Instant Rava Dosa: Hello and welcome again to this happy cooking place. So well this is not cooking in my kitchen.. because it’s already cooked 😂 while we all are at home let’s get back to what we love doing and we actually stopped. And why not, while we have our partners at home to share our work and look after kids, let’s get some time out for yourselves. My baby loves South Indian and my hubby does too (wow what a great pair they have made to make me cook South Indian) so I decided to make making something quick and got my hands on this recipe. Let’s begin: Ingredients: - 1/2 cup suji (semolina) - 1/2 cup rice flour - 1/4 cup all purpose flour - salt to taste - 1 tsp grated ginger - 1 tsp finely chopped green chili (I skipped it for my baby) - 2 tsp finely chopped cilantro - 2 1/4 cups of water - Oil to cook dosa Process: - Mix all the dry ingredients together and then add water. Whisk this good and if you prefer you can also add some finely chopped onions here. Cover and keep aside for 20 mins. - After 20 mins stir the batter and ensure it’s in a flowing consistency. If required add little water at a time. - Next heat a dosa skillet on high and now sprinkle some water to adjust the heat. Wipe it and pour the batter with your hands onto the skillet. You will see some net shape texture or some gaps in between and that’s what you need. So just sprinkle it over the skillet and add oil over and to the sides. Let this cook completely and you should see the color changing. It should be golden and crisp from the bottom. Do not touch until it’s cooked. - Serve this right away. The hot and crisp dosa is a perfect snack or meal to go any day. And it’s healthy if you prefer to add wheat flour instead of all purpose flour. Hope you’ll like and enjoy this recipe. Baby food: Carrot Uttapam: Hello mommies and daddies 🙏🏼 hope you all are doing good.. I am back with another healthy recipe for you and your babies. This is an Indian Pancake made with soaked rice batter and can be filled or topped with grated or finely chopped veggies. You can add any vegetables like cabbage, onion, spinach, tomatoes. I have chosen carrots here as it’s my baby’s most favorite vegetable. He started liking it when he was 6 months old and use to love carrots purée a lot. And hence the love for carrots is still on (touchwood) So let’s see how I have made this. Ingredients: -1 fistful of urad dal -3 fistful of rice -Salt to taste -Grated or finely chopped carrots -Oil or oil spray (prefer ghee spray or ghee for babies) Process: Simply wash rice and dal 3-4 times and soak it for minimum 8 hours or preferably overnight. Drain the water and blend it to a fine paste. Should not be runny or not be thick. Make it how you make for pancakes. Add salt and whisk it good, and now keep the batter for 15-20 min for standing time. Heat a skillet pan and now add 2 spoonful of batter and spread it around, sprinkle the grated or chopped carrots on it and press it gently with a spatula. After a min add ghee on the sides or spray ghee on corners. When you see it’s cooked from bottom flip it over and cook the other side. Cook until golden in color by flipping the sides. Bring it down to your plate and serve with chutney or ketchup. I just give it simple with no ketchup to my baby, you can add some fruits along with it. Hope you liked the recipe.
