sometimes when your mental health is a bit shaky you feel like you cannot possibly do a thing that you know would help, like preparing and eating a food or taking a shower or going outdoors for a bit or whatever

and maybe that is true and you can't do it, but maybe you can do a little of it and then take a break and pick it up later, whenever later is

which is to say, it took me two whole days to make apple crumble, because after cleaning the kitchen and peeling the apples, i was just. done. no more energy. cannot continue

so i returned the ingredients to the fridge, and tried again today

and now there's apple crumble in the oven, i'm all out of spoons once more, but once i've the energy to actually eat something, there will be apple crumble for me to eat, so i still win

the french cookbook from ... 1800? claims that the only reason for making a roux from flour and butter is tradition, since (recently commercially available?) pure starch would be far better suited to the purpose
