Mom's Peanut Butter Cookies
Preheat oven to 375 degrees
Cream together
1/2 cup shortening
1/2 cup peanut butter
Gradually beat in
1/2 cup granulated sugar
1/2 cup light packed brown sugar
Add
1 egg
1/2 tsp vanilla
Beat well.
Sift together
1 1/4 cup all purpose flour
1 tsp baking soda
1/2 tsp salt
Add to creamed mixture and combine thoroughly.
Shape dough into balls which are about 1” in diameter.
Place on greased baking sheets and press down with a fork which has been dipped in warm water.
Bake in preheated oven for 10-12 minutes.
Yields 3 dozen cookies.

Peanut Butter Cookies
Delicious, simple, soft baked cookies.
3/4 cup creamy peanut butter
1/2 cup (1/2 stick) Crisco shortening
1 1/4 cups firm packed light brown sugar
3 tablespoons milk
1 tablespoon vanilla
1 egg
1 3/4 cups all purpose flour
3/4 teaspoon salt
3/4 teaspoon baking soda
Directions
Heat oven to 375. Place sheets of foil on counter or cooling rack for later.
Combine peanut butter, Crisco, light brown sugar, milk and vanilla in a large bowl. Beat at medium speed with an electric mixer until well blended. Add egg, beat just until blended.
Combine flour, salt, and baking soda. Add to creamed mixture at low speed. Mix just until blended. Drop by heaping teaspoon fulls 2 inches apart onto ungreased baking sheet. Flatten slightly in criss-cross pattern with a fork.
Bake at 375 for 7 to 8 minutes or until set and just beginning to brown. Cool 2 minutes on baking sheet. Removes cookies to foil to cool completely.
Makes about 3 dozen cookies.

With these delicious homemade cookies, you can indulge in the perfect combination of peanut butter, chocolate chips, and crushed Do-si-do cookies!
Ingredients: 1 cup creamy peanut butter. 1/2 cup unsalted butter, softened. 3/4 cup granulated sugar. 3/4 cup packed brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 cup semisweet chocolate chips. 1 cup crushed Do-si-do or any peanut butter sandwich cookies.
Instructions: Warm the oven up to 375F 190C and put parchment paper on a baking sheet. Cream the peanut butter, softened butter, white sugar, and brown sugar together in a large bowl until everything is well mixed. It will be smooth after you add the eggs and vanilla extract. Mix the flour, baking soda, and salt together in a different bowl. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. The chocolate chips and crushed Do-si-do cookies should be carefully mixed in. Drop dough from a spoon or cookie scoop onto the baking sheet that has been prepared. Leave about 2 inches between each cookie. Make a criss-cross pattern with the fork marks on each dough ball. For 10 to 12 minutes, or until the edges are just beginning to turn golden. Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. Have fun with these tasty Peanut Butter Do-si-do Chocolate Chip Cookies!
