I got a craving for salmon today, so I looked up recipes, and found this one, for Sheet-Pan Harissa Salmon with Potatoes and Citrus. I love Moroccan-inspired flavors, and am pretty well-versed in cooking with them, so I decided to go with it. I ended up having to make my own harissa paste, because the store didn’t have it—but it was fine; we had all the ingredients at home already, and it ended up tasting better than any pre-packaged harissa I’ve ever had. I served it with a side of oven-roasted asparagus with lemon juice and zest, and as there’s orange juice and zest in the salmon marinade, it was the perfect tie-in.

[ID: A torn piece of foccaccia on a blue plate, topped with a green dip. End ID]
زعلوك ديال خيار / Za'louk dyal khyaar
This fresh, zesty dip uses cucumbers (khyaar) as an analogue for the more typical roasted eggplant or zucchini. It's a light, refreshing snack to serve in the spring or summer with bread, chips, or crackers. Because it can be made with frozen and thawed cucumbers, it's also a good way to get more produce on your table in the winter.
In fact, I made this dip because of a couple cucumbers that were accidentally frozen from being pushed too far back in the fridge, and could no longer be eaten whole. Despite the dish's humble origins, it is really very good. Removing excess water intensifies the fresh, light flavor of cucumber; raw garlic, green onion, and chili add bite; and the tahina and olive oil add body.

Ingredients
2 small or 1 large cucumber (275g)
1 large clove garlic, chopped
2 green onions (scallions), chopped
1-2 Tbsp tahina (tahini)
2 Tbsp olive oil
1/2 green chili pepper, chopped (optional)
Juice of 1/4 lemon (about 2 tsp), or to taste
1/2 tsp table salt, or to taste
Fresh mint or cilantro, to top
Instructions
1. Cut the cucumber into slices, then remove most of its water. You can do this by freezing and then thawing it, or by sprinkling salt over it and letting it sit for 15 minutes; then squeezing to remove excess water.
2. Combine all ingredients in a blender or food processer and process to desired texture. Stir and taste to adjust seasonings.
3. Top with minced herbs and a drizzle of olive oil. Serve cold with bread.

#Seeing the dune part 2 american centric red carpet and as a devoted aficionado of the books and yk a moroccan person here are my 2 cents#Dune was one of the few Western works inspired by MENA culture that that felt genuine and respectful#But ofc despite the profound symbiosis with Middle Eastern and North African culture evident within the pages of the novels#the movie adaptation lack of substantive representation from these communities both in on-screen portrayals and within production roles was#very much disappointing in part 1 and i doubt there are any change now#While drawing inspiration from the Amazigh peoples of Algeria and Morocco#the film barely skims the surface of its MENA influences leaving substantial potential untapped#Herbert openly acknowledged the profound impact of Islam and MENA culture on his noveIs#from the metaphorical representation of Spice as oil#to the allegorical parallels drawn between the occupation of Arrakis and real-world MENA geopolitics#By marginalizing Arabs from the narrative fabric of Dune the essence of the story is being undermined particularly its anti-colonial core#the irony of this is kiIIing me because this was a direct resuIt of us impérialism on the middIe east#But the reality is that Dune is an American production tailored for an American audience so it makes sense for it to be what it is now#a big production running from its original essence#What adds to my disappointment is the fact that I liked Villeneuve's adaptation of Incendies and I had what you call foolish hope hfhg#Dune feIt Iike a squandered opportunity to authentically depict the cultural milieu that inspired it#Given the narrative's inherent anti-colonial themes#the omission of Arab and North African voices dilute its message if any of it is even left#without representation from Arabs and Amazigh people the cultural essence becomes another appropriated resource watered down to an aestheti#rather than serving as a critique of the destructive actions of colonialists seeking power and dominance#the narrative becomes susceptible to distortion and co-option by the very entities it was intended to condemn and hold accountable

the kavetham brainrot is real, I have multiple foreign language tests this week and I’m starting two new courses but instead I’ve been researching architectural styles of the middle east, north africa, and southeast asia to be able to write this akademiya era fic because Kaveh is a genius and a passionate prodigy and I refuse to not write him as such.
after multiple hours of research and a lot of reading, I am now extremely angry and disappointed about how genshin dropped the ball with indo-islamic architecture in the rainforest, it could’ve been so colorful and beautiful and connected to real architecture. but it’s so orientalist in game. ironically the desert is better in terms of architectural adhesion to real cultures. pls ask me about it im going crazy

As soon as you die, your identity becomes a "body".
People use phrases like, "bring the body". "Lower the body to the grave yard", etc..
People don't even call you by your name. Whom you tried to impress your whole life..
Live a life to impress the creator not the creation.
