Lebanese Cabbage Salad (Malfouf)
In a large mixing bowl, mix together 450g white cabbage, finely sliced (approximately half a small head of cabbage), 3 spring onions, finely sliced, 2 garlic cloves, finely chopped, a bunch of parsley, finely chopped, a handful mint, finely chopped, 1 tbsp dried mint, 60ml olive oil, 45ml lemon juice, 1 tsp sugar, 1 tbsp zaatar (optional)
Variation: Add in some diced tomatoes.
