Beets are a type of Amaranthaceae vegetable related to spinach. They are almost the same as sugar beets, which are used to extract sugar. Their photosynthetic efficiency is the highest of all plants, beating out potatoes.
The red roots contain potassium, magnesium, phosphorus, iron, folic acid, and vitamin C, and are also rich in polyphenols.
I boiled the root to soften it this time, then cut it into pieces. When boiled, they turned a color similar to tuna fatty tuna. This reduced the unique earthy smell and added a corn-like flavor, making them easier to eat.
The roots were cut into thin strips and fried with sliced ​​wood ear mushrooms in sesame oil, seasoned with sugar, soy sauce, and pepper. Crushed walnuts were added and removed from the heat.
The red color looks delicious. Beets that are soft enough are also easy to eat.

ビーツのキンピラ(prose, cooking)
ビーツはほうれん草の仲間のヒユ科野菜である。砂糖を取るサトウ大根(甜菜)とほぼ同じもので、光合成効率は、ジャガイモを抜き全植物中最高である。
赤い根は、カリウム、マグネシウム、リン、鉄、葉酸、ビタミンCを含み、ポリ��ェノールも豊富だ。
今回は根を丸ごと茹でて全体を柔らかくしてから切り分けた。茹でた時点で、マグロのトロのような色になった。こうすることで、独特の土臭さが減り、トウモロコシのような風味が加味されて食べやすくなった。
根を千切りにして、スライスしたキクラゲとごま油で炒め、砂糖、醤油、胡椒で味を調え、砕いたクルミを加えて火から降ろす。
赤い色が食欲をそそる。また充分柔らかくなったビーツは食べやすい。

Easy meal: tuna rice with leftover kinpira and almond green beans (steam beans, toast almonds, dress with lemon, olive oil, salt, and pepper). For the tuna rice, I tried to reduce the sugar by cooking the carrots (and mirin and other seasonings) with the rice, then seasoning the tuna mildly and mixing it once done. I thought it worked, my husband thought it wasn't quite sweet/flavorful enough, so further experimentation is necessary.

7/10 This is one of those recipes that don't blow you away but you end up making them again because they're cheap and easy!

A staple of Japanese cuisine that uses root vegetables. Peel the lotus root and carrot, cut them lengthwise into thin strips, fry in sesame oil, and season with sugar, salt, soy sauce, and pepper. Hard root vegetables become soft and easy to eat. (Kinpira = stir-fried shredded vegetables.)

Recipe text behind the cut to save clicking through (but visit Maki Itoh's websites anyway because you can learn so much about cooking, especially if you want to cook Japanese food outside Japan)
2 burdock roots, well scrubbed
2 small or 1 medium carrot, peeled
1 Tbs. sesame oil
1 tsp. dry red chili pepper flakes, or 2 small fresh red chili peppers finely chopped
1 Tbs. sugar
1 Tbs. mirin
2 to 3 Tbs. soy sauce
Cut the burdock root into 5 cm / 2 1/2 inch or so long pieces. Slice each piece lengthwise then cut into matchsticks. Put the burdock root pieces in a bowl with enough water to cover, and let soak for a few minutes. Drain away the water, and refill the bowl with fresh water. Soak a few minutes more then drain. Pat the burdock root dry with kitchen or paper towels.
Cut the carrot into matchsticks too. There's no need to soak the carrots.
Heat up a wok or large frying pan with the sesame oil. Add the burdock root and carrot piecs, and sauté briefly, tossing to coat the pieces with oil. Add the chili pepper flakes and toss. Add the sugar, mirin and soy sauce and about 1/2 cup of water. Lower the heat to medium, and continue cooking and stirring until the moisture has disappeared from the pan. Taste a piece of burdock root for doneness: it should be crisp-tender. If it's too crunchy for you, add a bit more water and cook some more.
MY NOTES (me, shoku-and-awe)
This works really well with a julienne peeler, but the veggies end up thinner than in the picture. Adjust cooking times accordingly.
I usually reduce the sugar and prefer to have maybe 2/3 burdock to 1/3 carrot.
I have never patted the burdock dry and it's been fine. I have also forgotten to soak it(!) or only soaked it once and it's been fine.
If you prep in advance, burdock root becomes discolored when exposed to air (it turns purplish, which is kinda neat). BUT soaking it in water brings back its normal color, which is very cool to see!

きんぴらごぼう // Kinpira Gobo Kinpira is one of my favorite bento staples; I’m a sucker for sesame and chili. I rarely make the classic kinpira in the picture because cleaning and peeling the gobo (burdock root) is a pain, but I’ve also used Maki Itoh’s recipes to make it with just carrots or extra broccoli stalks. That recipe should work well for most hard veggies, and it helps me avoid wasting food!
