Was Vic actually upset about Sahota doing the interrogation exercise 'behind his back' or did he just see an opportunity to remind Sahota of his place and took it? Or both?

Both in a way, and each of those tie to each other somewhat!

Sahota taking creative liberties with training is a way for him to take back a tiny amount of control over his own life, and Vic doesn't like that

On the other hand, even if he'd perfectly kept in line the entire time, it's likely Vic would still find an excuse to punish him

I don't think he even heals me. Zero catharsis to be gained here.#I just look at his sour grape ass and think 'shit that's a little too close to home.'
