National Guacamole Day

History of National Guacamole Day
While the day itself doesn’t exactly seem to have any particularly poetic origin, National Guacamole Day is a terrific excuse to indulge in the tastiest of dips!
However, guacamole itself seems to have its origins with the Aztec people group at some time before the 16th century. Early guacamole recipes only included mashed avocado and it became very popular due to the excellent health benefits of the avocado. Adding in the tomatoes and onions came later, which was a natural development since those are also native to the Americas. Eventually the lime juice was added, which originated in the Middle East but made its way west with the arrival of Christopher Columbus.
The word, guacamole, originally came from the word “āhuacamolli” which translates literally to mean “avocado sauce”.
Not only is it a great addition to a savoury spread, it’s also good for you! This is because “guac” is made from avocados, which are nutrient dense and packed with healthy fats that help the body lower bad cholesterol, all of which contributes to having a good ol’ time and living as long as possible.
How to Celebrate National Guacamole Day
Celebrating this day is easy and can be filled with fun as well as delicious flavors! Enjoy the day with some of these ideas:
Eat Guacamole
Even if there’s no particular reason, other than it being an awesome day, go ahead and celebrate National Guacamole Day by picking up some at the store! Don’t forget to grab something to put it on, such as a bag of tortilla chips, a selection of veggie sticks (carrots, celery or cucumbers), or a piece of tasty toast. Eat it with french fries, slather it on a quesadilla or use it as a filling or garnish for tacos. The options for eating guacamole are virtually endless!
Learn to Make Guacamole at Home
Freshly made guacamole is the most delicious part of this day! All it takes is buying some ripe avocados and making it from scratch at home. Blend the avocado, season with salt and it’s done!
Of course it might be even tastier to add a bit of flavor to it, such as lemon or lime juice for some zesty citrus notes. Or perhaps some tomato, garlic and onion to expand the palette, the choice is completely personal.
Find Creative Ways to Eat Guacamole
Many people associate guacamole only with corn tortilla chips. But there’s so much more to it than that! For those who are trying to get a bit healthier and forego the chips, or for those who are just looking for a bit of adventure, guacamole has a lot of creative ways it can be used for snacks and meals. In addition to using it as a dip, try out these ideas for guacamole:

Invite friends and family over for a little get together with the intention of celebrating National Guacamole Day. Give a nod to guacamole’s origins by decorating and dressing up in costumes that channel Central American culture.

Avocados are a fruit. That’s right, technically guacamole is actually a smashed fruit salad!
Hass Avocados were banned in the US. In an effort to control pest problems, the beloved Hass Avocado was once banned in the United States. From 1914 to 1997, it was illegal to import these delicious fruits. Everyone is much happier now that they are legal again.
The World Record for Guacamole was over 3 tons. Created by a wholesaler in Jalisco, Mexico, this batch of guac took more than 800 people to make it. It contained more than 25,000 avocados, 3,500 tomatoes and 3,000 lemons.
Remember–it’s not necessary to only indulge in this tasty treat on National Guacamole Day. After all, it’s good for you all year round, this is just an extra special reason to enjoy it!

staying at school today so i decided to order chipotle for dinner. yum! i got a burrito with guac in it and no sides or drink. total was $12.25 w/out tip, but lucky me i had a coupon for free guac! $2.40 off my order (was the guac in the burrito really that expensive?) yay! now i have the money to tip, too! i'm at the final payment screen, it says my total (with tip and coupon) is $11.00 and change. i click the final button, and $13.99 is charged to my card.
customer service says the guac coupon should have only been able to apply to the side, which is why it glitched out, but honestly i dont give a shit! are you joking? this is literally a scam! if it's a glitch it needs to be fixed fucking asap because I WAS TOLD I WAS PAYING LESS THAN I WAS. sure i said yes-- to paying $11.00something!!! and now bc i tipped i was paying MORE THAN A DOLLAR MORE than i would have without the "coupon"! i do not have an extra dollar to spend! i didn't even tip more than a dollar so wtf! (tipped $1.00, on what was originally $12.25 with tax)

favorite food i cooked (2022)
in the last two hours of 2022, i will frantically write a jumble of reflections or lists since i’m hanging out in the psych ER alone anyway :p 
in no particular order:
cumin lamb “pie” with mashed potatoes & scallion pancake - i made this for pie night and i’ve been dreaming of this for the last several years - it turned out so much better than i expected (though i did cheat with using XFF spicy oil, haha). toasting the cumin really adds a lot, and this will definitely be in my routine because it is pretty easy once you slice all the lamb :) 
spicy brazilian cheesy bread - the recipe i’m using now is totally foolproof, and it’s amazing that you can use feta and add any spicy sauce (truff, gochujang, harissa, etc) and it will turn out so flavorful and delicious - so easy! 
roasted brussels sprouts with maple-soy caramel glaze - ridiculously easy for how complex and tasty the flavors are - i’m obsessed with this glaze. 
thit kho grilled cheese sandwiches with BBH dip - definitely the most time-consuming dish but so, so worth it. will always want this if i’m throwing a lavish dinner party :) 
red curry coconut crab quiche - another ridiculously easy hit - i think i’ve made this like 3-4 times since i first made it. a little pricy with lump crab but definitely worth it :) 
scallion pancakes coconut short rib adobo quesadilla - scallion panckes are waaay underrated as a carb vehicle - add some guac, pickled caramelized red onions, and spicy mayo, and this is the most delightful comfort food 
kimchi chorizo spam arancini - so fun making different flavored arancinis - another arancini flavor will probably feature on next year’s list :p 
upside down pineapple guava mochi cake - incorporating guava nectar into the mochi cake really added so much, and the caramelized pineapple - yum! 
tonka bean coconut ice cream with candied macadamia nuts & marshmallows - tonka bean just really elevates everything. this did not need additional toppings to make it tasty but it helps :) 
chawanmushi with soy-marinated ikura - the real star is the dashi from okume :D but really this is so comforting and lovely

scrambled eggs: Yes, but I do prefer sunny-side up or over-easy.
coffee cake (it's bread mixed with cinnamon): Yesss. So good.
pancakes: I very rarely eat pancakes, but I like them. Waffles are better.
bacon: Ew, no. I don't get the obsession.
waffles: Yep. I'm perfectly fine with just good ol' Eggo's to be honest.
maple syrup: Mmm, of course. Gotta have that with pancakes and waffles. And maple flavored things like maple donuts or maple and brown sugar oatmeal.
toast with raspberry jam: I don't think I've ever had raspberry jam, but I think I'd like it. I like grape and strawberry.
sausage: I used to, but it can be a little spicy and I can't have spicy food anymore. :(
Egg McMuffin: Yeah, with cheese.
blueberry muffin: Blueberry muffins are delicious.
a salad - eaten for breakfast: Not something I've ever wanted to have for breakfast.
pasta- eaten for breakfast: Pretty sure I haven't had pasta for breakfast either. I stick to the pretty common breakfast foods. Honestly, I mostly just have eggs.
granola bars: Yeah, they were good to just grab and go when I was in school or just to have as a snack.
yogurt and granola: Nah, I'm good. Not a big yogurt fan anyway and if I were to have any it was like a Go-Gurt or the Trix flavored ones, haha.
Section 2: Lunch or Dinner
macaroni and cheese: I'm not obsessed, but I like it. I prefer macaroni salad.
ravioli: Mmm, spinach and cheese ravioli is delicious.
tortellini: Pesto tortellini is the best.
mashed potatoes: Love mashed potatoes and gravy.
baked potato soup: I actually haven't tried it before cause I'm not much of a soup person, but that is one I have thought about trying.
cheesy potato soup: ^^^
chicken corn chowder soup: I don't like seafood.
butternut squash soup: That doesn't sound appealing to me.
chicken salad sandwich: Never had it.
chicken Caesar salad: I like Caesar salad, but I don't recall having it with chicken.
chicken salad wrap: Nah, not a wrap person.
ham and cheese with crackers: Swap the ham with turkey, salami, or bologna then yes.
spinach artichoke dip: Yesss. Especially when it's warmed up and you have sourdough bread to dip with.
breadsticks: Love them and love when they’re served at restaurants with olive oil. <<< Saaame. I like them with marinara sauce, too.
Section 3: Foreign Foods
sushi: Nooooo.
sesame chicken: I've never had it.
sweet and sour chicken: Yum.
General Tao's Chicken: Never had it.
rice with chicken, vegetables, and pineapple: Never had that, but it doesn't appeal to me at all.
lasagna: I like lasagna and my mom makes a very delicious one, but in recent years I've become very particular and picky (even more so) with food and textures, and I don't enjoy lasagna noodles anymore. It's a shape thing. It's actually the same with tortellini. For whatever reason, those noodles are harder for me to eat. I like thin or penne noodles.
garlic bread: Garlic bread is the bomb. I love garlic. I love bread.
tacos: I would prefer a burrito or just skip out on the tortilla altogether to be honest, BUT I do love me a Doritos taco from Taco Bell.
nachos: I already talked about this recently, but I've been into using these chips called Andy Capp's Cheddar Fries in place of the typical tortilla chip or even French fries and making nachos with those consisting of beans, shredded cheese, gravy, guac, sour cream, cilantro, and onions. It's SO good.
pizza: I do love me some pizza. It's not something I crave a lot, but I do enjoy it.
quesadillas: Shredded chicken quesadillas are good. I don't have them very often either, though. Taco Bell's chicken quesadilla with their is avocado ranch is really good, though.
spaghetti: Spaghetti and meatballs are yummy. Instead of lasagna give me that.
chicken fried rice: It's fine. Not a big rice person, but I can eat fried rice or Mexican rice. I don't like just white rice.
crab rangoon: Mmmm, I've actually been really into that lately. I like when they're crispy and really stuffed with cream cheese.
Snacks: Chips and dips are my favorite snacks.
apples: Meh. It's been quite awhile since I've had an apple. I used to eat them more when I was younger with like peanut butter or salt.
grapes: I don't recall the last time I had grapes either as it has been awhile, but I like them. I'm just not a fruit person, it's not something I crave or reach for.
strawberries: They're good, but it's the same thing as I said with the previous answers. Chocolate covered strawberries are yummy, though.
crackers: I like buttery, garlic-y, or cheesy crackers.
protein bars: Ew, nooo.
milk chocolate: I like it. White chocolate is my favorite, though.
bananas: I would say they're my favorite if I were to choose a fruit and one I have more often in comparison to any other fruit. Banana milkshakes are my favorite.
popcorn: Extra butter and salt, please. Movie theater popcorn is the best. Ooh, and I recommend getting this garlic parm popcorn seasoning you can find at the store and some movie theaters.
Candy: Eh, not a big candy person. I much prefer brownies, cookies, cupcakes, donuts, muffins, ice cream/milkshakes, cheesecake...
Reese's: I loved 'em growing up, but for some reason in recent years I haven't been as into them. I'm also kind of thinking I may have developed a slight reaction towards peanut butter.
Sour Skittles: I hate sour foods so this is a no for me. <<< Me, too. They irritate my mouth and tongue and I just don't find the sour sensation enjoyable at all.
Hershey's Cookies and Cream bars: Yum. I wish they'd bring back the Halloween version (it had candy corn pieces instead) and the Christmas one (it had candy cane pieces) as well.
Tootsie Fruit Chews: Nah.
gummy bears I don't like gummy candies.
Jolly Ranchers: As a kid I had those all the time, the watermelon ones especially.
Smarties: I like 'em even though there's nothing exciting about them.
Sweet Tarts: Nah.
Reese's Pieces M&M's: Those are two different candies, though? Or I've somehow missed out on that combo. Either way, I like both.
Laffy Taffy: The banana ones were good.
Airheads: Nah.
Next Section: Dessert
chocolate brownies: Loveeee.
chocolate pie: Meh, no thanks.
coconut cream pie: Ew, coconut anything is a hard pass.
apple pie: No thanks. I really don't care for pie except for cheesecake.
pumpkin pie: Nooo. I don't like pumpkin anything.
key lime pie: Nope.
peach pie: Nope.
strawberry swirl cheesecake: Now this is a big yes. Love it.
cream puffs: Meh, I don't think they're that great.
custard-filled donuts with chocolate frosting: I don't like filled donuts.
chocolate chip cookies: I enjoy a good chocolate chip cookie now and then, sure.
peanut butter cookies: I like them.
gingerbread cookies: Nooo.
chocolate fudge: Yum. I love fudge, but if we're talking cookies Keebler has Fudge Sticks, which are fudge covered vanilla wafer cookies and they're so addicting.
chocolate chip cookie dough ice cream: Yum yum.
vanilla ice cream: I do enjoy just a classic vanilla shake or ice cream as well.
rainbow sherbet: I like it in this punch my mom makes, but I don't eat it by itself.
strawberry cream pie: No. I thought we were done with the pies.
strawberry shortcake: Nah.
chocolate-covered strawberries: White chocolate covered strawberries, please.
apple crisp: Nah.
pudding: Not a big pudding person, but banana pudding is quite good and something I'll have now and then.
Last Section: Some more that I thought of!
yams: No.
corn on the cob: It's easier and preferable to eat off the cob.
apple cinnamon oatmeal: Sure. I prefer brown sugar and cinnamon, though.
hard-boiled eggs on salads: Yes, that's a must.
dried cranberries on salads (aka craisins): Ew, no.
coleslaw: No.
pita and hummus: Hummus is gross.
ham and pineapple pizza: Nooo.
peanut butter and jelly sandwich: I like them, but I rarely have one. I actually did have an Uncrustable this morning, though.
finger jello: Finger jello? Not sure what that is, but I'm not a fan of jello, so I'm gonna say no.
avocado toast: With a sunny-side up egg, yes please.
Special K with Berries (it's a cereal): No.
snickerdoodles: They're good.
crab dip: Nooo.
teriyaki chicken sandwich: I like teriyaki chicken, so I'd probably like it.
kale: Never had it, have no desire to try it.
spinach: Love it.
pumpkin bread: Blech, no.
zucchini bread: Ew, nooo.
whipped cream Yesss.
blueberry scones: Sure.
cranberry scones: Nooo. I don't like cranberry anything.
carrots and dip: Raw carrots and ranch are good.
watermelon: Refreshing treat. Haven't had it in quite awhile, though.

fish and chips: Nooo.
lobster dip: I do not like seafood.

Arby's curly fries: A lot of people obsess over 'em, but I personally wasn't impressed.
buffalo Mac and cheese: I can't eat spicy food anymore, but back when I could yes please. Mac and cheese with chili oil or Sriracha was bomb, too.
chicken wings: Boneless, yessss. One of my fave foods.
chicken nuggets: Yum.
mangoes: I used to like chili covered mangoes back in the day.
ham and cheeese omelette: No on the ham.
enchiladas: They're good.
clams: Nooo.
caramel: Yummy. Omg, now I want a caramel frappe.
peanut sauce: Never had it.
peanuts: Sure.
apple butter: Never had
soy sauce: Yeah, I like to dip my Chinese food in it.
trail mix: Sure.
bagels: Bagels with strawberry cream cheese is the best.
English muffins: With egg and cheese.

Week 5/52: January 31st - February 6th 2022 | Chipotle
Pretty bad week tbh. My life is falling apart and I don’t know how to stop it lol. Most of my time I am spent working and catching up on sleep so I don’t even have time to solve my personal problems. I have never taken so many naps in my life. Work is okay; got a good performance review at my meeting with my manager and student interactions feel fulfilling especially with uni grads but I still feel like shit sometimes when high school students and their parents are disrespecting me because they are entitled trash. But I’m used to it. Busy season will be ending after February so I still have to figure out wtf I am going to do. Maybe I will just rest for a bit. I think I deserve it. I really do want to go out of town again in the spring!!!!! Really hope that I can. I miss travelling. Been 2 months since I came back home from Calgs and life hasn’t felt the same. Sobs.
I had to accompany my dad to his ophthalmologist appointment on my day off as his driver. His clinic was right beside the 2nd optometrist clinic I worked at (the one where I stayed for a literal week lol in Sept 2020) and Chipotle. I was starving and didn’t eat all day and we waited so long for the doctor so I just got a burrito bowl (brown rice, pinto beans, salsa, cheese, guac, lettuce, chilli sauce?? think that’s it). It was very yum and the highlight of the day. His clinic had good views of the Vancouver skyline so I took some pics but it was way too foggy. Rest of day was shit. Rest of week I felt so suicidal and I don’t know what to do. It’s truly such a struggle feeling like no one cares about you and wanting to die in a literal explosion (fast death pls) because breathing and being conscious feels too painful. Also fuck how I was too tired to put on makeup. I miss looking like a human being!!!!! Haven’t looked decent in almost a month JDHJKSFJKSF. These outfit pics are barely worth keeping lmao I can’t even look at myself. Side note but 开端 (RESET) is an amazing cdrama that I binge watched this week. I love thriller shit. And Bai Jingting is SO handsome (but he’s also derp but he still looks good????? IDK MAN). Literally goals. Me when!!!!?? 😭

History of National Guacamole Day
While the day itself doesn’t exactly seem to have any particularly poetic origin, National Guacamole Day is a terrific excuse to indulge in the tastiest of dips!
However, guacamole itself seems to have its origins with the Aztec people group at some time before the 16th century. Early guacamole recipes only included mashed avocado and it became very popular due to the excellent health benefits of the avocado. Adding in the tomatoes and onions came later, which was a natural development since those are also native to the Americas. Eventually the lime juice was added, which originated in the Middle East but made its way west with the arrival of Christopher Columbus.
The word, guacamole, originally came from the word “āhuacamolli” which translates literally to mean “avocado sauce”.
Not only is it a great addition to a savoury spread, it’s also good for you! This is because “guac” is made from avocados, which are nutrient dense and packed with healthy fats that help the body lower bad cholesterol, all of which contributes to having a good ol’ time and living as long as possible.

Eat Guacamole
Even if there’s no particular reason, other than it being an awesome day, go ahead and celebrate National Guacamole Day by picking up some at the store! Hass Avocados were banned in the US. In an effort to control pest problems, the beloved Hass Avocado was once banned in the United States. From 1914 to 1997, it was illegal to import these delicious fruits. Everyone is much happier now that they are legal again.
The World Record for Guacamole was over 3 tons. Created by a wholesaler in Jalisco, Mexico, this batch of guac took more than 800 people to make it. It contained more than 25,000 avocados, 3,500 tomatoes and 3,000 lemons.
Remember–it’s not necessary to only indulge in this tasty treat on National Guacamole Day. After all, it’s good for you all year round, this is just an extra special reason to enjoy it!

Hey! I can definitely give you some recommendations! I'm not sure if you're going to be primarily uptown or downtown, so I'm just gonna compile two lists below (with links, wherever possible).
Downtown (below 59th Street)
Brunch*
-Carroll Place (Italian wine bar and gastropub near West 4th Street w/ bottomless mimosas or sangria. I personally swear by the Eggs in Purgatory)
-Agave (Mexican style bottomless brunch spot. There are two locations, one in Greenwich Village and one in Kips Bay. The food is decent, but the drinks are excellent. I'm usually a staunch mimosa person at brunch, but definitely get the margaritas here)
Lunch/Dinner
-99 Favor Taste (Delicious, affordable all you can eat hotpot and table barbecue. This is the first place my friends and I wanted to go once indoor dining was allowed again. There are multiple locations downtown)
-Misoya (The best ramen shop in NYC, imho. Every item on the menu is so good, it brings tears to my eyes just to think about it lol)
-Laut (Amazing Malaysian, Singaporean, and Thai food near Union Square! I've only been there twice, but I can swear by the Asam Laksa and the Hainanese Roast Chicken Rice)
-Paesano's of Mulberry (My favorite restaurant on the Mulberry Street strip in Little Italy, which is admittedly kind of basic in principle, but still really good. Solid, affordable place that my friends and I have been going to since high school)
-Claw Daddy's (Delicious Louisiana seafood boil—spicy, flavorful, yum. They also have great drinks of the "adult capri sun" variety)
-Soogil (Korean-French fusion with an amazing tasting menu! It's a little pricey, but if you have room to splurge, I would highly recommend giving this place a try)
Sweets
-Fay Da Bakery (Chinese bakery with lots of different cakes and buns to try! There are two locations in Manhattan, and a bunch more in Queens)
-Max Brenner (This place serves pretty good lunch and dinner, but the reason to come here is the chocolate fondue and chocolate cocktails -- their dark chocolate martini sends me)
-Otafuku x Medetai (This one is a Japanese street food restaurant, but I'm grouping it with sweets because the taiyaki here is everything)
Uptown (above 59th Street)
Brunch
-Calle Ocho (Latin American cuisine with a robust sangria menu for bottomless brunch. Tread carefully with the sangria, though, b/c it's sweet and doesn't really taste like alcohol and the next thing you know, you'll be sending salacious text messages to your ex. Trust me, I know.)
-Moonrise Izakaya (Japanese gastropub on the Upper West Side. This place is a good vibe at any time of day, but the weekend brunch is so good it makes me emotional lol)
Lunch/Dinner
-Carmine's (Family style Italian food. I would recommend going with a party of three or more because the portions here are notoriously massive. Like garlic bread served on a pizza pan massive.)
-Red Rooster (Chef Marcus Samuelson adds his personal flair to soul food/American comfort food. The yardbird is easily the best piece of fried chicken I've had to date. The Uptown Guac is also everything.)
-Cafe du Soleil (Casual, affordable French restaurant. Great food, nice wines. I swear by the Hachis Parmentier, and will never say no to the creme brulee)
-Jacob's Pickles (Southern American comfort food. Easily serves the best cheese grits I've experienced in life thus far. The house made biscuits are also really delicious)
-Haru Sushi (Japanese restaurant with a few different locations around the city, although I think the UWS branch is the best.)
-Pappardella (Another Italian restaurant with really good food. Everything I've tried on the menu hits)
Sweets
-The Hungarian Pastry Shop (Cafe and bakery by Columbia with amazing coffee and baked goods. The plain croissants are always fluffy and delicious, and the cheese danishes are everything. The cappuccinos with sugar and cinnamon are some of my favorite in the city. There's no website for this one, so I'm linking the Yelp page)
-Silver Moon Bakery (A little french bakery on the Upper West Side that brings me SO MUCH joy. The herbed brie sticks, palmiers, apple tarts, and chocolate bomb cakes are my personal favorites)
-Levain Bakery (I can't believe I forgot this at first! Chocolate chip walnut cookies are great and they only cost $4)
*Imo, there are much better brunch spots in Brooklyn, but if you don't have time so schlep out there, these places are still great.

Chicken Fajitas This is another perfect example of how healthy and delicious can come together and kick bad habits' butts! I never make fajitas because they're usually not my favorite thing to eat and I see them as complicated. Man was I missing out! Thanks to Jessie for inspiring me unknowingly. I should have known better. Whenever I make something myself it's always way better than I remember it as a kid! The chicken was pre-packaged from the store, as were the tortillas. That's where easy comes in (not that it's difficult to grill your own chicken...) Then I made my own seasoning (looked up a few recipes online and then just threw a bunch of stuff in.) OMG! Out of this world. A few squirts of fresh lemon juice dials the flavor to a hundred. A reasonable amount of mozzarella and provolone cheese and some low calorie guac salsa (by Herdez) brings the flavor to a thousand!! I HAVE to make these again... and so do you. Then show me pictures. Send foods. 😂 PROS: EVERYTHNG!
