This simple tomato and white bean soup is great for cold days because it's warm and comforting. With protein-rich white beans and tasty tomatoes, this is a healthy meal that you can make quickly with only a few basic ingredients.

Ingredients: 1 can 15 oz diced tomatoes. 1 can 15 oz white beans, drained and rinsed. 1 onion, chopped. 2 cloves garlic, minced. 4 cups vegetable broth. 1 teaspoon dried basil. 1 teaspoon dried oregano. Salt and pepper to taste. 2 tablespoons olive oil.

Instructions: In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, saut until translucent. Add diced tomatoes, white beans, vegetable broth, dried basil, and dried oregano. Season with salt and pepper to taste. Bring to a simmer and cook for 15-20 minutes, stirring occasionally. Once the soup has thickened slightly and flavors have melded, remove from heat. Serve hot, garnished with fresh herbs if desired.

index on the subject of #soupweather what is your favorite kind of soup... eye recently made a delicious pumpkin soup using my favorite varietal of pumpkin (galeux d'eysines!! i hardly ever see it in stores. such a pretty shade of pink) and im also a big fan of avgolemono

i'd never heard of avgolemono! very interesting... and the galeux d'eyesines is indeed quite pretty though my first connection is that the pink resembles "millennial pink". it's a good color though i see why millennials like it

truthfully i'm not a big soups guy. on the whole i prefer crunchy, sharp, spicy, tangy dishes. a variety of distinct textures and flavors. i'm pretty conservative on applying sauces to things too; i keep it dry around here.

but soups are good comfort food, and can be very filling if prepared correctly. i feel like ultimately i can't pick a favorite soup because they are so contextually bound.

here are some beloved soups and their stories:

chicken and dumpling soup (with drop dumplings, not sheet). this is a nostalgic recipe for me. we would only make it once or twice a year. the buttermilk drop dumplings were the perfect springy texture with a good amount of flavor, and the soup (very thick broth bordering on sauce) was warm and comforting. good winter dish (not that florida had a real winter). i think the recipe is from the food network website so i can post it if i make it

cuban sopa de pollo served with tostadas (buttered toasted bread). i was told the secret ingredient was a little saffron, which would make the broth reddish orange. best with lime. favorite at a local restaurant i'd visit with my grandma.

pho, in general. it's in a class unto itself. i only tried it for the first time in college, regretfully late. the broth is very refreshing, delicately balanced and rich. i think i forget how good it is sometimes, maybe because i have had subpar pho sometimes. but god! when it's good, it's fucking good. i should get some again

matzoh ball soup. i have to mention it for jewish reasons. my family enjoys making the balls really fucking dense and firm, which seems to be unpopular relative to soft and fluffy, but i do miss those hard-ass balls.

There was a haddock chowder that i had at a restaurant in maine that was so good that my dad asked them for the recipe. lo and behold the chef came back with a slip of paper. i think the freshness of the fish is critical to the quality, so it may not be possible to live up to the original, but i may be able to get close if i try making it. the broth wasn't overly creamy and thick, it was subtly flavorful. it was a nice complement to the flaky fish.

i think there's another soup i'm missing but i can't remember. i mean i love a good beef stew but i cant think of a specific time or place it worked for me

iirc there was a really good carrot and ginger soup they would serve at the dining hall. when the old dining hall director left, everyone was sad bc he was super nice, but the new guy was really cool and endeared himself to everyone by opening up soup requests. we all looked forward to the soup announcement emails

one of my exes reached out to me on discord to tell me that the muji soup stock is really good and relatively affordable. after trying their rice porridge and okra soups, i can say, yeah. they are worth texting your ex about
