These Vegan Lemon Ricotta Pancakes are fluffy, tangy, and delicious. The combination of lemon juice and zest adds a refreshing citrus flavor, while the vegan ricotta cheese provides a creamy texture. Perfect for a leisurely weekend breakfast or brunch!

Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 2 teaspoons baking powder. 1/4 teaspoon salt. 1 cup almond milk. 2 tablespoons lemon juice. 1 tablespoon lemon zest. 1/2 cup vegan ricotta cheese. 1 tablespoon vegetable oil. 1 teaspoon vanilla extract.

Instructions: Put flour, sugar, baking powder, and salt in a bowl and mix them together with a whisk. Put vegan ricotta cheese, vegetable oil, lemon juice, lemon zest, and vanilla extract in a different bowl. Add the wet ingredients to the dry ones and mix them together just until they are mixed. There should be some lumps, but not too many. Put a griddle or nonstick pan over medium-low heat and lightly coat it with cooking spray or oil. For each pancake, put 1/4 cup of batter on the pan. Start cooking when the top starts to bubble. Then turn it over and cook until both sides are golden brown. Do it again with the rest of the batter, changing the heat as needed to keep it from burning. You can top the pancakes with your favorite things, like fresh fruit, maple syrup, or other things you like.
