Tonight meal
Lightly roasted Knepfle (regional variant of gnocchi like pasta) with a little ham and eggs
In a chicken bouillon with cumin and turmeric : carrots and tomatoes cooked in sesame oil, a little onions and shallots.

Day 12 - No kiki, no gnocchi
Yesterday morning felt like having returned from a summer vacation: cold, gray and rainy, with an empty fridge and an overnight bag full of clothes to wash.
After a bit of grocery shopping, kitchen scrubbing (there was still a piece of watermelon flesh stuck to a chair) and laundry, I felt the need for a warm comforting meal.
I picked a Crispy Gnocchi recipe from Rukmini Iyer's book I posted about the other day. I didn't use gnocchi but Knepfle, which are basically their Alsatian cousins.

Crispy Gnocchi with Roasted Peppers, Chilli, Rosemary and Ricotta (2 portions):
500 g gnocchi
500 g mixed red and yellow baby peppers, roughly chopped
200 g cherry tomatoes, halved
2 tbsp olive oil
2 bay leaves
2 cloves of garlic
1 tsp chilli flakes
2 large sprigs of fresh rosemary
1 tsp sea salt
black pepper
4 tbsp ricotta
freshly chopped parsley
➜ Preheat the oven to 200°C. Tip the gnocchi into a large bowl, then pour over a kettleful of boiling water over it and leave to stand for 2 minutes before draining well.
➜ Tip the gnocchi into a roasting tin along with everything except the ricotta. Mix well – make sure you’ve used a tin big enough for everything to fit in one layer. Transfer to the oven and cook for 30 minutes, until the gnocchi is crisp and golden.
➜ Taste and season with salt and pepper as needed, dollop on the ricotta and scatter with the parsley before serving hot.

It was awesome and tasty with Knepfle and I’m sure it’ll be great with gnocchi as well.
It also gave me lots of energy to prepare an entire lesson in one afternoon 💪🏻 and just for that, I’m very grateful.

MARDI 7 DÉCEMBRE 2021 (Billet 3/3)
Vous vous souvenez, samedi dernier nous avions publié un Billet sur le « Marché de Noël en Alsace » de la Gare de l’Est et JM y avait fait quelques emplettes, entres autres des « Knepfle », achetés sur le stand de la Tante Germaine tenu par une amie, Diane (H. de S.).
Hier soir nous avons cherché une recette, pas trop compliquée, pour les tester. C’était un peu pour nous amuser (nous l’avons réalisée à deux)… Finalement, elle s’est révélée pas mauvaise du tout ! Certes, nous ne vous dirons pas que le plat était léger, nous n’irons pas jusque-là mais nous l’avons mangé avec plaisir et nous en avons même repris 2 fois chacun, ce qui arrive très rarement à Marina.
La sauce aux champignons a beaucoup d’importance (il faut qu’elle soit bien crémeuse et goûteuse), les « Knepfle » doivent être bien chauds et légèrement croustillants, le persil ajoute une note indispensable, quant au vin, nous avions choisi un Pinot Gris d’Alsace (Willm), servi très frais, qui se mariait très bien avec la dégustation du plat.
C’est ce qu’on peut appeler un plat d’hiver qui a l’avantage de se préparer rapidement…

KNEPFLE AUX CHAPIGNONS POÊLÉS
DÉFINITION : le Knepfle est le cousin du Spaetzle. Cette mini quenelle aux œufs frais se compose des mêmes ingrédients, mais se présente sous une forme plus épaisse, plus gourmande, avec plus de mâche. Simplement poêlés au beurre ou à l’huile (5-6 minutes), servis en plat principal ou pour accompagner une viande en sauce, la texture et la saveur des Knepfle est très appréciée des connaisseurs.
INGRÉDIENTS (pour 2 personnes)
Knepfle aux oeufs frais : 1 paquet Champignons de Paris : 250 g Bouquet de persil : 1 Gousse d'ail : 1 Oignon : 1 Crème fraîche épaisse Pinot gris d'Alsace : 1 verre
Parmesan en copeaux : 50 g (nous n’en avions pas, nous avons pris du gruyère râpé) Huile olive extra vierge Muscade
PRÉPARATION
Eplucher les champignons frais et les découper en fines lamelles.
Émincer finement l'oignon et l'ail puis les faire revenir doucement à la poêle avec un peu d'huile d'olive.
Lorsque l'oignon devient translucide dans la poêle, y ajouter les champignons. Laisser mijoter une dizaine de minutes en ajoutant au préalable 1 verre de Pinot gris d'Alsace et la crème fraîche.
Ciseler le persil et conserver quelques brins pour la décoration.
Faire revenir les knepfle dans une seconde poêle 5-6 minutes avec un peu d'huile d'olive pour qu'ils soient bien dorés et le persil.
Juste avant de servir ajouter une grosse cuillère de crème fraîche aux champignons.
DRESSAGE
Commencer par déposer les knepfle bien dorés dans un plat creux.
Déposer par-dessus la poêlée de champignons.
Décorer avec des copeaux de parmesan et des brins de persil.
Servir aussitôt.
