Keto Carrot Cake
Ingredients:
2 cups shredded carrots
1 cup almond flour
1/2 cup erythritol
4 eggs
1/2 cup coconut oil
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
A pinch of salt
Instructions:
Preheat the oven to 350°F (180°C).
In a bowl, mix together the almond flour, erythritol, baking powder, cinnamon, ginger, and salt.
In another bowl, whisk the eggs with the coconut oil.
Combine the dry ingredients with the wet ingredients, then fold in the shredded carrots.
Pour the batter into a greased cake pan.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool before serving.
Enjoy your keto-friendly carrot cake!

French Toast French toast with no bread it is AMAZING - Quick and easy, we put it in the oven….. went for our walk and it was ready to eat when we got home!!! Ingredients Makes 2 servings: 5 eggs 5oz cream cheese 2 TBSP butter splash of vanilla Method: Preheat oven to 350. Soften cream cheese, add eggs, butter, mix until smooth. Spray loaf pan, add ingredients. Bake at 350° F for 40-45 minutes. Let cool fully, then remove from pan. Slice, then flash fry in skillet with butter. Ready to serve, enjoy with or SF syrup and let your taste buds party!! You will never know it isn’t

Keto Chicken Parmesan
2-4 servings
These chicken breasts are for those on a keto diet which means they consume food that is low in carbohydrates.  However, this fits anyone’s meal plan.
Ingredients:
2 boneless, skinless chicken breasts
Salt and pepper
¾ cup almond flour
2 eggs, beaten
1 cup grated Parmesan cheese
1 teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon dried oregano
Oil for frying
1/3 cup low-carb sugar-free marinara sauce
1 cup shredded mozzarella cheese
Directions:
Preheat oven to 400°.
Cut the chicken breasts in half lengthwise as in chicken cutlets.  Sprinkle salt and pepper on the chicken pieces.
Set up your breading station to have three separate shallow bowls to assist you in breading the chicken. 
Coat both sides of the chicken with almond flour.
Next insert the chicken into the bowl with the beaten eggs and cover both sides.  Let the extra egg drip off the chicken before moving to the next plate.
Mix the parmesan cheese, garlic powder, onion powder, and oregano.  Dip the chicken into the parmesan mixture and coat both sides firmly.
Heat ¼ inch of oil in a large skillet over medium heat.  Add the chicken and fry until it is golden brown on one side.  This should only take a few minutes.  Flip over and cook on the other side. 
Put the cooked chicken in a 9 X 13 baking dish.  Cover with the marinara sauce and place the shredded mozzarella cheese on each piece of chicken. 
Bake the chicken for about 10 minutes until the cheese is melted.  Broil the chicken for another 3 minutes or so until the cheese is golden brown.
Note:
Canola oil was used as it has a high smoke point.
Serve with a side dish of keto vegetables.
