Merguez sausage with North African Chickpeas, Cous Cous, Yogurt and Mint. With fantastic delight, I discovered Merguez sausage from our local co-op last month. If you’ve never had Merguez sausage, seek it out! @themerccoop makes it with all beef and a delicious blend of tangy, spicy and sweet. It’s more versatile than you’d believe. I’ve even had with cheesy scrambled eggs. So, I created a meal for clients that is so yummy, healthy and versatile. Leftovers could go in a wrap, or get baked with eggs or are just plain yummy by themselves. I sautéed ginger, garlic and onion with coriander, cumin and paprika before adding tomato sauce, diced tomatoes and multi-colored peppers. Chickpeas and a dash of cinnamon finished it off. The best thing about this dish is that I think it would freeze well, but we’ve gone through it way too fast to have leftovers. Maybe next month! I am making a vegetarian version this week to share with the community pantry at @thesunriseproject. We added a tagine to the kitchen arsenal and experimented with flavors that are far from our comfort zone. Huge but balanced, the chicken was tender and juicy. Shakshuka with Turkey Meatballs and Israeli Cous Cous. I am a huge fan of flavor. Middle Eastern, Latin, and Asian flavors excite me and make my mouth water. I’ve loved shakshuka for a long time, but for some reason always waited to eat it when visiting some of my favorite restaurants. I unusually ate it as a breakfast with poached eggs The first time I cooked shakshuka, I was floored at how fast and easy it was to make at home. It was simple to make it as delicious as restaurant food. That first time I make the liquid part with anions, garlics, red peppers,l and chopped tomatoes on the stove and then transferred to the over to finish it off with baked eggs. This time, I made it for dinner and did the whole thing on the stovetop. Instead of cooking down fresh chopped tomatoes, I used canned diced and whole tomatoes that I smushed by hand. Then I seasoned ground turkey with paprika, cumin, garlic & onion powders, salt and pepper. I rolled it into balls of different sizes and dropped them into the pan of simmering tomatoes sauce. I served it by spooning it over the fat Cous Cous, often called Israeli Cous Cous and sprinkling chopped cilantro and crumbled feta on top. So delish, fast and healthy. This middle eastern dish is said to have originated in Tunisia, but possible Yemen, Morocco or Turkey, but is served all over Arab and North African regions. My older brother, who was a source of trauma and whom I loved deeply (I know you get that) spent time in Tunisia, so I choose to think about North Africa when I cook it. The loveliest thing about Middle Eastern food is that so many recipes are ancient and have so many variations. You can’t mess it up. Play with it, add what you like, take out what you don’t. Make it your own.
