"Being an appetite" might sound, or even be, cathartic to someone who has been stifled for being different in a society with too narrow definitions of what is acceptable, but it does not pertain only to the unjustly suppressed ones. An appetite is not moral, or immoral, but can be defined both by its subject and object - appetite without limits, though, always ends destructive because, like a virus, it can't stop until it exhausts everything around it,and in the end itself.

Orlok is not liberty to anyone but Ellen - Ellen sees him as liberty because she's been unjustly socially punished all her life, but to society at large, Orlok is the lack of restraint, the taking of hungers that civilization must tame in order for us to rise above the level of the beasts to their natural limit, the breaking down of every convention, bond, law and protection. Ellen's society is wrong in that it has such severe criteria for what is deemed acceptable that it condemnns to its unseen underbelly all and everyone who don't conform, thus twisting their peculiarities into vices and afflictions - but Orlok isn't against society for being restrictive - he is against society for being society. He is against constraints because constraints hinder his hunger from seeking satisfaction. Orlok would be destructive for every society - maybe he wouldn't have an Ellen to stand in the window and call out to him, to coax and seduce, but Orlok is both an inhuman force of destruction, and a human who in life both aspired to be, and incarnated a system of superiority to others - a feudal lord who still, after death, eats away at humanity starting with their inhibitions. He embodies all the hungers that society keeps at bay, both those it does out of conformity and those it does out of necessity - and thus he is fundamentally anti-life. Ellen reconciles the two by giving into her hunger until it kills her, and with her, itself - no one comes out alive after giving into Orlok, but Ellen refuses to become mindless and beastly - she has the presence of mind to keep him feasting on her (keep herself relishing him feasting on her?) until he goes out like a candle before the sun, rendered obsolete.

Orlok is not liberty - he is libertinism. Some hungers were never meant to run free, to the detriment of everything we are and have managed to be. Freedom to the extreme becomes a yoke in its lack of limits, like Orlok's immortality turns into an eternal death rattle. Ellen makes liberty for herself out of him, bends him to her own will, reaches inside him and finds the golden core of freedom that exists inside the greatest excess, and shows it to him before they die.
