This recipe combines the hearty flavors of bratwurst with a savory saison beer sauce, served over pillowy gnocchi. It's a comforting and satisfying dish that's perfect for a cozy night in.

Ingredients: 4 bratwurst sausages. 1 tablespoon olive oil. 1 onion, thinly sliced. 3 cloves garlic, minced. 1 cup saison beer. 1 cup chicken broth. 1 teaspoon dried thyme. Salt and pepper to taste. 1 pound gnocchi. Fresh parsley, chopped for garnish.

Instructions: Warm up the olive oil in a big pan over medium-low heat. It will take about 5 minutes of cooking on all sides after you add the bratwurst sausages. Take the sausages out of the pan and set them aside. Put the minced garlic and sliced onion in the same pan. About 5 minutes of cooking will soften the food. Add the chicken broth and saison beer. Salt and pepper should be added. Put the sausages back in the pan. Bring to a low boil, then cover and cook for 20 minutes, or until sausages are fully cooked. While the sausages are cooking, follow the directions on the package to make the gnocchi. Take the sausages out of the pan when they're done and cut them into small pieces. Add the sliced sausages back to the pan and mix them with the sauce. Put the sausages and sauce on top of the gnocchi that has been cooked. Before serving, sprinkle with chopped fresh parsley.

Pommes de terre en cubes

/// Gnocchi maison et pesto persil / cajou

Pour les gnocchi :

400g de pommes de terre

1 jaune d’œuf 

100g de farine

sel

Pour le pesto :

50g persil frais

50g de noix de cajou

1 gousse d’ail

sel de gérande

huile d’olive

Faire cuire les pommes de terre à la vapeur avec leur peau. Les éplucher et les laisser tiédir. A l’aide d’un presse purée, les réduire en purée. Ajoutez le jaune d’œuf, la farine et le sel. Une fois que la pate forme une boule, formez des boudins en roulant la pate (farinez généreusement le plan de travail), puis coupez des petits carrés. Vous pouvez les striés un à un à l’aide d’une fourchette.

Pochez les dans l’eau bouillante. Ils sont cuit une fois qu’ils remontent à la surface. Égouttez bien ! Vous pouvez ensuite les faire revenir dans une poêle dans du beurre pour leur ajouter un coté croquant.

Pour le pesto, mixez tous les ingredients ensemble, plus ou moins longtemps suivant votre goût pour un pesto plus ou moins lisse.

Servir bien chaud et assaisonner avec le pesto ! Vous pouvez les accompagner d’une salade ou de roquette.
