Sugar-Free Cornbread Recipe
Hi, I came up with a recipe for sugar-free cornbread that’s affordable (at least where I live). Here it is + simple instructions
INGREDIENTS 
3/4 cup flour 
3/4 cup cornmeal 
3 tsp sugar-free maple syrup
2 tsp baking powder 
1/8 tsp salt 
2 eggs 
1 1/2 tbsp canola oil or vegetable oil 
1/3 cup milk 
INSTRUCTIONS 
Preheat the oven to 425F and coat the bottom and sides of an 8x8 circle pan with non-stick spray
In a bowl, whisk together the cornmeal, flour, baking powder, and salt until evenly combined. If it looks like one ingredient, then it’s ready
In a separate bowl, whisk together the milk, maple syrup, eggs, and oil. When the ingredients are evenly combined and stick to the whisk a little, then it’s ready 
Pour the bowl of wet ingredients into the bowl of dry ingredients, trying to cover as much of the dry ingredients as you do so. Stir it all together with a large spoon until all the dry ingredients are moist. If it begins to stick together and becomes difficult to stir, then it’s ready 
Scoop the batter into the prepared dish (you’ll most likely need another, smaller spoon in addition to the main spoon), pat down to spread it across the pan, and bake for 20 minutes. Once twenty minutes are over, stick a toothpick in the middle and then pull it out. If it comes out clean, then it’s ready, but if it doesn’t, put it back in the oven 
When ready, set the cornbread on a cooling rack (still in the dish) and let cool for about 15 minutes. Once it’s comfortably warm to the touch—not burning—cut and serve! (The crust will be crunchy and difficult to cut, so be patient; go slow and steady)

Virgil laid flat on his back, eyes fixed on the familiar water stain on the ceiling. 
It’d been there since he moved in, three years ago. He hadn’t noticed it right away, instead focused on exploring all the rooms, thrilled about all the space he would have. He wished the house was smaller— Wished they lived in an apartment. He certainly would have more free time. 
There were four spots in the house Virgil hid the money, and he never visited the same one too often. One was tucked inside an empty spray bottle with all of his cleaning stuff, under the kitchen sink. One was slipped between the bedspring and the mattress, on Virgil’s side. He’d never felt a lump or anything, but he was terrified his boyfriend would somehow feel it in his sleep and find the stash. 
Another was hidden in a plant pot under Virgil’s favourite window, buried under the dirt in a plastic bag. The last was tucked into Virgil’s wallet, which he hadn’t touched in three years. No need for a wallet when you don’t leave the house, and your boyfriend pays for everything with his card. 
His boyfriend had been gone for hours. He’d be gone for several more. Virgil wasn’t sure why he hadn’t left yet, why he did his daily chores and then just laid there, hoping the water stain would grow and spread and swallow the entire house. 
He wouldn’t get another chance like this. Not for years, probably. It was the exact opportunity he’d been waiting for. 
So why couldn’t he do it?
He squeezed his eyes shut as they welled with tears. He imagined his boyfriend getting home with his gifts and false compassion, imagined having to spend another several years as his property, with his dull life of cleaning and not much else. 
He pushed himself off the ground and headed for the window that looked out the front yard. He dug under the daisy growing in the pot, spilling dirt all over the immaculate carpet, ripping up its roots and petals, and grabbed the first stash. 
Once he started, he couldn’t stop. He flew through the house to grab all the money and put his backpack together, and then skidded to a stop in front of the door. He swallowed. He was going to throw up. 
He reached blindly for the coatrack, his fingers wrapping around the soft fabric of his boyfriend’s hoodie. He pulled it on and threw the door open. He didn’t think to close it as he stepped out onto the drive, almost disassociating. All he’d felt under his feet for three years was carpet and tile and hardwood. He hopped off the driveway into the grass, and then the sidewalk, and then the road. 
He took in a shuddering breath, pulled his hood up, and ducked his head as he headed for the nearest train station. 
The ticket stole most of his money, but it didn’t matter. As long as he got to the city, he would be fine. He could figure it all out from there. 
He sat alone on the train, wanting desperately to sleep but instead sitting straight up, never resting from his constant patrol. A lady sitting across from him at one point offered to buy him something to eat, but he refused. 
The train stopped in the city’s station close to midnight. Despite him saying he didn’t need any help, the lady guided his shaky self down the steps, and patted his back. 
“Where are you headed?” 
Virgil swallowed. “Um…”
“Do you… Have family in the city?”
He shook his head. He didn’t know where his parents were. 
“Here, let me see your arm.” 
Virgil was hesitant, but carefully rolled his sleeve up. The cool tip of her Sharpie scribbled over his pale skin for a moment, and when she finished, she’d mapped out the directions to a few homeless shelters. 
“They should be able to help you if you don’t have anyone else,” she said. “They can feed you, too. You should eat.”
Virgil’s face turned red. “Okay. Uh, thank- Thank you. Thanks.”
She smiled and squeezed his shoulder, and then she was on her way. 
Virgil spent the next few weeks hopping around homeless shelters. Most of them only allowed a few days’ stay at a time, and he was forced out after breakfast early in the morning. Occasionally, he had to find alternative places to sleep, resorting to behind closed stores, alleyways, fire escapes— Anything he could find and be relatively certain he wouldn’t be caught. 
Most days spent in the city were unproductive. He was overwhelmed, not sure what he wanted, what choices he even had. The stark difference of the empty house he spent three days in, the loudest sounds being traffic outside or his music, to plunging himself deep in the middle of something that was constantly alive, constantly busy, was… 
Overwhelming. 
He was at a cafe, his current favourite place in the city because they let him stay as long as he wanted and gave him free water, when he saw the ad. 
THREE ROOMMATES (MALE) LOOKING FOR FOURTH 
The three of us are currently struggling to make rent, and we have a spare bedroom. Rent would be approximately $575/month. Two of us work from home, and they’re very loud. One of them only works from home part-time. 
Attached was a phone number to call for an interview. 
Virgil asked the girl behind the counter to borrow her phone, and dialled the number with shaking hands. 
“Hello?” 
“H-Hi.” Virgil cleared his throat as his voice broke. “Um, I saw your ad?” 
“Oh! Awesome! When are you free for an interview?”
“Any time, but…” He swallowed. “I’m… I’m just a little, uh, short. I only have about $490 left. But- But if I just had a place to stay, I could-”
“Hey!” The boy sounded concerned. “Hey, hey, calm down. We can still do the interview! Everyone here is struggling, we get it. Besides, you’re our third applicant, and the other two are… Not favourable. So if you nail the interview, and we don’t get too many more applicants, I’ll try to convince my roommates. Where have you been staying?”
Virgil hesitated. “Kind of, um, all over the place. The- The shelters, mostly.” 
“Hmm,” he hummed gravely. “Okay, are you free in an hour? I’m home, so if you want to bang out the interview today, we can!” 
Virgil’s eyes widened. “Really? Uh- Yeah. Yeah, I can get there. Um, what’s the address?” 
When he arrived at the apartment complex, he wanted to throw up and go back to the shelter. Images of Patton laughing at him, or harassing him, or attacking him were the mildest thoughts to run through his head. 
But this was his best option. 
He knew that. 
He had to go inside. 
He took in a shuddering breath. He had to go inside. 
He walked inside. 
Virgil was afraid of elevators, so he took the stairs, only half procrastinating. Patton and his roommates lived on the fourth floor. By the time he arrived, his thighs burned and he was a little out of breath. He looked down at himself and cringed— He was so skinny, mostly just bones, and pale. He looked like he crawled out of a cave. He wore his boyfriend’s now dirty hoodie and jeans that hadn’t been washed in a week. 
How the fuck was he supposed to land this interview? 
He forced himself to push forward, though, and when he knocked, he barely heard it. The door flew open and Virgil barely managed not to jump back. The boy on the other side had golden-brown skin and big, round green eyes. His dark hair fell in messy curls over his forehead. His apron, covered in flour and cocoa powder, followed the swell of his round belly. 
“Hi!” He stuck his hand out. “Virgil? I’m Patton!” 
Virgil shook his hand with a loose grip and stepped inside when gestured. Patton pointed out the table while he hung up his apron, and Virgil nervously lowered himself into one of the old, chipped wooden chairs. Patton came to sit across from him with a warm smile and a sheet of paper. 
“Okay, so I just have a few questions!” He said cheerily. “Don’t let yourself get too nervous, this is hardly formal, I promise.” 
Virgil nodded. 
“Okay! First question: How long would you be staying?”
Virgil blinked. “Uh… I’m not- I’m not really sure. As long as possible, I guess. Until I get back on my feet and some time after that, if you all are still here.” 
Patton scribbled his answer down. “What do you like to do in your free time?” 
Virgil spent an embarrassing amount of time thinking about that question. Did cleaning count as free time? No, that was basically his job. Better refer to it as such. He wiped his sweaty palms on his jeans and stumbled out, “Well, uh, I guess- I guess I listen to music a lot. I gardened sometimes with, you know, those tiny plant boxes?” 
He gasped, and for a terrifying second, Virgil thought he’d somehow offended him. But then Patton pointed to the right, into the living room. Along the sill of the huge window were several of the exact planter boxes Virgil’s boyfriend bought for him. 
“That’s awesome!” Patton gushed. “You’d be able to help us take care of them! They die a lot. We’re planting a lot of strawberries right now, are you any good with them?”
Virgil nodded. “Y-Yeah, I grew tons of strawberries.” 
Patton grinned ear to ear and furiously scribbled some things down. Virgil relaxed a little. “How clean are you? Are you good at cleaning up after yourself?”
Virgil was nodding before he finished speaking. “Yeah, I’m really clean. I spent a lot of time cleaning before I left, so it’s, uh, pretty much habit not to leave a mess around.”
“How would you feel about a chore chart?” Patton pointed to the fridge behind Virgil. Stuck on the front was a large sheet of paper split into three columns, with the headings PATTON, LOGAN, and ROMAN. “Logan made it, and he’s pretty strict about everyone sticking to it. It basically just splits our weekly house chores down the middle, with small accommodations depending on what job everyone has. On paper, I have the least amount of chores because I work the most hours, but a lot of those are cleaning, anyway.” 
Virgil shifted nervously. Would they let him off by saying looking for a job counted towards those hours? Otherwise… He’d be doing a lot of cleaning. What if I trick myself into thinking leaving was a waste of time? 
“I can do that.” He was surprised at how confident he sounded. 
“Great! How often do you cook? No one’s required to cook a certain amount a week or anything- You don’t have to cook at all, if you don’t want to or can’t -but we eat a lot of family dinners so it’s evened itself out so far naturally.” 
“Yeah- No, I can cook. I have a few recipes pretty nailed down so, uh, that shouldn’t be a problem.”
Virgil’s body was alive with adrenaline. Was he doing well? He thought he was doing well. Patton looked happier and happier with each answer, so he had to be doing well, right? 
“Along the same line, how do you feel about sharing?” Patton bit his lip. “We understand that everyone has their boundaries, but we’re all pretty close. If you moved in, someone might dip into your groceries by accident, and borrow something without asking. We’d never go into your room without asking, but, well… Yeah, we have boundary issues.” He giggled nervously. 
Tightness expanded in Virgil’s chest. “That’s fine,” he managed. 
Patton frowned. “It’s okay if you’re not. If you’re the right fit for us, we’ll just have to be more careful. You’d just have to forgive a few slip-ups while we adjust.” 
Virgil nodded and forced his voice to steady. “It’s fine. I promise.” He’d just keep everything important in his room- It’s not like he had more than a backpack’s worth right then, anyway. 
Patton nodded slowly and wrote down his answer. “Okay… Um, what’s your sleep schedule like? Roman and Logan both get up pretty early. Logan’s really quiet, but Roman’s really… Not, so if you’re a light sleeper and you sleep in like a normal person, his singing might get on your nerves.”
“I’m fine with that. I, uh, my sleep schedule’s kind of all over the place, so I don’t think it matters?”
“Okay! How has it been lately?”
“Well, uh, the shelters kick us out pretty early, so my sleep schedule probably coincides with Roman’s.” 
Patton nodded. “Do you have any pets, or plans to get any?” Virgil shook his head, and Patton made a noise of disappointment. “How often do you get drunk?”
Surprised, Virgil admitted, “I’ve never gotten drunk.” 
“Oh!” Patton blushed and laughed. “Do you plan on changing that any time soon? Was it a rule, or?” 
“It wasn’t a rule, I just… I don’t know, there was never too much alcohol around. I don’t plan on getting into the stuff, no.” 
Patton nodded and mumbled, “Good.” He straightened up. “Are you still friends with your old roommates?” 
Virgil folded his hands in his lap, squeezing tight. “No?” He stammered, “Is, uh, is that bad?”
He shook his head. “No, not necessarily! How many roommates have you had?”
“Well, there were my parents, and then my boyfriend.” 
“That’s completely understandable,” Patton promised. 
Virgil tipped his head to the side in confusion. Even the part about his parents? He didn’t assume Virgil was some ungrateful, heartless monster? 
“And, um, I’m sorry about this-” Patton looked at him guiltily, “-but I do have to ask… How would you be paying the rent? Would you be able to put down a deposit?”
Shit. Fucking hell, this was going bad fast. “I’m not really sure yet? I- I know that’s bad, I just- Uh, well, I have been looking, I promise. I’ll get the first job I can. I promise.”
Patton held his hand up with a frown. “Hey, it’s okay. I know, you’re in a rough spot right now. It’s okay. You said you’d be a little on the first month?”
Virgil swallowed and nodded. “I can give it to you now, though.”
Patton laughed nervously. “Uh, no, that’s okay. Please hold onto that. If we accept you as a roommate, we’ll take it then, okay? Don’t let someone pre-emptively take your money.” 
Virgil blushed. “Okay.”
Patton wrote something down, then looked up and asked, “Is there anything else I should know?” 
He thought for a moment. He was sure there was something he should tell them, something they were obligated to know before they agreed to live with him. Plenty of ideas ran through his head in his boyfriend’s voice, but for whatever reason, he didn’t think those were appropriate to voice. 
“No,” he settled on. “Not that I can think of.” 
“Okay.” Patton smiled and set the paper down. “We’ll get back to you as soon as possible.”

Hello fellas! SO I posted this fic a while back, BUT I re-read it and I ended up being pretty dissatisfied with the final results of it. I also decided not to make part of a series anymore, so now it’s just a stand alone! Alternatively, it can be read here! I hope you enjoy!
Title: A Mundane Morning

Summary: One morning, Hinata and Kageyama attempt to make pancakes. What could go wrong, right?
Just like his name and fiery personality, Hinata awoke when the sun had already started its slow— yet steady rise in the sky. He glanced at the clock on the nightstand beside him, it was exactly 9:30am. This was the usual time Hinata arose on weekends, as he liked to sleep a few more hours those days instead of getting up at six o’clock sharp to commute to school, and so did his boyfriend. He turned around to face the man that was laying in bed behind him, who was snoring gently, chest steadily rising and falling with every breath he took.
It was these moments that Hinata loved. The relaxing days they would both stay in bed and unwind after the week’s gruelling volleyball practices. Even though they were both bundles of endless energy, they still needed to recharge once in a while, and their bodies thanked them for it. He shifted his weight to rest on top of the latter, giving him a little peck on the cheek, receiving a grunt from him in return.
“Tobio,” Hinata whispered gently into his ear, like he always did when he woke him up. “WAKE UP!”
Kageyama instantly jolted awake in surprise, which was followed by rolling off the bed and face planting into the cold hardwood floor beneath him. He clawed his side of the bed, gripping onto the bedsheet as leverage to help himself up. His chin, forehead, and nose were a scarlet red from the impact, tears forming in the corners of his eyes.
“Did you have to yell dumbass?!” Kageyama shouted. He was angry, but that was the usual Kageyama when Hinata did this to him anyways and every single time, he would fall for it.
Hinata snickered, covering his face with his hand. “I’m sorry, Tiredyama.” His words dripping with sarcasm. “Do you want me to kiss it to make it feel better?”
Instantly, Kageyama stopped in his angry tracks. His face was still red, but for a completely different reason. He sputtered out a reply, “Y-Yea actually…” This was so unlike the usual, uptight, yelling-in-Hinata’s-face Kageyama, that Hinata was actually taken aback. Who knew his boyfriend could be so timid and adorable?
With a spring in his step, the orange haired boy bounced to the other side of the room. On his tippy-toes, he closed his eyes and puckered his lips, when suddenly THWACK, an equally as thick skull collided into his. He lost his balance and fell ass- first onto the floor.
The shorter man held his head, which was throbbing in pain. He looked up at his boyfriend, who had a smirk plastered on his face.
“What’dya do that for?!” Hinata winced. That was definitely going to bruise over. Some said Hinata had a thick skull, but in his opinion, Kageyama’s was ten times— no, twenty times thicker.
Kageyama outstretched a hand. Hinata accepted it, allowing Kageyama to pull him up. “Good morning, Shoyou. Do you want me to kiss it better?”

Although the two of them had no intention to step foot outside of the house today, which they had all to themselves as Hinata’s mom and sister ran errands, they changed out of their pyjamas into their lounge wear. Hinata looked around his messy bedroom for his favourite shirt and a pair of shorts. After a quick glance with no sign of them, he searched through the pile of clothing in the far corner of the room. He stuck his hands into the pile of dirty laundry, sifting through it until he found what he was looking for. He pulled both articles of clothing out of the pile, slipping on the oversized pastel yellow t-shirt that he obviously stole from Kageyama and his favourite pair of shorts he received from Oikawa for his birthday last year. They weren’t particularly his style—with little alien heads scattered around them on top of a navy blue background speckled with tiny stars— but he was honoured that the Grand King would even give him a gift in the first place, seeing how he was dating the underclassman who was a complete pain in the ass to him.
It was time for breakfast and Hinata was ready to eat. His stomach growled violently in hunger, making its voice known through the loud rumbles that came from it. So, he made his way into the kitchen, where Kageyama already was.
“What are you looking at?” Hinata came down the stairs to find his boyfriend squinting at a piece of paper taped to a cabinet door at eye level.
Kageyama stopped what he was doing and looked up at his short boyfriend, who skipped the last step of the staircase by jumping from the second last. “What does it look like I’m doing?” He asked, squatting low to open the cupboard below the one with the piece of paper. He pulled out a large metal mixing bowl, “I’m making breakfast.” he stated matter of factly. 
Hinata furrowed his eyebrows. He was skeptical. This wasn’t the first time Kageyama had tried to make breakfast from one of the recipes in his mom’s cookbook that she always left in the kitchen. For starters, neither of them knew how to cook and every time they tried to, the dishes they made would end up tasting horrible. Secondly, Kageyama only had a certain amount of patience when it came to cooking. The second whatever they were cooking hit the pan or pot they were using to cook it with, the temptation to turn up the heat in attempts to speed up the cooking process was too great for Kageyama. He always gave into it, which usually resulted in billowing smoke clouds, burnt food, and the both of them running around the house to open every single window so the fire alarm wouldn’t go off. All in all, it wasn’t Hinata’s favourite thing in the world to do, but he admired his boyfriend for giving it his all. It was the thought that counted, not how it tasted in the end.
“Let me give you a hand at least.” He lightly bumped Kageyama out of the way with his hip so he could see the recipe. It was a very simple pancake recipe. It clearly and thoroughly listed every ingredient they would need and every direction they needed to take in order to create perfectly delicious pancakes. Hinata’s confidence in his cooking abilities swelled as his eyes continued reading down the page. If he and Kageyama screwed this up, they would be the biggest idiots in the entire world— no, universe.
Kageyama nodded in approval. Since he was grabbing every kitchen utensil they would need to make these pancakes, Hinata started on grabbing the ingredients they needed. He looked at the recipe again, reciting the ingredients they needed out loud to remember, “Flour, sugar, baking powder, baking soda, salt, milk, two eggs, and vanilla extract.” He bounced around the kitchen, setting each ingredient on the island in the center.
Once everything was assembled, the two got to work. Hinata rolled his sleeves up to his shoulders. “Where do we start, Chef Kageyama?”
Kageyama’s face flushed a bit at the title he was given. He took the recipe down from the cupboard, cleared his throat, and read out step one word for word, “‘In a bowl, mix together all the dry ingredients.’ Sounds simple enough.”
Together, the two boys poured all the dry ingredients into the plastic bowl with less than accurate measurements. Hinata started to mix the concoction of powders together until Kageyama took the metallic whisk from his hand, tsking.
“You’re not mixing it enough. Here.” He motioned Hinata to hold the bowl down for him. The shorter man braced for impact.
Kageyama took the whisk in his dominant hand and as if he were using the might of Zeus, he stirred as fast as he could. Clouds of powder puffed up into the air as the contents of the bowl splashed over its rim.
Hinata coughed as he inhaled particles of it that were hanging in the air, “You’re stirring too fast, Idiotyama!” He grabbed Kageyama’s forearm and wrenched the whisk from his hand and said, “You have to make it more like zoom!”
Hinata kept the bowl steady by placing it between his stomach and his arm. At the same pace, the orange haired boy mixed at the exact same speed as his boyfriend, more powder further splashing out of the bowl and onto the counter. 
“No dumbass!! It’s more like whoosh! Give it to me!” Kageyama gripped the bowl and tried to tug it out of Hinata’s grasp.
“No!” Hinata put the whisk down and tugged against Kageyama, who was also pulling the bowl in his direction. “It’s like zoom!”
Kageyama, “Whoosh!”
Hinata, “Zoom!”
“Whoosh!”
“Zoo-”
The bowl slipped out of both of their grasps, it was airborne. All they could do was watch as it started its descent downward. It was as if the bowl was falling in slow motion-- their mouths agape at the spectacle. As it plummeted to the floor, a plume of the rest of what was inside blasted upwards, covering the two in a powdery mess.
The two coughed violently, the powder making its way into their lungs. Hinata’s mom was going to be pissed. Usually, she had the patience of a saint since her son and daughter were possibly the most energetic children known to man, but Hinata could already imagine her patience thinning upon seeing the disaster of a kitchen they left in their wake.
The orange haired boy looked around, there wasn’t a single spot around them that wasn’t dusted with powder; even his feet were covered with an avalanche of it.
“... That’s what happens when you go 'whoosh’ instead of ‘zoom', Idiotyama.” he added.

After trying to clean up the powder as best as they could, they measured out all of the ingredients and tried again. Instead of going ‘whoosh’ or ‘zoom’, the two compromised with a more moderate mixing speed, which they now dubbed in their language of onomatopoeias as: ‘zwhoosh’.
“What’s the next step?” Hinata asked curiously as he looked into the bowl at their combined dry ingredients, satisfied that none of it ended up anywhere outside the bowl.
Kageyama read out loud, “‘Make a well in the center and pour in the milk.’”
A simple instruction that could be carried out by a child, except, “What do they mean by ‘well’?” Hinata asked, picturing an actual well that people used in the olden days to get water from. How would they fit an entire one of those in their bowl?
“I think they mean something like this…” with caution, Kageyama carefully scooped all of the ingredients into the middle of the bowl. He cupped one hand around the mountain-like pile and used the other to carefully dig a hole in its center.
“Woah! You’re a genius, Kageyama!” Hinata exclaimed, sparkles in his hazel eyes. Even if Kageyama could be a dumbass, Hinata loved how smart he could be sometimes. “You stir as I pour the milk in.”
Not wanting to mess up like last time, Hinata followed the instructions to a T, pouring the milk into a measuring cup before plopping it into the bowl. The recipe called for one and a quarter cups of milk and to mix until it was lumpy, so Hinata added as much as they needed to get to that consistency, reaching his goal with careful precision. Apples fried in beer batter
Okay, so this is a bit of a weird one, but trust me when I say that it’s a delicious dessert. The last time I made these was with friends and we were so busy eating them fresh out of the pan that I forgot to take pictures until we ended up with the last batch of oddly shaped apple bits. Since the beer batter itself isn’t sweet, you can also repurpose it and use it to deep fry fish or vegetables.
Also, a little heads up: If you don’t drink alcohol for whatever reason, you can absolutely make these with alcohol-free beer. I’ve done it before when cooking with Muslim friends, and it turned out the same as always.

Ingredients:
200 g flour
1 tablespoon oil
150 ml beer
2 eggs
1/2 teaspoon salt
3 apples
2 teaspoons of starch
1/2 teaspoon of cinnamon in 3 tablespoons of granulated sugar
enough vegetable oil (or another oil with a high smoke point) to fill your pan up with 1 cm of oil (for shallow frying) or enough to fill your deep fryer
Instructions:
Crack the eggs in a bowl and whisk them with salt, oil and beer. Add sifted flour and mix until it is all incorporated. You want it to have a consistency that will completely cover your apples without dripping everywhere, so if you feel like it’s too drippy, add more flour. If you feel like it’s too stiff to cover your apples add more beer, or alternatively a bit of milk. Let the batter rest in the bowl for half an hour while you prepare everything else. Peel the apples. If you have a corer, you can use it to take out the core and cut the apples into rings that are half a centimetre thick. But if you are like me and don’t have one, cut them in half, take out the core and then cut them into half-centimetre moon-shaped slices. Toss the apple slices in starch. That will help the batter stick to them.
Now it’s time to get your oil ready. If you are using a deep fryer, set it to 180°C and wait until it gets up to temperature. If you are using a pan, fill it with oil so that you have a one-centimetre thick layer of it and put it on medium-high heat. If you stick in a wooden spoon and bubbles start forming around it, the oil is up to frying temperature.
Use the time while your oil is heating up to make the cinnamon sugar mixture and put all your apple slices in the bowl with the batter. Mix them around gently so they are all evenly coated in the batter. You could also just dredge them through the batter as you go, but this is quicker and less messy, in my opinion.
When your oil is up to temperature and your apples are battered, it’s time to deep/shallow fry. Use tongs to transfer the apples into the pan/deep fryer. It’s best to make multiple batches and not to overcrowd the pan/fryer. I usually go with four to six slices at a time. If you are deep frying, use a slotted spoon to keep them moving in the oil for ~10 mins. For shallow frying, turn them over after ~5 mins. This is not an exact science, but basically, they are done once they are golden brown all around. I’ve had days when it went quicker and days when it took longer. Maybe it’s because I use a different brand of beer every time. I can’t tell you. The ones in the picture above could’ve gone a little longer, my friends and I were just really done with the whole frying thing at that point.
Once the batter is as browned as you want it, take the apples out with a slotted spoon and put them on a piece of paper towel to drain. While they are still hot, sprinkle over the cinnamon sugar (or leave them as is if that’s not your thing). Then put in the next batch.
Depending on the size of your apples you will be left with some more batter at the bottom of your bowl. You can take spoonfuls of the batter and fry it in the oil to make crispy pancakes.
This amount of apples and batter was enough for me and two more people, but we barely ate anything else that evening.

When the pasty is sealed, place it on a baking tray, brush it lightly over the top with milk.
Place the baking tray with all pasties on it on the middle shelf of the oven, for approx. 45 minutes, check after 30 minutes until the pastries are golden brown if your pasties aren’t browning increase the oven temperature by 10c/25f for the last 10 minutes.
Rest for 1 or 2 minutes serve hot, but you can also let them go cold and have the next day.
