Ube halaya or halayang ube (variant spellings halea, haleya; from the Spanish jalea, "jelly") is a Philippine dessert made from boiled and mashed purple yam (Dioscorea alata, locally known as ube). Ube halaya is the main base in ube/purple yam flavored-pastries and ice cream. It can also be incorporated in other desserts such as halo halo. It is also commonly anglicized as ube jam, or called by its original native name, nilupak na ube.
The Philippines shows the highest phenotypic diversity of ube (Dioscorea alata), making it one of the likely centers of origin of ube domestication. Remains of ube have been recovered from the Ille Cave archaeological site of Palawan (c. 11,000 BP).
The main ingredient is peeled and boiled purple yam which is grated and mashed. The mashed yam, with condensed milk (originally sweetened coconut milk), are added to a saucepan where butter or margarine had been melted. The mixture is stirred until thickened. Once thickened, the mixture is cooled down and placed on a platter or into containers of various shapes.
Ube halaya is a type of nilupak (mashed/pounded starchy food with coconut milk and sugar) which has several variants that use other types of starchy root crops or fruits. Generally, the term halaya is reserved for nilupak made with ube and calabaza, while nilupak is more commonly used for variants made with mashed cassava or saba bananas. Variants made from sweet potato and taro can be known as either halaya or nilupak.
Ube halaya also superficially resembles kalamay ube, but differs in that kalamay ube additionally uses ground glutinous rice (galapong) and has smoother more viscous texture.

It’s been a long time since I’ve been to a Valerio’s, the Fiipino bakery. This is a smaller location inside Eagle Rock Plaza, right next to Seafood City downstairs. They have sweet and savory items and not just baked goods either. They’re known for the pandesal. They were out of some things like lumpia.
Pimento cheese and ube seem like popular filings. Spotted various breads, desserts, pies, flan, ensaymada, cookies, hopia, cheese rolls, steamed buns (siopao), nilupak, bibinka, etc. Prices are about on par with other Asian bakeries like Sunmerry.
Pork adobo pandesal ($2.99): This is the Filipino equivalent of a Chinese bbq pork bun only with pork adobo. The pork is cooked in soy sauce, vinegar, and garlic. The bun had a dusting of crumbs and was soft and slightly sweet. The pork was shredded and slightly sweet. I liked how the pork didn’t have food coloring like Chinese BBQ pork. It did have a slight sweetness. There was plenty of pork. It was a big bun.
Tuna pandesal ($2.99) with egg, cheese, pickles, mayo, black pepper, canned tuna. The baked bun was soft and slightly sweet. The filling was lightly seasoned. I liked the additions to the canned tuna.
Their savory baked buns are good!

Abra de Ilog: A full and memorable day of communion with the Creator and His creation in community. First, a morning boat ride to enjoy a cool freshwater swim in a hidden waterfall spot, followed by a dip in the warm ocean with the waves lapping over us as we swam around. Then, a walk along the beach marveling at a pool of little tadpoles and froglets as well as selecting some beautiful mutlicoloured pebbles. To then bumping into some Iraya gals who sold us some shells they had collected.
Later, back at the house, all of us pitched in to prepare our dinner. We pounded cassava from Mangyan friends to make nilupak; we made soup from the shells we got earlier that morning; we grilled fish from one of the local fishermen; and charred eggplant to make classic ensaladang talong. All of this was paired with delicious Mindoro rice.
After eating our festive meal, we spent the next couple hours singing praises to our Creator through song. It just so happens that the group I was with included three gifted musicians, two of whom were formally in a band that toured around Asia. A perfect way to end a treasured day together by lifting up a "joyful noise" to our Maker.

Making nilupak na balinghoy (sweet mashed cassava): What a special gift to tag along to visit one of the Mangyan communities in Occidental Mindoro with a colleague who has spent years cultivating friendships there. Our visiting group was treated with incredible warmth and gentle hospitality. When I asked if we could have some greens for lunch, a few of the women from the community brought me the first morning to visit one of their cultivated slopping hills. We were there to pick some camote (sweet potato) tops but the added bonus was that they also harvested a massive cassava root which we brought back with us to make a dessert following lunch. I had learned of this native dessert but never had the chance to try it before. It was so exciting to see the cassava freshly harvested, peeled, boiled and pounded in their traditional pestle and mortar (also used for pounding upland rice) and then finally mixed with fresh niyog (coconut) and raw sugar. A community effort from start to finish. Even all the children who passed by the gathering porch where we ate got a handful of this delicious and sticky native snack.

Yung barkadahan namin lagi ang present kasi kami yung may pakana ng dinner salo-salo, dami namin inihanda pagkain kasi expected namin na sana umattend talaga yung iba pa namin ka batch, kaso mga mahirap na rin talaga ayain pag pamilyado na kaya kami kami na lang masaya kasi may nilupak tradisyon na ata namin na maglupak pag magkakasama haha 😅😁 basta masaya naman nga lahat tas mga natira food lahat pinagtatakeout na namin para sa kanila.
Thankful ako sa mga kaibigan at kaklase ko nung Elementary kasi kahit nagkakaedad na kami lahat andoon pa rin yung saya wala ilangan parang nung elementary days namin ang gugulo 🤣🤣🤣.
Salamat din naman sa Magulang ko kasi sa public nila ako pinapasok ng Elementary so ayon may barkada, kaibigan ako sa Nayon namin 😊❤️.
