Japanese Advanced Cuisine- Week Three
Monday is traditionally when I practice “meatless Monday” outside of class. This particular Monday made me want to take a long, healthy break from beef. We spent the entire day learning and tasting Japanese Wagyu Beef. It was an incredible experience that I was fortunate enough to endure. We learned that Wagyu is like Champagne. It cannot he called Wagyu unless it is made in Japan. Their level of quality is no joke. The meat is graded based on marble, color of meat, color of fat, yield and texture. The yield is was determined the letter scale (A-C) and the other characteristics determine the number scale (1-5). For this particular class we had A-4 which is an almost perfect score, and it showed.
We prepared a few dishes. The first was a meat “salad” which scared me at first, but it was quite delicious. It contained cucumbers, turnip, tomatoes and Wagyu beef cubes. The Wagyu was confited in its own fat and was to die for! The salad was topped with dashi jelly and a fried basil leaf. It was surprisingly refreshing. We had two steaks a sirloin, and a rib piece. They were delicious of course and we also had Sukiyaki. I really loved the Tokyo leek that was simmered in the liquid. Overall, I left feeling really heavy and greasy but the flavor was unlike anything I had ever experienced. I enjoyed some Wagyu while in Japan and they were both really great. Wagyu is not something I could eat often, but it is something I would reserve for special occasions. I am so grateful to have had this wonderfully educational day.
Tuesday we prepared a “chicken tender basket in one bite” as Matthew described it. It was a chicken slice wrapped in a katsuramuki potato that was deep fried and delicious. We also made the chicken salad with tofu dressing, nikujaga (look at that mise en place!!), sea bream rice, and egg tofu soup! The techniques are getting easier and I think we are all in a Japanese mindset while cooking now! I’m definitely getting accustomed to the suribachi and seriously want one!
Wednesday we used the left over nikujaga to prepare croquettes and they were delicious!! We also repeated the egg tofu soup, seabream rice, chicken salad, and chicken and potato agemono.
We also prepared a new dish, Katsuo tatake. I love Bonito so I was sooo excited for this! Tatake is a technique where they briefly sear the outside of the fish. Traditionally it was done over rice straws, but we just used a kitchen torch. The katsuo was topped with a mixture of minced shiso, ginger, and myoga. It was laid on a bed of sliced raw onion and assorted greens. We dressed it with a ponzo and Olive oil dressing and topped with fried garlic chips. I tore mine up!! I love raw onions and bonito so I was in heaven.
Thursday was all prep for kaiseki! We ended the day of hard work with some Japanese Curry thanks to Sam and Sensei! It was very comforting and prepared us for the next day! Cathy joined us and we shared some great conversation. Amay made a spicy fried bitter gourd salad, I made peanut butter cookies, and Chef Martin made donuts! It was a meal to celebrate all the work we have done and how much we’ve learned. I am going to miss this class. Tomorrow’s the big day!
Our final kaiseki dinner was quite a blur. We put so much effort into this meal and it really showed. Our menu was as follows
1.) Pumpkin Sesame Tofu
2.) Clear Soup with Oyster Shinjo
3.) Tsukuri (Sashimi) of Chu-toro, Seabream, and Botan-ebi shrimp
4.) Crab Chawanmushi
5.)Yakimono Hassun, Miso marinaded Black Cod
6.) Gohan with octopus, taro, and squash
7.) Umeshu jelly, Shiso granita, and sweet black bean soup
I am so proud of all my classmates for coming together and truly working as a team. We helped each other out as necessary and all the food went out without a hitch.

2018 Grammys Ads: All the Brand Campaigns
A week before the Super Bowl, the Grammys saw brands hit the red carpet with campaigns that spoke to their souls and goals—or that completely baffled, as was the case with Old Spice’s subversively brilliant French-language spot (more on that below).
The winner in terms of postive social media buzz: Google’s ad featuring people who have called 1-800-273-8255 — the number of America’s National Suicide Prevention Hotline and the title of nominee Logic’s song, which he performed at the Grammys with Best New Artist winner Alessia Cara and nominee Khalid.

The message: Sometimes there’s more behind an image than the eye can see. Part of a wider set of stories that encourage people to question their lens on the world, “The Picture Perfect Life” invites people to question their assumptions on depression and who it might affect. In this video, Logic, whose Grammy-nominated song “1-800-273-8255” brought increased awareness on depression and suicide prevention earlier this year, narrates seemingly happy people’s stories to show that not every picture tells the whole story. House Armed Services shoots down calls to eliminate additional Navy ship | The House

Japan As Inspiration: Week Two
Week two started with me as Sous Chef! I picked up the storeroom, fish, meat, and central issue orders and started working on the menu for the next day. Today I got two side projects. I made milk bun dough and Brussels sprout kimchi. I had such fun planning the menu and setting up kits for the next day.
After some returns to the storeroom for moldy lotus roots, the second day continued. Amay has David made a teriyaki mushroom burger and it was surprisingly so delicious! The overall look of the meal was spot on and the flavors were on par as well.
My third and final day as sous chef was spent taking inventory and helping out the team. Matthew and Victoria’s scallop miso ramen was delicious and I find myself wanting some more!! I prepared the pickles today and we reused some kombu which I thought was nice. Jasper made some really good okonomiyaki
Today was lamb curry! I was no longer sous chef and am back on my station with Matthew. He prepared a pasta “carbonara” with pollock roe. It wasn’t my favorite but the curry was delicious. I was worried the meat wouldn’t get tender in three hours but it turned out surprisingly well.
Friday!! Today was Matthews birthday and we had to leave after service to pick up his mom so we took it easy. I had the Wagyu torched nigiri and Matthew was on pickles!
Saturday night date night for his birthday! Happy 21st nugget. ❤️
