Projects and yarn coming and going almost daily, tons of photography and graphics for step outs and tutorials, and way too much time spent with our faces in a computer screen writing patterns and tutorials and doing the layout of the pages of the book. Not complaining! We love what we do and working on this latest book is the ultimate collaboration of our individual skills. Where are my unicorn people? I have the cookbook for you, Unicorn Food: Magical Recipes for Sweets, Eats, and Treats! While my kids LOVED everything we made in this, there are some adults-only recipes, too. This is such a cute book! It’s filled with rainbow food and has both healthy stuff and treats, so it can handle whatever your food mood is.
I’m going to share with you her recipe for Rainbow Swirl Bread. It’s a delicious, traditional, yeasted white bread, just a whole lot more fun! It’s surprisingly easy to make. A huge thanks to Sterling Epicure for letting me share it with you! I’ll tell you all about the rest of the book later, but first, that bread!
Rainbow Swirl Bread
Makes: 1 loaf bread – Prep Time: 2 hours – Cook Time: 1 hour
Every unicorn kitchen needs a staple bread recipe; this one just happens to be swirled with the colors of the rainbow! Let your imagination soar with this basic white bread recipe; think fairy toast, unicorn grilled cheese, and more.
Ingredients
3 cups all-purpose flour
1 tablespoon granulated sugar
1 packet (1/4 ounce) active dry yeast
1 cup whole milk at room temperature
1 large egg
2 tablespoons unsalted butter, softened
2 teaspoons kosher salt
Food coloring (red, orange, yellow, green, blue, purple)
Directions
1. In a large bowl or the bowl of a stand mixer, whisk together flour, sugar, and yeast. Add the milk, egg, butter, and salt and stir to combine.
2. If you are using a stand mixer, use the dough hook to knead the dough until it becomes smooth and elastic to the touch, about 5–8 minutes. If you don’t have a stand mixer, stir the ingredients to combine and knead the dough on a clean floured surface and work it by hand until it is smooth and elastic, about 10 minutes. Set the dough in an oiled bowl and cover it with a tea towel. Let it rise in a warm, dark place for at least 45 minutes or until it has doubled in size.
3. Punch the dough down and cut it into six even pieces. On a plastic cutting board (or any surface you’re willing to dye with food coloring), add a different color of food coloring (about 4–5 drops or so – I used a lot more than that! ~Jen) to each ball of dough and knead it until the color is fully incorporated. Use gloves to prevent your hands from staining; if you prefer, change the gloves between colors to prevent cross-contamination. After the color is consistent throughout the dough, place the balls of dough into six small separate bowls and cover to let rise another hour.
4. One at a time, remove each colored ball of dough and gently roll it into an 8 × 4-inch rectangle about 1/2-inch thick. Stack the color rectangles on top of one another and roll the dough up into a log. Lightly grease a 9 × 5-inch loaf pan and set the dough into the pan. Let it rise another 45 minutes or until it has doubled in size.
5. Heat the oven to 375°F and bake the dough for 35 minutes or until it is lightly browned. Remove the loaf from the pan and let it cool completely on a rack.
This makes an exceptionally good hummus (garlic, please, but you do you), avocado, and salted tomato sandwich! ~Jen

My thoughts and pics of the recipes we tried:
1-4) DIY Rainbow Pasta – p 42. This is an easy pasta recipe. She’s not even having you laminate the dough. I made a creamy lemony, garlicky Alfredo sauce and put that in the bowl first, and then just tossed the hot pasta in a little butter and piled that on top so the colors wouldn’t be muted.
5) Rainbow Veggie Bowl – p 39. Easy peasy, super healthy, and yummy.
6-7) The Unicorn Milkshake – p 97. This is filled with as much berries as ice cream! 😀
8) Unicorn Movie Mix – p 55. This is really cute. I couldn’t find pastel m&ms in winter, so I used Jordan almonds.
9-12) Rainbow Swirl Bread – p 13. This is a traditional yeasted white bread, just a much more colorful version. She calls for 4-5 drops of food coloring for each ball but I used a lot more than that to get the vibrant color I wanted. It’s not really fussy to make. It’s actually really easy. I included step-by-step pics just so you can see that it’s totally doable.
