For everyone who asked: a dialogue parser for BG3 alongside with the parsed dialogue for the newest patch. The parser is not mine, but its creator a) is amazing, b) wished to stay anonymous, and c) uploaded the parser to github - any future versions will be uploaded there first!
UPD: The parser was updated!! Now all the lines are parsed, AND there are new features like audio and dialogue tree visualisation. See below!
Patch 7 dialogue is uploaded!
If you don't want to touch the parser and just want the dialogues, make sure to download the whole "BG3 ... (1.6)" folder and keep the "styles" folder within: it is needed for the html files functionality (hide/show certain types of information as per the menu at the top, jumps when you click on [jump], color for better readability, etc). See the image below for what it should look like. The formatting was borrowed from TORcommunity with their blessing.

If you want to run the parser yourself instead of downloading my parsed files, it's easy:
run bg3dialogreader.exe, OPEN any .pak file inside of your game's '\steamapps\common\Baldurs Gate 3\Data' folder,
select your language
press ‘LOAD’, it'll create a database file with all the tags, flags, etc.
Once that is done, press ‘EXPORT all dialogs to html’, and give it a minute or two to finish.
Find the parser dialogue in ‘Dialogs’ folder. If you move the folder elsewhere, move the ‘styles’ folder as well! It contains the styles you need for the color coding and functionality to keep working!

Once you've created the database (after step three above), you can also preview the dialogue trees inside of the parser and extract only what you need:

You can also listen to the correspinding audio files by clicking the line in the right window. But to do that, as the parser tells you, you need to download and put the filed from vgmstream-win64.zip inside of the parser's main folder (restart the parser after).
You can CONVERT the bg3 dialogue to the format that the Divinity Original Sin 2's Editor understands. That way, you can view the dialogues as trees! Unlike the html files, the trees don't show ALL the relevant information, but it's much easier to orient yourself in.

To get that, you DO need to have bought and installed Larian's previous game, Divinity Original Sin 2. It comes with a tool called 'The Divinity Engine 2'. Here you can read about how to unstall and lauch it. Once you have it, you need to load/create a project. We're trying to get to the point where the tool allows you to open the Dialog Editor. Then you can Open any bg3 dialogue file you want. And in case you want it, here's an in-depth Dialog Editor tutorial. But if you simply want to know how to open the Editor, here's the gist:
Update: In order to see the names of the speakers (up to ten), you can put the _merged.lsf file inside of the "\Divinity Original Sin 2\DefEd\Data\Public\[your project's name here]\RootTemplates\_merged.lsf" file path.

All right, since the analyses are already starting to crop up, I'll upload the link to all of BG3's EA parsed dialogue. Shout-out to Aloija and her dialogue parser!! As well as my husband (not on tumblr) for adding a batch convertion option to it.
The dialogue contains all the lines for every scene and interaction, as well as information on approval changes and required plot flags.
The folder structure and the file naming (I kept both) are solid, so finding whatever it is you want shouldn't be difficult. Not all dialogue files make sense, not all tags are deciphered, and not all dialogue is yet written (the placeholder text | is written like this | ). There are minor spoilers, unused lines, unfinished scenes, but nothing beyond what's currently in EA plot-wise.

Okay! Obviously, I love Wolf 359. The available scripts for Wolf 359 are recording scripts, meaning they're inaccurate in a ton of places when it comes to finalized or improvised dialogue, and don't function well as transcripts (especially since the scripts for the live show and some of the mini episodes were never made available.) That said, I think everyone should read the scripts; the sheer amount of physical description that you can feel in the show, even if you can't see it... I guarantee it will enhance your listening experience. Most visual show to ever be an audio drama. So, in pursuit of both of these goals at once, I went over every word in the scripts, and wrote up new scripts for the unavailable ones. Some of the sound effects described - especially in early episodes - might not line up exactly, because I didn't want to mess with the non-dialogue portion of the show, but I hope this strikes a good balance and can be a useful resource.

A little clarification on how Neuvillette addresses Furina in her story quest—in English it's rendered as "Miss Furina," and shortly after "Lady Furina," implying he uses a different honorific each time.
However, in both these lines Neuvillette actually uses 女士/nǚshì, the same way he has always addressed Furina in the past, barring the instances where he only uses her name, which he only does in private and generally not to her face.
When Furina asks the NPCs in the quest to stop calling her "Lady Furina," they switch from 大人/dàrén to calling her 女士/nǚshì/Miss Furina. Previously Neuvillette was the only character who called her that. When he did, it was always rendered in English as "Lady Furina," the same as the other more reverent honorific.
So no actual change between them in this regard, just the translation team finding themselves in a bit of a bind over how to translate it going forward where the two are concerned!

Baldur's Gate 3 Datamined Dialogue (Patch 7)
Hello! So, I've been using @roksik-dnd's uploaded parsed dialogues for a while but there has been a few changes in the game since the last time they've uploaded. Luckily they've also made this post on how we could parse the dialogues ourselves!
Because I am impatient this happened to be one of the first things I did after the patch and I am releasing the files into the wild in case if it's useful to anyone else, like how I've used roksik's shared files for so long!
Don't forget - you need both dialogues and styles folders for it to work properly!

Okay, last thing I'll say about this.
Minthara did not torture Halsin. She is not "his abuser."
When you meet Minthara and she talks about torturing a prisoner to make him talk, she's referring to the human on the torture rack near the entrance to the goblin camp. When the player asks her if she has any leads on the grove, she says this:
We captured a human who knows exactly where it is. He's been resilient, but he'll talk.
And if you ask her about Halsin:
I have not seen this druid, but he harbors worshippers of a false god in a hidden grove nearby.
She has no idea that the bear in the prison is Halsin. She never laid a finger on him. (And besides, if she had, he would not be in one piece: she was trained as a follower of Lolth for god's sake, and if she knew she had the Archdruid in her clutches, she'd make good use of that information.)
Case in point: there is no reason for Halsin to be so cruel to Minthara in the datamined dialogue after she explains that she was being controlled by the Absolute. It is against his generous character.
