I... haven't actually listened to/watched Epic: the Musical? Just going through the wiki's description of each saga...

Merlin: The Ithaca Saga for being the big climax that was being built up to. They'd also be intrigued by the Underworld Saga (as foreshadowed by their running amok through Hades in that one Orpheus & Eurydice ask)

Arthur: You know which one he wouldn't like? The Troy Saga, where Odysseus kills some infant for being fated to bring his kingdom's doom.

Adrian: The Wisdom Saga. He just likes Telemachus' underdog energy way better than Odysseus "fuck you, I'm not listening to anything you say" attitude.

Percy: The Cyclops Saga because of the lotus eater story and also all the cleverness with "Nobody".

'I see a song of past romance' - Guinevere's love for Arthur turning into love for Lancelot

'I see the sacrifice of men' - Merlin litterly knowing because of his future vision that Vivian would seal him away if he pursued her and eventually teach her magic, his sacrifice for fleeting affection

'I see portrayals of betrayal' - both Lancelot and Guinevere betraying Arthur's trust, also applies to Mordred betraying his uncle by taking his throne

'And a brother's final stand' - I suppose when Kay kills Loholt who's Arthur's kid? I honestly didn't know what to put for this one

'I see you on the brink of death / I see you draw your final breath' - Arthur getting fatally wounded in the Battle of Camlann

'I see a man who gets to make it home alive' - he gets taken to Avalon to be healed

'But it's no longer you' - not only is he a changed man (not just the PTSD) but he's also alone, his wife is gone, his children are dead, his loyal (except for Lancelot and Mordred) knights who where practically his brothers are dead, and his only mentor is sealed away due to giving in to blind love
