Thai omelet with noodles (not my picture)

Like the last recipe, this didn't work out for me either. I was super excited about this one though. I thought it looked really great. Something just didn't really add up in the recipe but I can't really pin-point it. Something was just off. the noodles went very mushy and the sauce just didn't taste good. Thank god for the omelet at this point. The recipe also adds baby corn but man, I did not like it. I'm not a picky eater, but baby corn just didn't do it for me.

I couldn't find this recipe online either so here it is:

ingredients 4p: 200 gr dried ricenoodles, 6 eggs, 4 cloves of garlic, green asperges, 100 gr. green beans, 250 gr. canned babycorn, 1 lime, soybeans, 2 spoons of peanuts, 5 ml tamarindpaste, 60 ml soysauce, 1 teaspoon sugar, chilipowder, peanut oil.

Boil the noodles and drain the noodles.

Beat 4 eggs and make 4 omelets. Keep them warm.

Clean and cut your vegetables. Mix the sugar with the tamarindpaste, sugar, soy sauce and 150ml water into a sauce.

Heat the peanutoil and fry the garlic and vegetables for 2 minutes. . Add the noodles, beat the remaining eggs and add both to the wok. Stir for 1 minute.

Plate the omelet, add the noodles and veggies and top off with the peanuts and soybeans along with a slice of lime. Add chilipowder and soy sauce to taste.

Separate seeds from jackfruit flesh; soak the seeds and ground them. Fry onion, garlic, ginger and chilies in ghee until transluscent. Ground spices and add them, then add tamarind paste. Finally add jackfruit pieces and coconut milk; simmer until sauce is thick and flavourful. Fry chopped okra in a tiny amount of oil with garlic until slightly brown. Serve on basmati rice.
