Pengat Pisang bersagu- Malaysian Bananas In warm Coconut Milk With Sago
Today's recipe is my personal fave dessert from home :) This is so comforting and perfect for this chilly autumn weather.
I've tweaked this recipe as i am unable to purchase palm sugar (gula melaka) and of course pandan leaves I guess this is the "Abroad style" :) Pengat pisang is a traditional Malaysian dessert which is often served during tea time.
This recipe shows how to prepare pengat pisang with sago (tapioca pearls) and muscovado sugar which I am substituting for palm sugar. I hope you will enjoy this as much as I do, it's so comforting and delicious you will want more than a bowl :) Enjoy

Pengat Pisang Bersagu- Bananas In Warm Coconut Milk With Sago : Serving 2-4
3 ripe bananas (sliced)
3 tablespoon muscovado sugar
1 tablespoon white sugar
200ml coconut milk (1 cup)
200ml water ( 1 cup)
4 tablespoons sago pearls
700 ml water- to cook sago pearls ( 3 cups)
1/4 -1/2 teaspoon salt
Method:
In a pot, add water to boil the sago pearls. Bring the pot to a rolling boil over high heat. Add in the sago pearls.
Cook on high heat for 15 mins. The sago must completely translucent when it is done. Drain the cooked sago and soak in water set aside.
Peel and cut ripe bananas crosswise (1/2 cm thick) and keep aside. Boil water in a cooking pot over high heat.
Add in the muscovado sugar & white sugar. Cook until all the sugar dissolves. Lower heat to medium and add coconut milk.
Cook for 2 mins. Add in the sliced bananas and cook for 2 mins. Lastly, add in the sago stir and cook for 2-3 mins and add the salt. Serve immediately and enjoy :)

Pengat Pisang (Banana In Sweetened Coconut Milk) by #RawChefYin. I had some bananas and some coconut so I thought I'd make some Pengat Pisang for breakfast. It's something I've always enjoyed eating in Malaysia and I figured I could come up with a healthier version. This one is only heated up to 45 degrees Celsius so it's still technically raw but is served nice and warm. INGREDIENTS 🔸Freshly squeezed coconut milk (santan) 🔸2 bananas, peeled and sliced 🔸1 pandan leaf, knotted 🔸1 tablespoon chia seeds 🔸1 tablespoon coconut nectar from @gulamelts METHOD Place all ingredients into the Thermomix bowl. 15 minutes, 45 Celsius, reverse spoon speed. If no Thermomix, just heat on stove at very low heat, while stirring gently. Remove pandan leaf and serve. I used coconut nectar from @gulamelts so there's no need for salt as this particular natural sweeter already has a slightly salty flavour which worked well for this recipe. Gula Melts is: ✔️100% natural ✔️No preservatives ✔️No additives ✔️No colouring ✔️Non-GMO ✔️Vegan 👏👏👏 . I replaced sago with chia seeds which is high in protein and just one of the ways to get your plant-based protein ☺️ .
