White Bean and Green Veggies Soup
A vegetable broth-based soup brimming with green vegetables and white beans. A healthy, quick to make and perfect Meatless Monday option.

Mondays everywhere tend to be about getting a good start to what you hope will be a productive week ahead.  For me, winters are easier to stay on track because I’m not daydreaming about being outside and enjoying the sun.

Of course, we like to go on cold snowy walks, some of my favorite times with the family! Winter is always a great opportunity to make some soup. As you know I love! We do a good job of planning our meals out for the week and prep lunches on Sunday. Thursday or Friday lunch is a wild card because it’s an opportunity for the rest of the house to come up with a meal idea.  I like to see what they come up with, challenge them to cook with what’s left in the refrigerator. And I will admit we always have more food than what will be eaten in a week so that makes the task easier. It’s an opportunity to stretch their culinary muscles.
Dinner time is still primarily my deal. Although recently we’ve had a couple of days where #3 really stepped up and took on several sides for dinner. He likes to help out with the chopping and this soup was no exception! It has been colder than normal here lately so soup seems to be a logical option. I know it’s February what should I expect? We’re supposed to be getting snow all week!

This white bean and green veggies soup is a perfect lunch on a cold Winter day. Do you believe that this soup is ready, and on the table, in under twenty minutes? Simple, easy to find ingredients make this a go-to meatless Monday option. It’s so quick to make and yet full of flavor with just a few ingredients.

Makes 4-5 servings
Ingredients
4 teaspoons olive oil
1 cup chopped celery
2 generous cups chopped broccoli
2 cloves garlic, crushed
¼ teaspoon salt
32-ounce container vegetable broth
1 cup water
1 generous cup frozen peas
2 (15-ounce) cans white beans, drained and rinsed
2 tablespoons pesto sauce
optional feta cheese
Directions
Heat a large soup pot over medium heat. Add oil and swirl to coat. Add celery, broccoli, garlic, and salt. Saute 5 minutes. Add broth and 1 cup of water. Stir to combine. Cover and bring to a boil. Add peas, beans, and pesto sauce. Simmer uncovered 4-5 minutes.
Place in bowls and top with optional feta cheese.
