Dinner was very basic, but very delicious tonight. 😋 it consisted of a roasted pork loin with mashed potatoes, mixed vegetables, and a delightful pork gravy. Mmmmmmmm ❤️ Even the most simple dishes are wonderful when they are executed perfectly. This one is an example of such a dish. You can see Petey in the bottom right corner. She's looking forward to eating dinner as am I. Bon appétit!! 😁😍

When the Aburi & Donburi Japanese Restaurant - Aburi-EN first opened in Northpoint City, I brought mum along for dinner. This restaurant serves mainly pork dishes, hence the piggy lanterns though they do have seafood on the menu too.
Since mum is not good at the menu, I consulted her and ordered the Buta Don (S$13.90++) which comes with miso soup and pickled vegetables. Five slices of chargrilled pork loin on Nanatsuboshi rice from Hokkaido. Just from the look of it, the smoky caramelized must have tasted good as mum finished the whole bowl by herself.
My 3 Kinds buta Combo Jyu (S$23++) came with three slices each of premium pork belly, pork loin and Iberico pork jowl over the same Grade A rice. The set is also served with miso soup and pickled vegetables plus I topped up S$1.50++ for an onsen egg. Really enjoyed the various cuts of grilled pork each giving a slightly different texture and flavours.

BAGÚN (IRISH BACON)
Irish bacon is different from American bacon -- it's usually made from the loin, and isn't traditionally smoked (German immigrants are credited with introducing the idea of smoking meats to Ireland).
It's usually served whole as a roast or cut into chops, or boiled like ham.
This recipe was cobbled together from various sources.
1.8kg (4lb) pork loin roast, fat cap left on
160g (¾ cup) brown sugar
80g (½ cup) Diamond Crystal kosher salt
15g (2 tsp) honey (or maple syrup)
8mL (½ heaping tbsp) peppercorns, crushed
8mL (½ heaping tbsp) juniper berries, crushed
2 bay leaves, crumbled
2-3 whole cloves, crushed
Part One
Wash pork thoroughly in cold water; pat dry with paper towels and place in a large plastic zipper bag.
In a small bowl, whisk together remaining ingredients to combine; add dry brine mixture to pork, rubbing to coat evenly. (I did it on the board for the sake of the photo, but it's easier and less messy to do it in the bag.)
Seal the bag, removing as much air as possible; refrigerate for one week.
After the second week, remove meat from the bag and rinse lightly; wipe dry with paper towels and place on a rack over a pan or foil in the refrigerator for about 24 hours.
After one week, rub meat again with dry brine mixture and turn over; refrigerate for another week.
Part Two
Cut into chops, if desired, or may be cooked whole as a roast.
