A tasty and keto-friendly dish made with thinly sliced zucchini, a mix of cheeses, and fragrant herbs that are baked to perfection.
Ingredients: 4 medium zucchinis, thinly sliced. 1 cup shredded mozzarella cheese. 1 cup shredded cheddar cheese. 1/2 cup grated Parmesan cheese. 2 cloves garlic, minced. 1/4 teaspoon dried oregano. 1/4 teaspoon dried basil. 1/4 teaspoon dried thyme. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Preheat the oven to 375F 190C. In a large mixing bowl, toss the zucchini slices with olive oil, minced garlic, dried oregano, dried basil, dried thyme, salt, and pepper until well coated. Layer half of the seasoned zucchini slices in a greased baking dish. Sprinkle half of each type of cheese mozzarella, cheddar, and Parmesan evenly over the zucchini layer. Repeat with the remaining zucchini slices and cheese. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown. Let it cool slightly before serving. Enjoy your Easy Cheesy Zucchini Bake!

Ingredients: 2 medium zucchinis, spiralized. 1 large carrot, spiralized. 200g smoked tofu, cubed. 2 tablespoons sesame oil. 3 tablespoons soy sauce or tamari. 2 tablespoons peanut butter. 1 tablespoon sriracha sauce. 1 tablespoon rice vinegar. 1 teaspoon minced ginger. 2 cloves garlic, minced. 2 green onions, chopped. 2 tablespoons chopped peanuts, for garnish. Salt and pepper, to taste.
Instructions: For the spicy peanut sauce, mix soy sauce, peanut butter, sriracha sauce, rice vinegar, ginger, and garlic in a small bowl with a whisk. Warm up the sesame oil in a big pan over medium-high heat. Put in the smoked tofu cubes and cook for about 5 minutes, until it turns golden brown. Add carrot and zucchini noodles that have been spiralized to the pan. After two to three minutes, the vegetables should be soft but still crisp. Mix the peanut sauce with heat and add it to the noodles and tofu. Mix everything together well to cover it all. Add one more minute to heat the sauce up. Add pepper and salt to taste. Before serving, sprinkle with chopped peanuts and green onions.
