Soft Pretzels
Makes 8 traditional pretzels or about 20 pretzel bites
1 1/2 cups warm water
2 tablespoons light brown sugar
1 package active dry yeast (2 1/4 teaspoons)
3 ounces unsalted butter, melted
2 1/2 teaspoons kosher salt
4 1/2 to 5 cups all-purpose flour
Vegetable oil
3 quarts water
1/2 cup baking soda
1 whole egg, beaten with 1 tablespoon cold water
Coarse sea salt
Combine the 1 1/2 cups water, sugar, yeast, and butter in the bowl of a stand mixer and mix with the dough hook until combined. Let sit for 5 minutes.
Add the salt and flour and mix on low speed until combined. Increase the speed to medium and continue kneading until the dough is smooth and begins to pull away from the side of the bowl, about 3 to 4 minutes. If the dough appears too wet, add additional flour, 1 tablespoon at a time. Remove the dough from the bowl, place on a flat surface and knead into a ball with your hands.
Oil a bowl with vegetable oil, add the dough and turn to coat with the oil. Cover with a clean towel or plastic wrap and place in a warm spot until the dough doubles in size, about 1 hour.
Preheat the oven to 425 degrees F.
Bring the 3 quarts of water to a boil in a small roasting pan over high heat and add the baking soda.
Remove the dough from the bowl and place on a flat surface. Divide the dough into 8 equal pieces, about 4 1/4 to 4 1/2 ounces each.
Either: Roll each piece into a long rope measuring 22 inches and shape and shape into traditional pretzel shape -OR- cut the dough into 20 one-inch pieces to make the pretzel bites.
Boil the pretzels in the water solution in batches (4 pretzels or 10 bites at a time). Boil for pretzels for about 1 minute or 30 seconds for the bites. Remove with a large, slotted spoon. Place pretzels on a baking sheet that has been sprayed with cooking spray. Make sure they are not touching. Brush the tops with the egg wash and season liberally with the salt. Place into the oven and bake for 15 to 18 minutes until golden brown.
Remove to a baking rack and let rest 5 minutes before eating.

《The Art of Simple Foods》 A menu paying tribute to the master - Alice Waters
這套菜單,是chef Wendy獻給當代最具影響力的廚師-愛麗絲・華特絲(Alice Waters)的一首情歌。
Alice Waters被稱為慢食教母、美國傳奇米其林餐廳Chez Panisse創辦人、「從產地到餐桌」(farm to table)概念的重要推手,是年少時期chef Wendy的料理啟蒙老師。
十多年前在國外資訊取得不易的年代,一本翻譯書《食滋味》(The art of simple foods),開啟了chef Wendy對有機在地農產的好奇,原來使用真正的食物來做菜,也可以簡單好吃。這在當時台灣流行的傳統法餐與社會氛圍中,仍屬小眾,又或者根本不被稱為料理。
時至今日,綠色飲食當道,更多人追求的,是乾淨天然的食物來源,加上廚師的巧手與創意,讓好食材,在餐桌上閃閃發光。

CHEF ILONA: Summertime Peach Tiramisu

Tiramisu is one of my favourite desserts. It’s so creamy and I love the coffee flavour. The original recipe for tiramisu involves the use of few ingredients: egg yolks and sugar combined, with the addition of mascarpone and a drop of Marsala wine, giving us the classic tiramisu cream, which must be broken up by biscuits soaked in coffee to create the finished dessert.

Mascarpone cheese is a soft Italian acid-set cream cheese. It is prized for its unctuousness.  This sweet and silky cow's milk cheese adds rich texture to savory dishes too, a quality achieved by its especially high percentage of saturated fat. Mascarpone originated in the Lombardy region of Northern Italy during the Renaissance.

My summertime variations sees the coffee get swapped out for tea and amaretto, and with the addition of roasted peaches, this version is perfect for any al fresco situation!

Summer Peach Tiramisu 
Chef Ilona Daniel 
Makes 6-8 Individual Desserts 
Tiramisu Cream: 
1 cup Mascarpone Cheese 
1 cup Ricotta Cheese 
2 Teaspoon Vanilla 
½ cup Icing Sugar 
½ Cup Whipping Cream 
Making the Mascarpone Cream: 
In a large mixing bowl, combine all the ingredients together and using electric beaters or a mixing machine, whip all of the ingredients together. Once the mixture is fluffy, place in the fridge to cool and set. 
Amaretto Skillet Peaches: 
6-8 medium peaches, peeled and sliced 
Juice of 1 lime 
¼ cup butter 
¼ cup brown sugar 
3 Tbsp Amaretto 
Melt butter and sugar in a large skillet over medium-high heat. Add peaches to the pan and stir occasionally, until caramelized, about 5 minutes. Add to Amaretto to and lime juice to skillet, and cook until reduced, about 1 minute. 
Lady Finger Dip: 
2 Cup Orange Pekoe 
1 Cup Amaretto 
1 Package of Ladyfinger Biscuits 
6 Glass Preserve Jars or other containers with lids suitable for serving the individual desserts. Additionally, if you want to keep it really simple, use a large plastic container with a lid to serve it family style. 
To assemble the Tiramisu: 
In a shallow bowl, add amaretto and tea and dip the ladyfingers in quickly; just enough to moisten them.  
Ladyfingers can be broken as necessary to fit your jars as you build the individual portions of peach tiramisu. 
Spoon a small amount of mascarpone cream into the bottom of each glass. 
Add a layer of ladyfingers 
Add a layer of skillet peaches. 
Repeat this process with another layer of each, ending with sliced peaches on top.  
Refrigerate and let rest for at least 2 to 3 hours. This will give biscuits time to soften and absorb peach flavors.  
Garnish with crumbled lady fingers and leftover peaches
