The difference in volume and hair between Stan and Ford is actually a kinda funny indicator of their lives for 30 odd years:
Ford's hair: "Why yes, even if I managed to be thrust into a portal, received a metal plate to the head, and saw more dimensions and creatures than you can imagine, I'm used to it....Hence why it's voluminous and thick, and still darker grey."
Stan's hair: "I have been in the most cramped spaces, the most rank areas to exist, broke harder than the Liberty Bell, ran from most every authority in every country I've been to....and dealt with 2 kids for a summer. I am one year away from ghost white hair or bald."
