A couple of weeks ago I was randomly craving pumpkin ravioli that I only ever ate at my childhood best friend's house and wanted a pasta that was kind of sweet/nutty/savory. I had a sweet potato and found this recipe for sweet potato gnocchi!

It only has two ingredients--roasted or steamed (or in my case microwaved) sweet potato and flour (the recipe calls for gluten free but I used all-purpose). Really easy and after cutting the gnocchi I froze most of it for future easy dinners!

I cooked it with frozen kale, butter, and garlic and it was autumny and really good. Definitely satisfied the vibe of pumpkin ravioli without having to go out to the grocery store.
