Moussaka seemed like the perfect dish to try making my parents for dinner this week — it's Mediterranean, in a fun format, and not obviously veggie.
I made this in full using regular vegetable stock, which I simply splashed in, and cooking my lentils myself, as I weirdly could not find any canned at the grocery store. We only had 1/2 cup left, so I think I ended up with maybe half the amount the recipe was looking for, but, honestly, I think that turned out for the best in the end.
I realized about halfway through my veggie chopping that I was slicing them into rounds rather than lengthwise like the pictures. The latter would probably be a bit more ideal, but I don't think this mattered much in the end, either.
Both the sauce and the veggies took a lot longer to cook than I thought they would, but thankfully all that was left in the end was the assembly, which I did in a big casserole dish rather than on individual plates. I then sprinkled feta over the whole thing and served with tzatziki.
Overall, this turned out absolutely delicious. The sauce had such a divine richness in taste (the cinnamon and cloves really added the most amazing spiced flavor to this). I admittedly did overcook some of the veggies, but I think that slightly charred quality only enhanced the rest of the dish. This was a lot of work, but it was excellent regardless.

Recipe for Bulgarian Moussaka This yogurt-topped moussaka is made with ground beef, ground pork, potatoes and tomatoes, and is a family favorite. 1/4 cup all-purpose flour, 1 teaspoon black pepper, 1/2 cup olive oil divided, 1/2 teaspoon cayenne pepper, 3/4 pound ground beef, 2 cups plain yogurt, 1 tablespoon salt, 1 red bell pepper finely chopped, 1 can diced tomatoes, 1/2 yellow onion finely chopped, 3/4 pound ground pork, 6 russet potatoes peeled and cut into 1/2-inch dice, 2 bay leaves, 1 large carrot finely chopped, 2 eggs, 1/4 bunch fresh parsley stems and leaves chopped separately, 2 tablespoons paprika, 1 teaspoon baking soda, 2 stalks celery finely chopped
