Good news, Siso has eaten a bit more now. Some saffron rice and chicken broth. Despite asking for mango lassi I think it is wise we keep to less rich foods. I am hesitant but I must attend a congregation meeting tonight, so Siso will be kept under watch by a trusted ghoul.
They will have access to the phone again though with some restrictions. -T.I.A

Five Drinks that Define Me
I was tagged by @mrsmungus in this post, so let's do this thing~
Hot Chocolate - it's chocolate, hello! Also, the warmth really helps with decongestion and I love it!
Mint Tea - pretty much the same as above, just with mint instead
Orange Juice - yeah, I'm basic like that. It's nice and refreshing.
Mango Lassi - this is the mango-flavored Indian yogurt drink. It's a thicker consistency, like a milk shake, and it's really good~
Badam Milk - so, 'badam' refers to almond, but I'm not talking about almond milk. No, this is almond-flavored milk, the cold, refreshing Indian drink that I just love, especially with saffron ^_^

How to Experience Authentic Indian Cuisine with Outdoor Catering
If you're a fan of bold, vibrant flavors and aromatic spices, experiencing authentic Indian cuisine through outdoor catering is an absolute delight. Outdoor catering offers an opportunity to enjoy the richness of Indian food in a relaxed and festive environment. Here's how to make the most of it:
1. Choose a Menu That Highlights Regional Specialties
India is known for its diverse culinary traditions, with each region offering its unique flavors. When opting for Indian outdoor catering, ensure the menu represents a range of dishes from various regions. Whether it’s the fiery curries of South India, the rich gravies from the North, or the street food delights of Mumbai, variety is key. Popular choices include:
Biryani: A fragrant rice dish infused with spices.
Tandoori Chicken: Chicken marinated in yogurt and spices, cooked in a traditional clay oven.
Samosas: Crisp pastry filled with spiced potatoes or meat.
2. Live Cooking Stations for Fresh Flavors
Live food stations add an interactive element to your event. Watching chefs prepare fresh naan, dosa, or chaats right in front of you is an experience in itself. These stations allow guests to customize their dishes and enjoy them hot and fresh. It also adds to the authenticity, replicating the street food culture that’s so beloved in India.
3. Spice it Right
One of the hallmarks of Indian cuisine is the delicate balance of spices. From the warmth of cumin and coriander to the heat of chili powder, spices play a vital role in creating the signature Indian flavor profile. Ensure that the catering team tailors the spice level to suit your guests, offering both mild and spicy options.
4. Pair with Authentic Drinks
No Indian meal is complete without beverages like Mango Lassi (a creamy yogurt drink) or Masala Chai (spiced tea). These traditional drinks can elevate the dining experience by complementing the bold flavors of the food.
5. Create an Authentic Ambiance
The overall experience can be enhanced by the setting. An outdoor event can be transformed into an Indian cultural celebration with traditional décor, such as vibrant colors, marigold flowers, and intricate fabrics. Music, like Bollywood hits or classical Indian tunes, can set the mood and create a festive atmosphere.
6. Sweet Endings with Indian Desserts
Indulge in a variety of Indian sweets for dessert. Some crowd favorites include:
Gulab Jamun: Sweet dumplings soaked in syrup.
Rasgulla: Soft, spongy balls of paneer soaked in sugar syrup.
Kheer: A creamy rice pudding flavoured with cardamom and saffron.
Indian outdoor catering in Sydney has gained immense popularity for its vibrant and flavourful cuisine, perfect for a range of events from weddings to corporate functions. Koolfi Creamery, 599 MacArthur, San Leandro, CA 94577
Koolfi Creamery was inspired by Indian flavors, but the chief ice cream engineer is also inspired by other global flavors as well. The ice creams are made in house with organic milk or coconut milk (for non-dairy flavors). Choose from scoops, sundaes, floats, and affogatos. There’s also a savory menu of Indian style toasts and samosas and pies on the weekends. And they have hot beverages.
The ice cream flavors are interesting and complex (e.g., jackfruit & coconut, guava with chili, garam masala peach, mango lassi. However, you’re limited to two samples, so I didn’t get to try too many flavors. Also, I was trying to decide on what flavors to sample and she suggested one and gave me a sample before I asked for it – mmm, it was a flavor that I would not have selected – the spicy guava. I don’t really like guava. It was fine but rather sweet.
Gulab jamun sundae ($11.95): two warm gulab jamuns, one scoop of ice cream, pistachios, rose petals. I knew I had to get this because I do love gulab jamuns. It was really good, quite sweet but very Indian dessert-like. I chose the koolfi ice cream which had a strong cardamom/saffron flavor and crushed pistachios adding texture. The gulab jamun were soft and warm. My only gripe is that the scoop of ice cream was small (smaller than usual) and melted quickly. Are all the scoops smaller than average?
Samosas (2 for $6): on the smaller side, crispy shell that wasn’t oily, stuffed with mashed potatoes, peas, and spices. Very tasty, maybe a touch on the saltier side.
The shop is bright and cute with an outdoor patio. The credit card minimum is $10. They also sell prepacked pints.
4 out of 5 stars.

Savor the Flavors of India: Top Dishes to Try at Tandoori Junction Blackbutt
Indian cuisine is the very epitome of a harmonious blend of flavors. Coming together with the variety of spices, herbs, and fresh ingredients, one obtains dishes rich in taste and history. In Blackbutt, Tandoori Junction is the place to experience some genuine food from India. Its menu is quite extensive, and the place is known for being quite customer-centered. In essence, Tandoori Junction is a ride through the best dishes of India. Here is a list of some of the most-rated dishes that you simply cannot pass up on trying.
1. Butter Chicken
As it should be, Butter Chicken is the flagship of Indian cuisine. At Tandoori Junction, it's only an art. The chicken is tenderized first into a cure of yogurt and spices and then received at the fires. It's then simmered in a creamy tomato-based sauce, enriched with butter and cream. It produces a dish that is at the same time luxurious and homey, perfectly balancing sweetness and spice.
2. Rogan Josh Lamb
It is from the Kashmir region; hence, Lamb Rogan Josh is a real 'must-try' for those who like robust, aromatic flavors. This is an aromatic and flavorful dish with soft lamb pieces slightly roasted and then cooked into thick spicy gravy prepared with the use of onions, tomatoes, garlic, and a mix of traditional Indian spices. The slow process of cooking this food item gives the lamb the ability to take the whole of the spices, therefore very hearty and tasty. The colour of the sauce is deep red that is inviting and shows that inside this sauce are very lovely flavours.
3. Tandoori Chicken
A visit to Tandoori Junction isn't complete without trying their Tandoori Chicken. Marinated with spiced yogurt and lemon juice, the chicken is prepared in the conventional tandoor oven—a specialty of the place, giving that unique, smoky flavor. They roast the chicken very well, yet keep it juicy inside and slightly burnt outside to give maximum flavor. The dish is presented with mint chutney on the side, which makes Tandoori Chicken an absolute crowd puller.
4. Paneer Tikka
Paneer Tikka: Paneer Tikka is a great choice for a vegetarian. Chunks of Indian cheese, also known as paneer, are marinated in spicy yogurt and placed on skewers to grill under a slow fire until golden brown. The inside remains very soft, while the outside grills just enough for it to be a bit crispy, hence bringing out that contrast that is truly hard to resist. Paneer Tikka is usually served with tangy chutney by the side, giving the eater a way to cleanse his palate of the truly savory taste of the dish.
5. Chicken Biryani
Biryani most certainly is a representation of the richness of Indian food, and the Chicken Biryani at Tandoori Junction is an example of that. Marinated chicken, saffron, and an assortment of spices perfume the long-grain basmati rice, creating the most aromatic and flavorsome dish. Biryani is an explosion of flavors with every bite, making the spices liaison with the tenderness of the chicken and aromatic fragrance of the rice. It is typically served with raita, a yogurt-based condiment, to bring the heat levels down.
6. Garlic Naan
Garlic Naan is one more part of the many regular breads in Indian cuisine that make Tandoori Junction a must-visit. This is a soft, fluffy flatbread, slightly crispy from the tandoor, yet remaining soft and chewy inside. This is then brushed with garlic butter and adds a simply aromatic, rich flavor that goes with all curries or tandoori dishes. Be it used as a scoop for a tasty sauce or simply enjoyed alone, getting a taste of the Garlic Naan is an absolute necessity.
7. Mango Lassi
Complement all those dishes with Mango Lassi, a truly soothing drink to cool your stomach after having spicy food. It is made from fully ripe mangoes with just a touch of sugar and some yogurt that make it creamy, sweet, and tangy. It is simply the thing for clearing the palate from all those full and complex Indian tastes.
In Summary
The Tandoori Junction at Blackbutt is much more than just a dining room; it is an entrance to the colorful and varied sphere of Indian food Shellharbour. Be it the rich and creamy curries, the sharp feel of tandoori dishes, or the wafting aroma-rich rice dishes, there is something here for everybody to relish. And culinarily, each dish served must be delicately flavored by using fresh ingredients from traditional recipes.
So, the next time you crave some Indian cuisine in Blackbutt, just head to Tandoori Junction and taste the flavor of India. From your first bite to the last, you truly will understand why this restaurant is just one of the many favored places by the members and even tourists in this area.
