Hey hey Foody Feasters! It’s that time of week again! #tastytuesday ! #foodspiration & #fitspiration coming your way! We are going on hiatus for the next two months, so this is going to be our last post for a little while. We are moving into a new home and we need a little break to relax between moving and the pandemic. This is our last meal breakdown for a while: Korean style beef stew with white bean mash served with pea sprouts and some lightly charred yellow peppers & zucchini. Topped with a scattering of toasted sesame seeds. I made some Spring vegetable fried rice 🍛 with leftover white rice I had sitting in my fridge and it turned out absolutely wonderful! I’m having it for lunch with toaster oven baked salmon 🐟and half an avocado 🥑. . To make the rice heat a tablespoon of olive oil in a pan on the stove top. Add 1/4 cup chopped yellow onion and sauté for 3-4 minutes until the onion starts to soften. Add 1/2 cup chopped asparagus and 1/2 cup sliced cremini mushrooms. Season with salt and pepper and continue to cook another 3-4 minutes until tender then mix in 1/2 cup peas until heated through. Once the veggies are cooked add 1 cup cooked white rice. Turn up the heat if needed and sauté the rice into the veggies. Push the rice and veggies to the sides of the pan to form a hole in the middle. Add a splash of olive oil then add a beaten egg. Let the eggs set for a moment then scramble the eggs into the rice. Makes about 2 servings. . 🥑 AVOCADO SALMON🐟 📌 𝙈𝙪𝙨𝙩 𝙎𝙖𝙫𝙚 𝙩𝙝𝙞𝙨 𝙍𝙚𝙘𝙞𝙥𝙚 𝙩𝙤 𝙈𝙖𝙠𝙚 𝙄𝙩 𝙇𝙖𝙩𝙚𝙧 😋 🌟 INGREDIENTS 🌟 • 1 lb salmon filets, boneless, skinless Cut into 4 fillets • 1 tsp garlic salt • 1/8 tsp freshly ground black pepper • 1/2 Tbsp olive oil to sauté ✨ INGREDIENTS - SALAD DRESSING ✨ • 3 Tbsp lemon juice from 2 medium lemons • 3 Tbsp extra virgin olive oil • 1 tsp sea salt • 1/8 tsp black pepper • 2 Tbsp dill freshly chopped 🌟 INGREDIENTS - AVOCADO SALMON SALAD 🌟 • 1 romaine lettuce (1 medium head or 6 cups chopped) • 1/2 English cucumber sliced • 6 radishes thinly sliced • 1/2 small red onion (1/2 cup) thinly sliced • 2 avocados pitted, peeled and sliced ♨️ PROCEDURE ♨️ In a small bowl, whisk together dressing ingredients: 3 Tbsp lemon juice, 2 Tbsp dill, 1 tsp sea salt and 1/8 tsp black pepper. Stir together and set aside. Season both sides of salmon filets with 1 tsp garlic salt and 1/8 tsp pepper, or season to taste. Heat 1/2 Tbsp oil in a large nonstick pan over medium heat. Once oil is hot, add salmon and cook 3-4 minutes per side or until until golden and cooked through (cook time can vary depending on thickness of salmon filet). Remove salmon to a plate and spoon 1 teaspoon of the dressing over each filet. Set aside to cool to room temperature.
