This is a tasty, gluten-free recipe for spicy rice noodle salad that can be made in two different ways. Perfect for a meal that is light and cool.
Ingredients: 8 oz gluten-free rice noodles. 1 cup shredded carrots. 1 cup thinly sliced cucumbers. 1/2 cup chopped fresh cilantro. 1/4 cup chopped green onions. 1/4 cup chopped roasted peanuts. 1/4 cup gluten-free soy sauce. 2 tablespoons rice vinegar. 1 tablespoon honey. 2 teaspoons Sriracha sauce. 1 teaspoon minced fresh ginger. 1 teaspoon minced garlic. 1 lime, juiced. Salt and pepper to taste.
Instructions: Cook the rice noodles according to package instructions, then rinse them under cold water and set aside. In a large bowl, combine the shredded carrots, sliced cucumbers, cilantro, green onions, and roasted peanuts. In a small bowl, whisk together the gluten-free soy sauce, rice vinegar, honey, Sriracha sauce, minced ginger, minced garlic, and lime juice to make the dressing. Season with salt and pepper to taste. Divide the cooked rice noodles into two portions. Toss one portion of the rice noodles with half of the dressing, ensuring they are well coated. Toss the other portion of the rice noodles with the remaining dressing. To serve, arrange the dressed rice noodles on a plate or bowl and top with the vegetable mixture. With tender beef strips, vibrant vegetables, and a tasty sweet chilli and soy sauce, this stir-fried dish with rice noodles is easy to make and very tasty. When you're craving a filling stir-fry but are pressed for time on a weeknight, this dish is ideal.
Ingredients: 300g beef strips. 200g rice noodles. 2 tablespoons sweet chilli sauce. 2 tablespoons soy sauce. 1 tablespoon vegetable oil. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 onion, thinly sliced. 2 cloves garlic, minced. 1 teaspoon ginger, minced. 1 carrot, julienned. 2 spring onions, chopped. Salt and pepper to taste.
Instructions: Cook rice noodles according to package instructions, then drain and set aside. In a small bowl, mix sweet chilli sauce and soy sauce. Set aside. Heat vegetable oil in a large wok or skillet over high heat. Add beef strips and stir-fry for 2-3 minutes until browned. Remove from the wok and set aside. In the same wok, add a bit more oil if needed, then add garlic, ginger, and onions. Stir-fry for 1-2 minutes until fragrant. Add sliced bell peppers and julienned carrots. Stir-fry for 3-4 minutes until they start to soften. Return the cooked beef to the wok and pour the sweet chilli and soy sauce mixture over everything. Stir-fry for another 2-3 minutes until the sauce thickens and coats the ingredients evenly. Add the cooked rice noodles and spring onions to the wok. Toss everything together and cook for an additional 2 minutes until heated through. Season with salt and pepper to taste. Serve hot, garnished with extra spring onions if desired.

My favorite thing to do is to revamp dishes into gluten free vegan versions and sometimes on a budget. Today I reached out to one of my friends @mrlimthedynasty whose family owns an Asian restaurant and asked if there was an inexpensive dish he would recommend, and he suggested Pad See Ew. Let's get started! To make it vegan, I replaced the chicken and egg with turmeric tofu and Just Egg, and to make it gluten-free, I used rice noodles instead of wheat noodles. For the sauce I used @sanjtamari gluten-free Hoisen sauce. It turned out so flavorful and delicious, and I'm excited to share the recipe with you all! Also, I was able to make four large plates for $20!!! P.S. I couldn't find the Japanese broccoli so I used traditional broccoli. I hope you all give this recipe a try and let me know what you think in the comments! Pad See Ew recipe serves 4 people. Ingredients: 1 pound fresh wide rice noodles 4 tablespoons olive oil 4 cloves garlic, minced 1 cup sliced turmeric tofu 2 cups Chinese broccoli, cut into bite-sized pieces 1 bottle of Just Egg 1 bottle San-J sauce Optional toppings: green onion sesame seeds chili flakes Instructions: Soak the fresh rice noodles in warm water for 15-20 minutes until they are softened. Drain and set aside. In a wok or large skillet, heat the oil over medium high heat. Add the minced garlic and stir-fry until fragrant…happens quickly. Add the tofu to the wok and stir-fry for 2-3 minutes until browned and cooked through. Add the Chinese broccoli to the wok and stir-fry for 2-3 minutes until tender. Remove the broccoli and tofu and set aside. Add rice noodles to the wok and stir-fry for 2-3 minutes until heated through. Remove rice noodles and set aside. Pour Just Egg into the pan and let sit until it starts to thicken. At this point, toss everything back into the pan, now add the sauce mixture over everything and stir-fry for another 2-3 minutes until the noodles are evenly coated.
