Ingredients: 2 cups butterscotch chips. 1 cup creamy peanut butter. 4 cups chow mein noodles. 1/2 cup peanuts optional. 1/2 cup mini chocolate chips optional.
Instructions: Line a baking sheet with parchment paper or a silicone baking mat. In a microwave-safe bowl, melt the butterscotch chips and creamy peanut butter together in 30-second intervals, stirring after each interval, until smooth and well combined. Add the chow mein noodles and peanuts if using to the melted mixture. Gently fold and stir until the noodles and peanuts are coated evenly. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Shape each spoonful into a haystack-like mound. You can make them as big or small as you prefer. A fun, favorite cookie that comes together quickly and without the oven!  Yield will vary by cookie size, I got 19 large cookies from this batch, but a more uniform person could expect to yield 2 dozen, 2" cookies.

A fun, favorite cookie that comes together quickly and without the oven!  Yield will vary by cookie size, I got 19 large cookies from this batch, but a more uniform person could yield 2 dozen, 2" cookies. 2 Cups Sugar2 Tbsp Cocoa Powder1/2 Cup Milk1/2 tsp Vanilla Extract1/2 Cup (1 stick) Butter1/2 Cup Peanut Butter (Creamy or Chunky)3 Cups Rolled Oats Combine sugar, cocoa, milk, vanilla and butter in large pan with medium-high heat.

Bring to a rolling boil. Boil for 1 minute.

Remove pan from heat, add peanut butter and oats. Stir until peanut butter is melted and the oats are well coated.
