We spent New Year's Day exploring Parque Nacional Peneda-Gerês on the Northern border of Portugal and Spain.
A bit tired but motivated for what I expected to be one of the most exciting days, I went out early in the morning to secure train tickets at the train station we visited on our walking tour. Part of the reason we wanted to get tickets early was to avoid lines and ensure we arrived to meet our guide on time. The other part was to redeem our inability to escape the train station upon our arrival to Porto way back in 2023. The tickets were secured easily enough, and I enjoyed walking through city streets caught between the day starting (for people like me) and the night ending (for people like the gentleman walking through broken glass and confetti with his Super Bock still in hand).
I came back to the Airbnb to get Cat, we packed a backpack with waters, rain coats, a lunch (cured ham, cheese, bread, olives, cashews, apricots, and orange juice), and bathing suits, and then headed out to take the train to Braga where we met our guide for the day, Pedro. After asking if we needed any car sickness medication, Pedro began driving us through the mountains up toward the park. Pedro is recent Mechanical Engineering graduate and a music and NBA lover, so we found plenty to talk about.
We stopped at a little cafe owned by his friend for coffee and breakfast - I had a pastel de chaves and Cat had a Portuguese croissant.
We then continued up the winding roads before coming to a trailhead located near the abandoned border gates between Portugal and Spain. We freely walked between the two countries and Pedro pointed out signs mixing Portuguese, Spanish, and Galacian. After re-entering Portugal, we headed down a beautiful trail called the Gerês Bridges Trail.
It was full of bridges, waterfalls, shepherd's paths, cows (check out the video Cat got below!), and the ruins of various users of the mountain pass (from Roman soldiers to Portuguese shepherds to park rangers), all providing spectacular sights. We had lunch on the final bridge at the base of a waterfall before hiking back up and to the car.
Pedro then took us across the Spanish border to the town of Lobios to enjoy the town's hot springs, Caldas de Lobios. We stopped at a small cafe and bought a coffee so we could change into our bathrooms suits and then gingerly stepped into the hot springs. The temperature varied slightly as the water flowed from how I like my showers to barely tolerable - which to be fair is not that significant of a delta. I also had the bright idea to try wading in a small stream near the spring's source and scalded my left foot.
After we had taken all we could handle, we changed and headed back to Portugal. We made a quick pit stop at Castelo de Lindoso, a medieval castle and its grainaries, before Pedro drove us back to Porto.
After such a full day, Cat couldn't bring herself to head back out for dinner so she finished some snacks we had and I ventured out to grab some local delicacies (as the Portuguese call it: McDonals) before we both went to bed, though I got up at 2 am local time to watch the Texas loss to Washington in the Sugar Bowl ☹️... Sadly the cows we saw on our hike didn't have long enough horns to provide the appropriate suerte.

Forget Crypto… Let’s talk about cooking
For several years I live in a mode of constant travel. Europe, America, Middle East, Southeast Asia... I can’t even count how many miles I’ve flown. All I can think about is business, how not to let down those who have trusted us. However... To be honest, I’m still a human being, and I know how to enjoy life. I like to know new places, to get to know people, to know culture. I see the diversity of our world, and I think it’s beautiful.
I would like to take my mind off business for a moment and talk about... cooking! You have read it correctly - I am interested to discuss the cuisines of the peoples of the world.
When you travel a lot, you inevitably get acquainted with the national culture, and the cuisine is its mandatory element.
Some time ago I flew in from Georgia. This is a completely amazing beautiful country with a completely unique culture. There are not many countries and peoples in the world that created their unique cuisine. And Georgia is among them. Georgian cuisine is absolute delight and fireworks. Abundance of spices, unique tastes, unexpected combinations. If you are interested in cooking, you have to meet it!
In Georgian cuisine there are many dishes that have no analogues and can become its trademark. I would like to say about two of them: sacivi and lobio.
Satsivi is a sauce that you can serve chicken, turkey, almost any meat and even fish. Imagine a thick sauce of scrubbed walnuts, amber-color butter, teasing the smell of spices, spicy greens and ruby pomegranate grains. You fill them with pieces of boiled chicken, and you get a delicious dish. It is not eaten - it is enjoyed!
Lobio is another great dish. There are many recipes for its cooking, but they have in common - beans. I really like lobio made with walnut sauce, spices, necessarily with cilantro and garlic. Everything is beautiful in it: teasing look, aroma, and unparalleled taste...
I sincerely recommend, at the first opportunity, be sure to try it!
I told only about two dishes of Georgian cuisine, and there are hundreds of them, and they are all beautiful.

How to prepare the right dinners for the whole week?
The idea of a proper dinner attracts many. And in theory, I have progressed very far: I know how to choose healthy foods, and how to prepare delicious dishes from them.
Returning home after a busy day of work, I was not ready to spend time preparing the right and healthy dishes.
That is, plan, predict, and make inventory. I now spend less than an hour on a Sunday to ensure I have the right dinners for the whole week.
1. I cook cereals — this is bulgur, brown rice( any). This time does not need to be spent at all: the cereal is prepared by itself, if you use a slow cooker or a steamer. Ready-made cereals should be cooled and put in the refrigerator in serving containers. And now you have the base for salads with baked and fresh vegetables and a side dish for protein dishes.
2. You can cook baked vegetables. Coarsely chop the eggplants, zucchini, carrots, and sweet peppers, put them in a mold, sprinkle them with olive oil, and put in the oven for 10 minutes. Baked vegetables are a great side dish. Make vegetable caviar by simply grinding everything in a blender and adding olive oil and an addition to the salad. Separately bake the sliced pumpkin - it is combined with green salad, pine nuts, and feta. In the oven, bake the beets, wrapping the unpeeled vegetables in foil. It will become the basis for salads and pates-just add cheese, herbs, or avocado.
3. Cook the beans, chickpeas, and lentils. Legumes are a very good option for dinner. You can use canned beans or chickpeas. These preparations will be an excellent basis for soup with tomatoes, carrots, onions, lobio, and salads. Such options: lentils, cheese, green salad; beans, garlic, walnuts, and a large bunch of parsley. Homemade hummus is also a great option for a light and healthy dinner in combination with fresh vegetables.
4. Cook vegetables on a steamer. String beans, cauliflower, and broccoli will be a useful side dish, but it plays a major role in the omelet with vegetables. How to prepare the right dinners for the whole week?
5. Prepare a protein base — baked chicken breasts and fish.
Chicken breast is a product that will help you out at any second and will allow you to create a culinary masterpiece in a short time. A chicken breast in the oven turns out to be a delicious, fragrant, and festive dish.
Baked fish is a very tasty and healthy dish that can be prepared at home. To do this, you will need a minimum amount of additional ingredients and a variety of different spices. To make a ready-made delicacy like everyone, you need not only to cook delicious fish in the oven but also to be able to serve it correctly. You can bake fish in the oven in a variety of ways. Each of them has its own flavor, which makes the dish original and well-recognized.
6. Prepare fresh vegetables cut into cubes carrots, kohlrabi, celery, and daikon. Just add hummus or a dip of soft cottage cheese with herbs, and a light dinner is ready. I agree that sliced vegetables lose vitamins, but I choose the lesser of two evils: I'd rather open the refrigerator and see sliced and slightly lost nutritional value vegetables.
This plan works. On a Sunday, spend just one hour of time to ensure you have proper and delicious dinners. In general, a solid benefit!
