AA Prosecutors ranked on how likely they are to bite someone
Edgeworth: Even at his worst, his idea of combat is to send people to a chess dimension and yell at them. He’s not gonna bite anyone and would probably be revolted by the mere idea of it. 0/10
Franziska: She uses a whip in court and I have full confidence it’s the only thing stopping her from attacking people. It would not surprise me if Edgeworth has a scar on his arm from when he pissed off toddler Franziska a little too much and she went for the kill immediately. 8/10
Manfred: … If pressed? Probably. He wouldn’t like it but he would do it. 6/10
Godot: If he could figure out a situation in which taking a little nibble would lead to a psychological advantage in court I have zero doubt in my mind he would take it. Also he would bite Phoenix just cuz. 7/10
Klavier: I don’t have a safe for work response to this question. 5/10
Simon: He was in prison for 7 years, he has definitely bitten and been bitten before. Would do it if pressed but I feel like he would prefer not to. 4/10
Nahyuta: He acts like he wouldn’t but if curious enough about it he would do it no hesitation. Datz would encourage it. 9/10
Blaise: Whether or not he would, I’m giving him a high score because I think the bacteria from his beard could give you gangrene. 10/10
Sebastian: His reaction to any and all stressful scenarios is crying I don’t think there is a situation in which you can get him to bite someone. But maybe I’m missing something. 1/10
Byrne: In situations of grave danger maybe but honestly he’s just trying to steal and be a dad I don’t think he would need to. 3/10
Garan: Has definitely bitten her sister on multiple occasions when they were children and would do it again if she could get away with it. 7/10
Winston: No and he would be so mortified by the question he would probably call HR. 0/10
Gaspen: Yes. 10/10
Jacques: He’s an athlete. You know how locker rooms are. 8/10
Lana: I don’t have an unbiased answer to this. ?/10
Neil: He’s a cowboy and had a brother he has zero qualms about chomping when necessary. Doesn’t have much of a reason for it but would not hesitate. 6/10

This has certainly to do with how quickly Portsman was willing to put the blame on his own "beloved" partner in this case but Miles still seems to see it as absolutely dishonourable to stab your partner in the back like this with being so willing to think badly of them in general. Meaning, in the reversed situation, that it would probably take a lot for him to think of Gumshoe as having committed some sort of crime.
It's interesting how I1 has something of a theme going on with partners, subordinates and the trust between them. Many members of the smuggling ring are characterized by how little they care about the people around them, how willing they are to betray each other on a moment's notice and use each other as scapegoats so that they themselves get off unscathed. Almost all of them show at least one such scenario and often it ends up bringing their own downfall with it. Portsman is the first of them, he pretends to really care for "Jim" but even before Miles pins him as the murderer so many little details show that he really doesn't and it's only all about himself. And him not trusting Faith, not involving him in the smuggling ring, and choosing to kill him instead when he finds out is ultimately what brings Portsman down. Miles & Gumshoe are positioned as contrasts to them already in this case and later on Shi-Long's story arc is the main contrasting narrative. It's not really foreshadowing for that but I like how it stays consistent with all the preparations Miles makes before openly accusing Shih-na in front of Shi-Long so that he believes him vs how Portsman accuses his own partner almost without thinking.
