Welcome back to my kitchen i.e. into Santa's sweets workshop!
This time, by popular demand, I will show you how to make Greek Christmas butter cookies-Kourabiedes with chocolate coating.
In the past, I have shown you how to make chocolate Kourabiedes.
You will probably ask: why Kourabiedes with chocolate? My answer is simple: Kourabiedes are in any case the best biscuits for the festive season, so to combine them with chocolate makes for an exceptional, yummy result.
They are very trendy in Greece nowadays, and you will notice that I use a few ingredients that I don't normally use on my basic recipe for Kourabiedes.
So let me show you how to prepare these melt in your mouth Kourabiedes-bites.
Suitable for lacto vegetarians.
           
INGREDIENTS:
•          400 gr. / 14 oz / 3 cups Self-rising Flour, sifted
•          250 gr. / 9 oz / 1.1 cups good quality Butter, like “Kerkyra”, softened
•          130 gr. / 4.6 oz / 0.6 cup Sugar
•          60 gr. / 2.1 oz / more than 1/2 cup blanched Almonds, roasted, finely chopped
•          50 gr. / 1.75 oz Chocolate drops
•          8 gr. / 0.3 oz / 2 tsp. Vanilla Sugar (powder)
•          Pinch of Salt
•          1 shot / 30 ml Brandy
•          For coating: About 450 - 500 gr. / 1 lb - 1 lb 2 oz Dark Chocolate
•          45 ml / 3 tbsp. Butter
•          Optional for garnishing: EXTRA 25 gr. / 1 oz blanched Almonds, roasted, finely chopped and Powder sugar

METHOD:
A. Prepare the Kourabiedes cookie dough: Note: These are a real treats which you can't stop eating, so I decided to make them bite size, to make you feel less guilty when munching more than one.
1. Lightly roast the blanched almonds in a lined baking tray, in a preheated oven FAN @190 ℃/ 375 ℉ for just 5' (roast also the extra almonds for garnishing, if using). Leave them on the kitchen bench to cool down completely.
2. Then chop them finely in a food processor. Leave aside (separate the 25 gr. to garnish cookies at the end).
3. Place the softened butter in the bowl of a strong, electric mixer.
4. Add the sugar and start beating them, in high speed, for 15'-20' or until the mix becomes white, fluffy and has the texture of whipped cream.
5. Add also the vanilla sugar.
6. After about 20', you will see that dough has turned out white and fluffy!
7. Adjust speed to very low and fold in, spoon after spoon, the sifted flour. I added almost 3 cups, leaving about 30 gr. / 1 oz behind, to add if needed.
8. Pour the brandy and salt in the cookie dough, blending them in before you continue with the rest of flour.
9. Lastly, add the chocolate drops and the chopped almonds. Beat just enough to incorporate them.
10. Stop the mixer.
11. Knead the dough for a couple of minutes with your hands to blend the almonds and chocolate drops but to help dough remain fluffy.
12. Now you can check if the dough is ready to be moulded into cookies. It should be hard enough to form a shape but not too hard to crumble & it shouldn't stick to your fingers!
13. Is the dough sticky like mine? It needs a bit more flour, so I added the one I have reserved.  
14. But if yours is too hard that it crumbles, it needs a bit more butter.
15. Let dough stand for 15'-20' to rest.
B. Shape the Kourabiedes:
16. Line a large oven tray with parchment paper.
17. Take a dollop from the kourabiedes dough and shape it like a small ball. Place the cookie on the lined tray.
18. Repeat the process for the rest of the cookie dough, making sure all cookies are about the same size & shape.
19. Ready to go in to the oven for some lovely Santa holiday baking!
C. Baking Instructions: 20. Bake Kourabiedes in a preheated oven FAN @180 ℃/ 350 ℉ for about 18'-20' (depends on the oven). Let's get these cookies baked!
21. After a total of 20', Kourabiedes are baked (they should have a light beige color, NOT brown!).
22. Wow, the smells in my kitchen are to die for! ♬Holidays are coming 🎶!!
23. Place the tray on the kitchen bench and let kourabiedes cool down completely!
24. IMPORTANT TIP: DO NOT coat them with chocolate while they are still hot. Humidity will be trapped inside and they'll become soggy!
 
D. Prepare the chocolate coating and cover Kourabiedes:
25. When Kourabiedes have cooled down, place the chocolate pieces in a pan over low heat and that into bain marie i.e. in a larger pan filled with water.
26. Add the butter in the pan with chocolate next.
27. Stir the chocolate sauce regularly until it slowly turns into a thick liquid and it's glossy.
28. Turn off the heat but leave the pan in its bath!
29. Line a large baking tray with parchment paper and place a (clean) oven rack on top of it.
30. Now take Kourabiedes one by one and with the help of a spoon and a fork, dip them briefly in to the chocolate sauce, flipping them as well.
31. The fork is there to help strain some of the chocolate sauce. Place them on the rack, on top of the lined baking tray.
32. While the chocolate coating on Kourabiedes is semi liquid, sprinkle some chopped almonds on top of each cookie, so they can stick on its surface.
33. Repeat for all Kourabiedes.
34. To finish, you can use 2 different techniques to solidify the chocolate coating and serve the cookies:
i. Either let Kourabiedes with chocolate coating stand there in the rack for about 5 hours to dry out.
ii. Or place them in the freezer for 15' for the chocolate to set.
 
E. Decorate the Kourabiedes:
35. With the help of a spatula, remove Kourabiedes from the rack and decorate them by bringing a nice festive platter next to them.
36. Place Kourabiedes, the one on top of the other, slowly forming a Christmas tree (pyramid) on the platter.
37. Optionally, you could dust some icing sugar on top of the "Tree", just for the snowy effect. Here is the whole plate. Feast your eyes on these mouthwatering cookies!!

They are sooo good, filled with such flavors and aromas. Crispy on the outside, crumbly inside with good butter, almonds and chocolate drops AND the added bonus of the chocolate coating, making them practically irresistible!!

G. Storage Info:
Kourabiedes can be preserved for up to a month in an airtight cookie container! But who can stay away from them for that long 😋😂👌🤶!?

H. Kourabiedes History and Info:
Kourabiedes are festive butter cookies – one of the most popular Greek Christmas sweets together with Melomakarona!
Kourabiedes came to Greece, along with the arrival of refugees from Asia Minor, and more specifically from the region of Smyrna.
They were loved instantly, and became a holiday Season custom, but in some parts of Greece you also see them at weddings, baptisms, Easter and other celebrations because of their beautiful white color.
Kourabies traces its origins to Persia, where it first appeared in the 7th century, when sugar was spread to the region. Lebanon also claims the paternity of Kourabie. The root of the word Kourabies derives from Qurabiya in Azeri language-meaning hard cookie.
In the colloquial language, we call "Kourabie" a lazy, soft-spoken or stupid person. In military slang, a "Kourabie" is a retired soldier, one who does not take part in operations, but is posted to an office.
Kourabiedes are deliciously sweet, crunchy & crumbly, with the aroma of good butter & roasted almonds. And powder sugar on top that fills your mouth and clothes lol!

Καλώς ήρθατε πάλι στην κουζίνα μου, δηλαδή στο εργαστήρι γλυκών του Άγιου Βασίλη!
Αυτή τη φορά, κατά λαϊκή απαίτηση, θα σας δείξω πώς να φτιάξετε Κουραμπιέδες με επικάλυψη σοκολάτας.
Στο παρελθόν σας έχω δείξει πώς να φτιάξετε Σοκολατένιους κουραμπιέδες.
Τώρα βέβαια θα ρωτήσετε: γιατί κουραμπιέδες με σοκολάτα; Η απάντησή είναι απλή: Οι κουραμπιέδες είναι ούτως ή άλλως τα καλύτερα μπισκότα για την περίοδο των γιορτών, οπότε το να τα συνδυάσετε με σοκολάτα δημιουργεί ένα εξαιρετικό, λαχταριστό αποτέλεσμα.
Είναι τελευταία πολύ trendy στην Ελλάδα και θα παρατηρήσετε ότι χρησιμοποιώ μερικά έξτρα υλικά που συνήθως δεν χρησιμοποιώ στη βασική μου συνταγή για κουραμπιέδες.
Ελάτε λοιπόν και πάμε να σας δείξω πώς να ετοιμάσετε αυτούς τους κουραμπιέδες μπουκιές που λιώνουν στο στόμα.
Κατάλληλοι για χορτοφάγους.
 
ΥΛΙΚΑ:
• 400 γρ. / 14 oz / 3 φλ. Αλεύρι που φουσκώνει μόνο του, κοσκινισμένο
• 250 γρ. / 9 oz / 1,1 φλ. Βούτυρο καλής ποιότητας, όπως "Κερκύρας", μαλακό
• 130 γρ. / 4,6 oz / 0,6 φλ. Ζάχαρη
• 60 γρ. / 2,1 oz / περισσότερο από 1/2 φλ. ασπρισμένα αμύγδαλα, καβουρδισμένα, ψιλοκομμένα
• 50 γρ. / 1,75 oz σταγόνες-δάκρυα Σοκολάτας
• 8 γρ. / 0,3 oz / 2 κ.γ. Βανίλια σκόνη (βανιλίνη)
• Μία πρέζα αλάτι
• 1 σφηνάκι / 30 ml Μπράντυ
• Για την επικάλυψη: Περίπου 450 - 500 γρ. / 1 lb - 1 lb 2 oz Σοκολάτα κουβερτούρα
• 45 ml / 3 κ.σ. Βούτυρο
• Προαιρετικά για γαρνίρισμα: ΕΞΤΡΑ 25 γρ. / 1 oz ασπρισμένα Αμύγδαλα, καβουρδισμένα και ψιλοκομμένα και ζάχαρη άχνη

ΜΕΘΟΔΟΣ:
Α. Ετοιμάστε τη ζύμη για τους Κουραμπιέδες:
Σημείωση: Μιας και οι Κουραμπιέδες είναι πραγματικές λιχουδιές που δεν μπορείτε να σταματήσετε να τρώτε, αποφάσισα να τους κάνω σε μέγεθος μπουκιάς, για να αισθάνεστε λιγότερο ένοχοι όταν τρώτε περισσότερους από έναν.
1. Καβουρδίστε τα ασπρισμένα αμύγδαλα σε στρωμένο με λαδόκολλα ταψί, σε προθερμασμένο φούρνο στον αέρα @190 ℃/ 375 ℉ για μόλις 5' (καβουρδίστε και τα έξτρα αμύγδαλα για το γαρνίρισμα αν χρησιμοποιήσετε). Αφήστε στον πάγκο της κουζίνας να κρυώσουν εντελώς.
2. Στη συνέχεια ψιλοκόψτε τα με το μούλτι. Αφήστε τα στην άκρη (κρατήστε ξεχωριστά τα 25 γρ. για να γαρνίρετε τους κουραμπιέδες στο τέλος).
3. Τοποθετήστε το μαλακό βούτυρο στο κάδο ενός δυνατού, ηλεκτρικού μίξερ.
4. Προσθέστε τη ζάχαρη και αρχίστε να τα χτυπάτε, με δυνατή ταχύτητα, για 15'-20' ή μέχρι το μείγμα να ασπρίσει, να αφρατέψει και να έχει υφή σαντιγί.
5. Προσθέστε επίσης τη βανίλια.
6. Μετά από 20' περίπου, θα δείτε ότι η ζύμη έχει γίνει άσπρη και πολύ αφράτη!
7. Ρυθμίστε την ταχύτητα στο πολύ χαμηλό και προσθέστε, κουταλιά κουταλιά, το κοσκινισμένο αλεύρι. Εγώ πρόσθεσα σχεδόν 3 φλιτζάνια αφήνοντας περίπου 30 γρ. / 1 oz στην άκρη, για να τα προσθέσω εάν χρειαστεί.
8. Ρίξτε το κονιάκ και το αλάτι στη ζύμη, ανακατεύοντάς τα πριν συνεχίσετε με το υπόλοιπο αλεύρι.
9. Τέλος προσθέστε τις σταγόνες σοκολάτας και τα ψιλο��ομμένα αμύγδαλα. Χτυπήστε μόνο τόσο όσο χρειάζεται για να ενσωματωθούν.
10. Σταματήστε το μίξερ.
11. Ζυμώστε λίγο τη ζύμη με τα χέρια για να αναμειχθούν τα αμύγδαλα και οι σταγόνες σοκολάτας αλλά και να παραμείνει η ζύμη αφράτη.
12. Τώρα μπορείτε να ελέγξετε αν η ζύμη είναι έτοιμη για να πλάθετε σε μπισκότα. Θα πρέπει να είναι αρκετά σκληρή για να φτιάχνει σχήματα, αλλά όχι πολύ σκληρή που να θρύβεται και δεν πρέπει να κολλάει στα δάχτυλά σας!
13. Η ζύμη σας κολλάει σαν τη δική μου; Θ��λει λίγο ακόμα αλεύρι, οπότε πρόσθεσα αυτό που έχω κρατήσει στην άκρη.
14. Αν όμως η δική σας είναι πολύ σκληρή που θρύβεται, χρειάζεται λίγο βούτυρο παραπάνω.
15. Αφήστε τη ζύμη να σταθεί για 15'-20' για να ξεκουραστεί.
 
Β. Πλάστε τους κουραμπιέδες:
16. Στρώστε μια λαμαρίνα με λαδόκολλα.
17. Πάρτε μια χούφτα από τη ζύμη των κουραμπιέδων και πλάστε τη σαν μια μικρή μπάλα. Τοποθετήστε τη στο στρωμένο ταψί.
18. Επαναλάβετε τη διαδικασία για την υπόλοιπη ζύμη, φροντίζοντας όλα τα κουραμπιεδάκια να έχουν περίπου το ίδιο μέγεθος & σχήμα.
19. Έτοιμα να μπουν στο φούρνο για ένα υπέροχο ψήσιμο του Άη Βασίλη!
 
Γ. Οδηγίες ψησίματος:
20. Ψήστε τους κουραμπιέδες σε προθερμασμένο φούρνο στον αέρα @180 ℃/ 350 ℉ για περίπου 18'-20' (εξαρτάται από τον φούρνο). Ας ψήσουμε αυτά τα κουραμπιεδάκια!
21. Μετά από συνολικά 20' είναι έτοιμοι οι κουραμπιέδες (πρέπει να έχουν ανοιχτό μπεζ χρώμα, ΟΧΙ καφέ!).
22. Πω πω, οι μυρωδιές στην κουζίνα μου σε τρελαίνουν! ♬Holidays are coming ♬!!
23. Βάλτε τη λαμαρίνα στον πάγκο της κουζίνας και αφήστε τους κουραμπιέδες να κρυώσουν εντελώς!
24. ΣΗΜΑΝΤΙΚΗ ΣΥΜΒΟΥΛΗ: ΜΗΝ τους καλύψετε με σοκολάτα όσο είναι ακόμα ζεστοί. Η υγρασία θα παγιδευτεί μέσα τους και θα πανιάσουν!
 
Δ. Ετοιμάστε την επικάλυψη σοκολάτας και τελειώστε τους Κουραμπιέδες:
25. Όταν κρυώσουν καλά οι κουραμπιέδες, βάλτε τα κομμάτια σοκολάτας σε ένα κατσαρόλι σε χαμηλή φωτιά πάνω από μπεν μαρί, δηλαδή σε ένα μεγαλύτερο κατσαρόλι γεμάτο με νερό.
26. Στη συνέχεια προσθέστε το βούτυρο στο κατσαρόλι με τη σοκολάτα.
27. Ανακατεύετε τακτικά τη σάλτσα σοκολάτας μέχρι να γίνει σιγά σιγά ένα παχύρρευστο υγρό και να είναι γυαλιστερή.
28. Σβήστε τη φωτιά αλλά αφήστε το κατσαρόλι μέσα στο ζεστό νερό!
29. Στρώστε μια λαμαρίνα με λαδόκολλα και τοποθετήστε από πάνω μια (καθαρή) σχάρα φούρνου.
30. Τώρα πάρτε έναν έναν τους κουραμπιέδες και με τη βοήθεια ενός κουταλιού και ενός πιρουνιού, βουτήξτε τους για λίγο στη σάλτσα σοκολάτας, αναποδογυρίζοντάς τους.
31. Το πιρούνι είναι για να σας βοηθήσει να στραγγίσετε λίγη από τη σάλτσα σοκολάτας. Βάλτε τον επικαλυμμένο κουραμπιέ στη σχάρα, πάνω από το στρωμένο ταψί.
32. Όσο η επικάλυψη σοκολάτας στους κουραμπιέδες είναι ακόμα κάπως ρευστή, πασπαλίστε με λίγα ψιλοκομμένα αμύγδαλα πάνω από κάθε κουραμπιέ, για να κολλήσουν καλά στην επιφάνειά του.
33. Επαναλάβετε για όλους τους Κουραμπιέδες.
34. Για να τελειώσετε, μπορείτε να χρησιμοποιήσετε 2 διαφορετικές τεχνικές για να στερεοποιήσετε την επικάλυψη σοκολάτας και να σερβίρετε τους Κουραμπιέδες:
            α. Είτε αφήστε τους κουραμπιέδες να σταθούν στη σχάρα για περίπου 5 ώρες για να στεγνώσουν καλά.
            β. Ή βάλτε τους στην κατάψυξη για 15' ώστε να παγώσει η σοκολάτα.
 
Ε. Στολίστε τους Κουραμπιέδες:
35. Με τη βοήθεια μιας σπάτουλας αφαιρέστε τους κουραμπιέδες από τη σχάρα και διακοσμήστε φέρνοντας δίπλα τους μια ωραία γιορτινή πιατέλα.
36. Βάλτε τους Κουραμπιέδες στην πιατέλα, τον ένα πάνω στον άλλο, σχηματίζοντας σιγά σιγά ένα Χριστουγεννιάτικο δέντρο (πυραμίδα).
37. Προαιρετικά, μπορείτε να πασπαλίσετε λίγη ζάχαρη άχνη πάνω από το «Δέντρο» για χιονισμένο αποτέλεσμα. Εδώ είναι η πιατέλα μου. Χαρείτε με τα μάτια σας αυτά τα λαχταριστά Κουραμπιεδάκια!!

Ζ. Προτάσεις σερβιρίσματος:
Μπορείτε να σκεφτείτε καλύτερο Χριστουγεννιάτικο πρωινό ή απογευματινό κέρασμα με τσάι;

Τα βλέπετε μαζί με τα άλλα νόστιμα παραδοσιακά Ελληνικά χριστουγεννιάτικα κεράσματα: Μελομακάρονα, Χασλαμάς, μερικοί απλοί κουραμπιέδες, χριστουγεννιάτικα Μπισκότα και το λικέρ Ρόδι που έφτιαξα!

Είναι τόσο καλά, γεμισμένα με γεύσεις και αρώματα. Τραγανά απέξω, εύθρυπτα μέσα με καλό βούτυρο, αμύγδαλα και σταγόνες σοκολάτας ΚΑΙ το πρόσθετο πλεονέκτημα της επικάλυψης σοκολάτας, που τα κάνει πρακτικά ακαταμάχητα!!

Η. Πληροφορίες φύλαξης:
Οι κουραμπιέδες διατηρούνται έως και ένα μήνα σε αεροστεγές δοχείο για μπισκότα! Αλλά ποιος μπορεί να μείνει μακριά τους τόσο καιρό 😋😂👌🤶!?

Θ. Κουραμπιέδες Ιστορία και πληροφορίες:
Οι Κουραμπιέδες είναι γιορτινά μπισκότα βουτύρου – ένα από τα πιο δημοφιλή Ελληνικά χριστουγεννιάτικα γλυκίσματα μαζί με τα μελομακάρονα!
Οι κουραμπιέδες ήρθαν στην Ελλάδα, μαζί με την άφιξη των προσφύγων απ’ τη Μ. Ασία, και πιο συγκεκριμένα από την περιοχή της Σμύρνης.
Σύντομα αγαπήθηκαν, και έγιναν έθιμο των γιορτών, αλλά σε ορισμένα μέρη της Ελλάδας τα βλέπετε και σε γάμους και βαπτίσεις, το Πάσχα και άλλες γιορτές λόγω του όμορφου άσπρου χρώματος τους.
Ο Κουραμπιές έλκει την καταγωγή του από την Περσία, όπου πρωτοεμφανίστηκε τον 7ο αιώνα, όταν η ζάχαρη διαδόθηκε στην περιοχή. Την πατρότητα του κουραμπιέ διεκδικεί και ο Λίβανος. Η ρίζα της λέξης Κουραμπιές προέρχεται από το Qurabiya στην αζέρικη γλώσσα που σημαίνει σκληρό μπισκοτάκι.
Στην καθομιλουμένη «κουραμπιέ» αποκαλούμε τον νωθρό, τον μαλθακό ή τον ανόητο άνθρωπο. Στη στρατιωτική αργκό, «κουραμπιές» είναι ο απόλεμος στρατιώτης, αυτό που δεν μετέχει σε επιχειρήσεις, αλλά είναι αποσπασμένος σε γραφείο.
Οι κουραμπιέδες είναι υπέροχα γλυκοί, τραγανοί και εύθρυπτοι, με άρωμα καλού βουτύρου και καβουρδισμένου αμύγδαλου. Και η ζάχαρη άχνη από πάνω γεμίζει το στόμα και τα ρούχα σου lol!

Today, January 7th, is Christmas Day for Layla, whose family is Greek Orthodox. It's a special, festive time for the Peris family.
But in the days leading up to the holiday, Layla has been busy in her happy place..... the kitchen!

She and her yaya (grandmother) have been baking traditional Greek cookies for family and friends. Some of these recipes are quite ancient, and were originally made long before Christmas was ever a holiday.

The white cookies dusted with powdered sugar are kourabiedes, almond and butter cookies. The cookies on the right that are sprinkled with nuts are melomakarona, spiced honey cookies. The rectangular biscotti at the top are paximadia, spiced orange and olive oil cookies. And on the left, moustokouloura are the donut-shaped cookies flavored with grape juice and spices.

What kind of Christmas cookies do Trystan and Carolina like?
Oh, Nonny! You're making me hungry, and you're asking a great question because I'm bringing in my own heritage here.
Carolina is of Puerto Rican descent, and Mantecaditos are her favorite cookie. They're essentially delicious butter cookies, and many top it off with a thumbprint to fill with guava paste. I see this as a family tradition - gathering a few days before Christmas to make several batches. Trystan will join in this year, and with him and Luke present, half will not make it to Christmas day (and they better be wearing their yoga pants! lol
Since there is no Drakovia, I will assume their cookies will be similar to those of Eastern European nations. I'm part Greek, and amazed to find that most of my Eastern European friends have deserts/cookies that are very similar to those I grew up with, so I'm improvising here and Trystan's favorites will be my favorites as well! lol Melomakarona and Kourambiethes. Melomakarona are honey cookies topped with walnuts that are just the most delicious things ever, and kourambiethes are like almond biscuits doused in powdered sugar... OMG, I'm running off to the Greek bakery after this... I don't think he makes them - like me - he has found a perfect little bakery to suit his needs, but in the future they might try... try being the operative word! lol

Ren by her friends, mother, & others
Age- 14 (immortal)
Location- Little Athens, New Olympus
Personality- She's a bright cheerful young girl with an unwavering positive spirit & vibrant energy.
She has the standard abilities of a goddess- except shapeshifting. As the goddess of offerings & the laurel wreath her powers/abilities include limited chlorokinesis (as it pertains to the olive and laurel wreath) and is able to manipulate gold (though not Imperial Gold).
Ren is the only child of her mother Argía (goddess of holidays). They live in a large brownstone in the Little Athens neighborhood of New Olympus. They also have a cabin in the state of Meteora- complete with a chimney & fireplace. The interior design of the brownstone is very posh and modern- with all the doors being made out of Imperial Gold. Lots of olive plants & laurel wreaths serve as decorations. They also have a rooftop garden.
Some of her favorite drinks include eggnog milkshakes, cranberry fruit punch, peppermint tea, spiced apple cider, and sparkling water. Her usuals from The Roasted Bean is a large vanilla gingerbread latte & a medium cranberry apple splash.
Ren loves her mother's cooking- especially breakfast! Some of her favorite things to eat for breakfast include maple cinnamon oatmeal, scrambled eggs & roasted potato casserole (garnished with olives), french toast (topped with whipped cream & cranberry syrup), & toasted slices of banana bread topped with butter and fig preserves.
Ren is fluent in Latin and her Old Greek isn't too shabby!
She attends an esteemed school in downtown New Olympus, which she's currently on break from for the summer. Her best friends are Eleos (Ellie) (goddess of mercy, pity, & compassion) and Heimarmene (Marnie) (goddess of shared fate). Ren's aware of the other godly students like Circe (goddess of sorcery), Theodon (god of reality, uncertainty, & fate), Koalemos (god of foolishness), Eirene (goddess of peace), Morá (goddess of babies & children), Cedalion (demi-god of smithing ore), Eileithyia (goddess of childbirth), Telesphorus (Rusty) (god of rehabilitation), Eunomia (goddess of law & legislation), and Dysnomia (goddess of anarchy & lawlessness) & is friendly with all of them, especially Philautia (goddess of self love).
At school, she's on the cheerleading team and is also a member of the drama club. Her favorite subject is literature.
One of her favorite gifts Ren has ever recieved is a pair of laurel wreath shaped earrings which Ellie made herself.
She thinks she's the best & fastest gift wrapper in the entire pantheon!
A go-to snack she loves eating are cucumber flavored potato chips. She also likes caramel apples, candy apples, & dolmadakia.
Ren plays an active role in coming into her godly responsibilities. Because she's the goddess of offerings (with one of her sacred symbols being the laurel wreath), she generally contributes to the festivals of Pyanopsia and Thargelia. There's even a song based on her which is sung during the festivals: "Eiresione for us brings figs and bread of the richest, brings us honey in pots and oil to rub off from the body, strong wine too in a beaker, that one may go to bed mellow."
Her and her mother go all out during the holiday season! Ren's favorite holidays include Olympius' Independence Day (which always include a beachside barbeque & a fireworks show), the Summer Solstice, Thanksgiving, & Christmas (loves, loves, loves caroling!)
She loves going to church and is even a part of the choir, with her mother designing the robes.
Her go-to product to use is the Olive Visibly's oil control toner. It was a godsend when she was going through acne!
Another favorite pasttime of Ren's is baking. In the pantheon, she's well known for her delicious christopsomo (Greek Christmas bread) & kourabiedes (Greek Christmas cookies). She even sold decorative tins filled with cookies for her school's bake sale.
In the pantheon (aside from her mother) she also looks up to Demeter (goddess of the harvest & agriculture), Apollo (god of the sun, music, poetry, healing, medicine, archery, plague, light, & knowledge), Dionysus (god of wine), and Athena (goddess of wisdom). Ren's godmother (and close family friend) is Panigýri (goddess of festivals) & mother to one of The Graces, Thalia.
She secretly wants to go to The Underworld to experience snow for the first time.
Ren still kind of has a crush on Ellie's uncle Adranos (god of fire).
Some of her favorite desserts include gingerbread cupcakes (with vanilla bean frosting), pecan pie, eggnog cheesecake, and mint chocolate chip ice cream.
Her favorite meals include rib roast (with a cherry glaze), garlic mashed potatoes, parmesan brussel sprouts salad (added with roasted pine nuts and pomegranate seeds then drizzled in cranberry vinegar dressing), & tapenade (served with white rice).
In her free time, Ren enjoys spending time with her mom, friends, & godmother. She's gotten into nail art & loves painting designs on her nails. She also likes knitting, sewing, doing embroidery, drawing, reading, shopping, caroling, listening to music, and gymnastics. She and her mom also participates in the annual toy & food drives.

Kourabiedes for Cookie Season
Years ago, before even floppy disks, I would bake zillions of cookies for the Hanukkah-Christmas season and give baskets of different kinds to the editors of the various local newspapers and magazines that I wrote for.
There were always: butter cookies, peanut butter cookies, chocolate chippers, oatmeal raisin,  gingersnaps and Chinese cookies.
Occasionally: Dutch Butter cookies, St. Cupcake Brownie cookies, Orange Marmalade cookies and Fruit Roll cookies.
My house smelled as fabulous as any bakery. Various and sundry repair people, delivery people and dog walkers would occasionally stop by and ask if there were any “seconds” — you know, not pretty enough for the gift baskets — that they could sample.
I always gave away (still do!) a lot of food.
One year I added kourabiedes (Greek almond-butter cookies) to the assortment. They got rave reviews and I always included them after that.
Of course time passed and, thanks to technology, I no longer deliver hard or floppy disks to editors. Everything is sent over the internet. To places far and wide.
So, no more editor-and-media staff cookie baskets.
Less work (baking cookies, that is), but also less personal contact with the people I write for.
I still give away a few cookie baskets but I don’t bake the variety of cookies I once did. Hadn’t made kourabiedes for a year or three until a few days ago.
So glad I did! They are as delicious as I remember. A few simple ingredients. Not fancy or fussy. I like to think of them as “the coffeecake of cookies” — the kind you reach for with afternoon tea or coffee. Lightly sweet and buttery but not overly rich. Freezable. Perfect for giving away. Or not.
Kourabiedes
1 cup butter
1 egg yolk
3 tablespoons confectioners’ sugar
1/4 teaspoon salt
2 cups all-purpose flour
1/3 cup ground almonds
confectioner’s sugar for coating
ground cloves, optional
Beat the butter with an electric mixer set on medium speed for 2-3 minutes, or until it is light and fluffy.  Add the egg yolk, confectioner’s sugar and salt and beat until ingredients are well blended. Add the flour and almonds and mix for a minute or two until the ingredients are well blended and a uniform dough has formed. Wrap the dough in plastic wrap and refrigerate for at least one hour.  Preheat the oven to 325 degrees.  Take off pieces of dough and shape them into balls about 1-inch in diameter.  Place the balls on ungreased cookie sheets.  Bake for about 25 minutes or until they are lightly tanned.  Let cool.  Roll the cookies in confectioner’s sugar to coat the entire surface.  Place on a serving tray and sprinkle with ground cloves if desired. 
 Makes 4 dozen

These butter biscuits are made with only 6 basic ingredients that you usually have at home.
Their dough is very easy to prepare, they just need some love and extra time to shape their small hearts, where they keep a little sweet secret.   
Make them for guaranteed fun and a beautiful surprise for your beloved Mom for Mothers' day or any other special occasion (also Christmas).  
Suitable for lacto-ovo vegetarians.
           
INGREDIENTS:
Ingredients for making the biscuits:
·      125 gr. / 4.4 oz Butter, Good quality, softened (no substitute!!)
·      1/4 cup / 55 gr. / 2 oz Sugar
·      190 gr. / 6.7 oz / 1.5 cup All-purpose Flour, sifted
·      1 small Egg at room temp.
·      1 tsp. Vanilla extract
·      ¼ tsp. Baking Powder

Ingredients for rolling and filling the biscuits:
·      About 75 gr. / 2.6 oz Strawberry jam (without fruit pieces)
·      Some extra flour for dusting the surfaces
·      A thin rolling pin
·      2 round cookie cutters: 4.7 cm / 1.8 in. and 7 cm / 2.8 in. diameter each.
·      A heart cookie cutter

METHOD:
A.    Prepare the dough ahead of time:         
1.     Place the soft butter into the mixer's bowl. Start beating it, adding also the sugar.
2.     Beat them together in high speed for 5' or until they become white and fluffy.
3.     Next, lower the speed and add the egg in the dough. Keep beating.
4.     Pour in the vanilla extract.
5.     Start gradually adding the sifted flour spoon by spoon into the dough.
6.     As last, add the baking powder in the dough. When the flour and baking powder are blended, stop the mixer.
7.     Knead the dough a bit with your hands as well. Dough shouldn't stick to your fingers.
8.     Cover the dough in plastic wrap, and place it in the fridge to rest and firm for 1 h (don't skip this step)!
 
B.    Shape and fill the heart biscuits:
9.     After 1h, it is time to roll out the biscuits!
10.  Remove the wrap from the dough. The dough is soft enough to roll but doesn’t stick.
11.  Dust with flour a clean flat surface and your thin rolling pin.
12.  Divide the dough in half, so you can work easier with it.
13.  Roll out one piece using the rolling pin and a bit flour.
14.  Then press the large round cookie cutter on top of the rolled dough to create 8 round shapes. These large biscuits should be about 0.35 cm / 0.14 in. thick.
15.  On top of the 4 round shapes, press the heart cookie cutter.
16.  Place the 4 whole round biscuits on a large oven tray lined with parchment paper.
17.  Spread a thin layer of strawberry jam on top of each biscuit (equal amount).
18.  Remove the cut hearts from the middle of the other 4 biscuits.
19.  Place the now hollow round biscuits gently on top of the ones filled with jam osculating them as much as possible.
20.  Gather leftover dough and mix it with the reserved other half.
21.  Now you could repeat procedure with the remaining dough. But I would like to show you how to make another type of heart biscuits.
22.  Dust again with flour the working surface and your thin rolling pin. Roll out the large piece of dough with the rolling pin and a bit flour. This time the dough should be thicker, about 0.7 cm / 0.28 in. thick (twice the thickness of the larger biscuits, as they were double layered!).
23.  Important tip: Make all biscuits about the same thickness (to be baked equally).
24.  With the small round cookie cutter of 4.7 cm / 1.8 in. diameter cut as many round biscuits as possible, using all of the dough.
25.  Place all the small round biscuits on the same large oven tray.
26.  Now here is the small trick: With the round wooden tip of a spatula or a knife, make two dents touching at the bottom, in the middle of each biscuit i.e. creating the shape of a heart.
27.  Fill each heart with half a teaspoon of jam.
28.  Finally, filled heart biscuits are now ready to be baked in the oven.
 
C.     Baking instructions:
29.  Place baking tray with biscuits in a preheated oven, FAN @ 180℃ / 350 ℉, and bake for 17'-18' or until they have turned light brown (depends on the oven).
30.  To make sure they are baked, turn one biscuit around and see if it is light brown also underneath! If ready, remove them from the oven.
31.  Place them on the kitchen bench and let them cool down completely (!!) before you place them in a cookie jar.

Milk & Cookies
Summary: Every Christmas Eve, your family would leave out milk and cookies for Santa. This time it’s special because you’re trying to keep the tradition alive with your husband and son.
Pairings: Dad!Bucky Barnes x reader

Your husband discarded his sweats and his shirt, leaving him on display with only his underwear. He finally put your son to bed & it was time to head into bed as tomorrow was Christmas. Your eyes followed his figure, slightly sucking in your bottom lip as you were practically gawking at him. He looked like an actual Greek God.
“See something you like?” He playfully mocked, cocking an eyebrow as he slid into your shared bed. He loved teasing you at any moment.
“Mmm... no.” You giggled softly as he wrapped his arms around you and kissed that special spot on your neck.
“You’re wearing way too many clothes...” He huffed softly, tugging at your pajama pants. “Take these off—“ he groaned, but you pushed his hand away slightly.
“No funny business tonight. Tomorrow’s Christmas, I can’t be sore because of  you” Bucky chuckled softly at your words, pressing a kiss against your cheek. He snuggled closer, whispering in your ear.
“Oh, come on— I can be gentle” he teased. “Remember that time in the kitchen—“
The word kitchen suddenly sending off lights in your head as you remembered you forgot one last thing to do before tomorrow morning.
“Oh my gosh, baby! We forgot to take out the milk and cookies for Santa!” You gasped, pushing the blanket off your body and sitting up in bed. Bucky stared at you with wide eyes from your panic state.
“Don’t even think about.” He blurted suddenly. You looked over at him with pleading eyes. He tilted his head to the side, studying your face and sighed. He knew exactly what you wanted. And he really was not going to win this battle. He had just put your son to bed and that took him god knows how long. But, that didn’t matter anymore.
“We have to wake him up...” you mumbled, you inched closer to him and Bucky threw his head back in disbelief. 
“Honey, I just put him to bed-“ your hands traced his metal arm, trying your best to convince him. He did love the way your soft hands felt against his. Bucky could crumble any second.
“I know but it’s a Christmas tradition.”
He couldn’t say no to you. Not to his best girl. Plus, it’s Christian Eve. Who says no on Christmas Eve?
“Fine. Fine.” You squealed like your own son, jumping out of bed and putting a sweater over your body. Bucky watched you and shook his head softly. The things he does for you. He followed and put back his sweats and shirt on. The two of you making your way to your son’s bedroom.

Bucky was holding your small son in his arms as you went to the refrigerator to take out the milk for Santa. He clutched the small teddy bear in his arm. Your son watched in awe as you moved around in the kitchen gathering the items. 
"Which cookies do you think Santa likes the best?" you asked, smiling as you kissed your son's forehead and then plated the various types of cookies. There were chocolate chips, peanut butter, and oatmeal raisin. You then poured the milk into a medium sized cup.
"Chocolate chip!!!" Bucky laughed softly at his son’s excitement, playfully messing up his son's hair.
Everything felt right in this moment for Bucky. The way the Christmas tree’s lights brought in a beautiful glare to your figure to the presents under the tree that he knew his son and you would love tomorrow. He couldn’t be more grateful. 
“Oh? Chocolate, huh? I think those are Santa’s favorites as well..” You looked over your shoulder and winked to your husband. Bucky slightly smirked as he held his son.
He knew he would be the one to wake up early and chug down the milk & cookies before his little one would wake up. Each year you and Bucky would take turns.
But sometimes, Bucky just really wanted all the cookies to himself so he gladly volunteered each year...
“So I’m guessing you are excited for Santa, buddy?” Bucky grinned at his small son. You cleaned up the area and walked over to see the most important people in your life having a conversation.
Your son nodded slightly and then yawned. You pouted knowing that it was your fault for waking him up again so suddenly. But, you knew you would never hear the end of it if your parents found out you forgot the Christmas tradition. You kissed your child’s temple and rubbed his back. Bucky got the memo and started to wrap things up.
“Santa should be coming very soon you know... he only comes when we are sleeping. We should get back to bed—“ Bucky finished, leaning over to kiss your cheek as you turned off the kitchen lights and made your way back upstairs.
It didn’t take long for your son to fall asleep. You read him a Christmas story and in 10 minutes he was sound asleep, dreaming of Santa’s arrival.
“Okay let’s try this again” Bucky laughed, already discarding his clothes like last time as he closed your bedroom door. You giggled softly, watching him. You headed over to the bed but Bucky’s expression changed. His eyes narrowed at you which caused you to raise an eyebrow.
“Hey — didn’t I say to take those off?” he motioned to your Christmas pajamas and you groaned. “Babe... but—“
“No, none of that. I said yes to you for the cookies now daddy wants his dessert.” His tone quickly changing into something darker as his blue orbs sucked you in. God, he always had that effect on you.
“Dessert?” You bit your bottom lip, your face already getting hot. You played dumb but you knew exactly what he meant.
“Mhm...” he looked at you up and down, placing his hands on his hips.
You shyly stripped in front of him, revealing a Christmas themed piece.
He licked his lips, eyeing you. “When did you get that?” He questioned, as you settled onto the bed and he hovered over you in an instant.
“It was supposed to be a surprise...” you spoke lowly and he smirked, loving the new lingerie piece on you.
“Merry Christmas Eve to me—!” He said playfully, pulling the covers over the two of you and getting to work.
The Holidays is definitely Bucky’s favorite.

State of the Me
We're just gonna cut this...
I sort of ran out of meds. I know, look. Sometimes my executive dysfunction isn't just dysfunction, it's actually just an empty space with [program code goes here] in it. The worse I feel, the harder it is to get it back. And once I ran out of the nerve meds, I was in actual agony for a while, so.
But I fixed it. After I ran out of one of the heart meds. I didn't know what to do! CVS kept telling me I have copays on my meds (which I don't) but I was switched to a new insurance as of October...but they never sent me a card...I don't know who to call...I tried looking in my account with the state and it said I didn't have an account so. I just kind of stalled there for a bit.
Anyway, CVS somehow had two insurances listed and one was not mine. I made them take it off and my copays disappeared because whether I have new insurance or not, CVS uses my account number from the state, so that never changed. Nobody wants to go into town today so I'll get them tomorrow.
I've been cooking more! Well, I still make my mom sous chef for me. But I've been doing actual cookery lately. I really, really, REALLY miss cooking. Remember when I used to throw off big cakes for birthdays or send cookies out for Christmas or host dinner parties? They honestly seem like a dream now. I get so overwhelmed. It's stupid.
My brain is not a well place right now. I can hardscrabble for some kind of balance sometimes but then I trip and I fall into bad thoughts and feelings. It's deep and dark sometimes. Idk what to do about that, either. I'm not looking to harm myself so I guess I can just drown here for a while.
Still can't sleep. 2 hours max at a time, if that. Last night, I didn't get to sleep until 6 am this morning.
This week, I made wilted spinach salad with goat cheese, hazelnuts, and dried cherries on Sunday and blueberry chicken salad (the key to chicken salad is only use Greek yogurt, NO MAYONNAISE, Christ) on Monday. I accidentally napped until 7 pm last night so mom made the stew. I don't use a recipe for stew but I had left a list of ingredients for it and she used that. Without finding a recipe even! I was so proud.
Tonight is cashew chicken. No, not that cashew chicken. This one has roasted chicken with a cashew butter "sauce" that's way too thick to be a sauce, then you toast it under a broiler. I think I first made it in culinary school. Tomorrow is gonna be pork butadon. It was supposed to be pork belly but Sam's Club betrayed me so I'm subbing pork loin.
I've been watching The Witcher on repeat. I'm getting bitched at over it. Look, when my brain has no brain left to give, I do nothing but comfort and right now that's a choice between The Witcher or Forensic Files and Witcher had such lovely angst this last season so fuck off. 😊
I bought leg warmers. I'm partial to capri leggings but there is snow so what do? Leg warmers. I only got the one pair in black because I wasn't sure I'd like the texture of the knit but now I need like 10 pairs in all the colors.
I've been writing. Not really writing. Like typing out tiny pieces of things that could be fanfic if I ever finished them. I have started 10 different pieces. None of them are even close to being finished, most of them are fragmented. Was it always this hard? It's been SO LONG, jfc.
Writing my own stuff? 😂😂😂 No. I don't have access to that in my brain. Can't feel it at all. No Dizzy and zombies, no Faith and monsters, no Vianne and demons. Sads. But I would like to finish at least a little short fanfic maybe???
Let's see, good things, good things. I'm going to visit friends down in the Valley at the end of the month. That will be nice. I miss people.

Kourabiethes/Kourabiedes are shortbread butter biscuits with almonds, coated in icing sugar. Usually made in December at Christmas time.

Monday Musings
I had reservations about pairing brie with butternut squash to fill butter-brushed phyllo dough pockets I made.  But I am glad I tried it!  The sweetness of the squash compliments well, almost like fan-favorite jam and brie. 
The whole wheat buttermilk pancakes I made might just be the best pancakes I have made thusfar in my kitchen.  And, for some reason, they taste equally as good reheated.
Update: The whole wheat flour substitute for the chocolate chip cookies turned out fine after baking!
I might understand the Chris Evans thing a little better after watching Captain America: Civil War.  That escape from the elevator shaft...hot damn. 
Related: I know, I know, the insane scene wherein Cap tries to keep the helicopter from leaving is wild and hot but it’s too superhero-esque and leaves me worrying for the hero’s fastidiousness instead of drooling over the man.    
Continuing: Oooof, everyone is right and everyone is wrong in that movie.  And that’s what makes it so good.  Ah, Greek tragedy dressed in spandex and metal, flaws thrown in sharp relief, conflicts of character and within character abound, eternal questions about freedom and governance. 
Still related: I’ve only just met this Peter Parker, and I already love him. #queens
My Spanish lavender really is growing towards the sun.  Not that I thought this was a myth of 7th grade science class, but I am amazed at how quickly the plant has stretched more horizontally towards the window!  I guess I never had a plant long or healthy enough to witness it.
I am becoming weirdly obsessed with crossword puzzles.  It’s a strange way for my mind to focus on one thing and feel motivation I am currently lacking.
Why is my body so creaky as of late?  I have been working out every morning, stretching afterwards, and even doing my favorite yoga poses afterward.  
My ankles are annoying me.  Why do they decide to feel strange pain whenever I am in a good routine?  
Today’s raindrops turned into fat flakes of wet snow for a while.  It was nice to be inside. 
I always think it is strange for a musical group or artist to release a Christmas album.  But then I remember Relient K’s Deck the Halls, Bruise Your Hand, and I instantly retract my statement because it is still boss many years later.  Actually, their version of “12 Days of Christmas” is the only one I can enjoy.
Related: Spotify informed me that this original album was absorbed into another entertainingly-titled Let it Snow Baby...Let it Reindeer.  
Still related: It was a while before I learned these guys were considered Christian rock. (Or Christian pop-punk?)  It still cracks me up.
I fucking love flashbacks.  It doesn’t matter the show or the movie, it’s a sucker-punch to my gut.
Not knowing yet whether we return in-person or work remotely tomorrow is equally freeing and frustrating.
