Italian Beef Sandwich w/Fries. Portillo’s. Frisco, Texas. 2.13.2023.
NOTE TO SELF: The bun was saturated with "gravy," but I would have rather had it dipped, and I'd rather have au jus than gravy. This was a gut-bomb I don't need to have again. And for the record, this was a catered lunch that someone ordered for me. (I was hoping for a salad.)

#as somebody with a loud and toxic italian extended family the bear comes for my neck over and over#s3 is going even harder on that#nat’s pathology is gentler and less easy to spot than mikey’s or carmy’s or god help us all donna’s#but it is nonetheless unhealthy and bad for her#the theme of “you do not need to be Good And Pleasing to be worth love” is a lot this year#related (and this will take s4 to be sure of but i have Hope) that your ability to succeed in a garbage capitalist structure defines worth#as somebody who worked in a lot of kitchens this show just feels like home#and the thing that kept jarring me about the whole let’s upgrade to fine dining plan was …what about the people you leave behind#and after having seen napkins now it feels like the show KNOWS THAT#tina could not be hired at the bear but being hired at the beef saved her life#god i want them to bring this home#the fact that the sandwich window is the ONLY THING MAKING MONEY feels promising#like… i want the bear (the in-world restaurant) to succeed#but also no. no i do no want it to succeed as-is.#i want the bear and the beef to blend for REAL and then succeed#or i guess fail given the general themes of the season but try on terms they can be entirely proud of!!! even if they fail!!!

Right now it looks like a murder scene, but soon it will be summer pudding! The saffron buns were getting a little stale so I sliced them thin and layered them with a sauce I made from cherries, strawberries, raspberries, and blueberries that I got in the farm share over the past two weeks. This picture show it half-assembled; the fully-assembled dish is in the fridge with cans sitting on top of it to compress it down into something delicious.
Assembled the pudding while I was waiting for my italian beef sandwich to finish heating up; I've started adding slices of avocado to it before wrapping it in foil and throwing it in the toaster oven to bake, which is extremely sexy of me.

thinking deeply about the One (1) time i got high with a friend and their partner and they snuggled me and played with my hair... when i tried to get up because i was worried it was awkward my friend like gestured for me to come back and said like "it's okay, take whatever you need" so i ended up like. snuggling with them for a while?
when i mentioned it to a friend a while later they went like "? i think they were inviting you for more than just snuggles" and now i think about it all the time. what tha heck...

Testo’s, Bridgeport, CT
My parents brought me sandwiches from Testo’s in Bridgeport, CT this weekend and I realized I’d never posted about the restaurant or their food here.
Testo’s “was” a legendary Connecticut restaurant for folks “in the know” that closed at the end of 2022, selling the land to be developed as a high rise, supposedly. A classic blue collar hangout, where carpenters, electricians, plumbers and painters all went to unwind, it was the “Cheers” of local contractors. My dad included. At the bar on Saturdays you could get massive $5 roast beef and roast pork sandwiches till they ran out, sometimes as early as 1pm...
On the most pillowy Portuguese rolls you could imagine, no less!
Their tripe was some of the best we’ve had anywhere in the world...
Bowls of housemade hot peppers and pickled onions littered the bar...
Drinks were stiff and cheap, the pours were generous.
Testo’s was a secret spot for those in the know and they will be sorely missed...
However, it’s not all doom and gloom as Testo’s always maintained a second, less frequented location, a ���pizzeria”, which is still open. This is where my folks went on Saturday as they now sell these famous sandwiches and tripe soup. And I’m happy to report the food is just as good as at the “original”, even is it was takeout for us. Now looking forward to sitting down and eating there soon!
