careful because the rumours are true... They go from beautifully roasted to horribly burnt really quickly. Keep an eye out and use your judgement. I have total belief in your ability here :). The last step is to let them cool. They are only crunchy once they had a chance to rest... Usually takes about 5 minutes. Transfer into a bowl or a sealed container, and now you have a lovely accompaniment to any meal! Was just about to make some brussel sprout chips and thought that the filled bowl looks so beautiful! Had to share it with you 😊. Once roasted, these 'chips' are so versatile. Great on their own as a light/airy snack or can be added to a dish to give the plate an added element/texture. I love incorporating them everywhere I can when I get the chance. Personally, I like to add these chips to my salads, add a fun crunch that wouldn't have been there otherwise. Not complicated to make and lasts for about a week :). Recipe: Lay each piece out a baking tray (after they'd been coated in olive oil, salt/pepper) and roast for about 20 minutes at 400°F (turning once if you want to really put in that kind of extra effort- good for you if you do! A specific kind of patience is required to carry out this step lol). And then it's done! Honestly, it's that simple. To note, this timeframe works well for my oven, but may not for yours depending on how reliable your temperature gauge is and how the heat is distributed. Each oven is different, so keep an eye out :).
