Tumblr came in absolutely clutch with recipe recs for me lately, so in the spirit of paying it forward, I return offering a recipe for:
The Best Sweet Potato Casserole You Will Ever Have in Your Life

courtesy of — if I'm tracing my recipe genealogy correctly — either my great-grandmother's church friend, or some kind of benevolent patron god of brown sugar and root vegetables. With a couple of eggs, it achieves almost a soufflé texture, and it's deliciously sweet but not in the overkill way that keeps me away from some other sweet casseroles.
Are you looking to upstage everyone who's bringing a pie to the family gathering? Do you have a sweet tooth, but not enough of a sweet tooth for those other sweet potato recipes that douse them in an equal mass of heavy syrup or marshmallows? Then this is the casserole for you.
Vegetarian, and easily made gluten-free with substitutions.
Ingredients:

3 cups pre-cooked sweet potatoes, slightly mashed
1/4 cup butter
2 eggs, room temperature
1 tsp vanilla extract
3/4 cup brown sugar
Streusel topping:

3/4 cup brown sugar
1/3 cup butter
1/3 cup flour (any kind will do)
1 cup of a crunchy, salty snack*
*Pecans are listed on the original recipe, but if you're allergic to nuts, try crushed pretzels (small but not totally pulverized pieces). If you can't have wheat either (hi friend!), I used crushed rice chex with a half-teaspoon of kosher salt sprinkled on this year, and it was still S-tier. Truly, I don't think you could go wrong with any plain rice cereal plus extra salt to taste. We love a flexible recipe!
Equipment:

9x9 or roughly equivalent baking dish (if dish is bigger, just bake for a slightly shorter time)
At least 1 mixing bowl
Spatula
Fork (for prepping streusel)
Instructions:

If you haven't done so already, cook the sweet potatoes until they reach a texture suitable for mashing. This can be done in the microwave in about 10 minutes, give or take depending on settings, but be sure to poke some holes in the skin with a fork before microwaving, so the steam can escape.
Once cooked, remove skins then mash them. Let them return a little closer to room temperature before stirring in the eggs (so the eggs don't immediately cook). Add the butter (1/4 cup, melted), brown sugar (3/4 cup), and vanilla, and stir thoroughly before spreading out evenly in baking dish.
For the streusel, mix brown sugar (3/4 cup) and flour. Cut the butter (1/3 cup) into this mixture; this works best if the butter is slightly cooler than room temperature, but not straight out of the fridge. Use the tines of a fork and the side of a bowl to break the butter apart and mix, until a crumbly texture is reached. Mix in topping of choice, then sprinkle on top of potatoes.
Bake at 300° Fareinheit for 30-45 minutes, uncovered. The streusel should be lightly browned. Best served warm.

Cinnamon and its friends (allspice, nutmeg, etc) can be delicious additions to the potatoes and/or the streusel. This dish is sweet enough to function as a dessert, but it's also great as a side to something savory. In terms of prep, the sweet potatoes can be pre-cooked and mashed ahead of time; simply refrigerate until ready.

Gluten Free Trailmix Recipe
So as a young woman who is gluten free due to a gluten intolerance, I was thinking of doing something like this. Posting recipes I enjoy and can make 100% gluten free. Now that I've found a mix I truly love, I figure I'll share it with you all, in hopes it will help somewhere else. Please forgive the quality of photos. I'm not exactly good at this. Hopefully I'll get better as I post more.
Now, you need chex cereal. I use cinnamon. You'll also need Annie's gluten free bunny grams chocolate and vanilla, glutino pretzels, glutino fudge covered pretzels, a dried fruit mix of raisins, golden raisins and cranberries, Goodie Girls chocolate stripe cookies, Kind cinnamon oat clusters, and baked apple chips.
*1/2 bag of Glutino pretzels
*1 bag of Glutino fudge covered pretzels
**1 bag of Annie's gluten free bunny grams, chocolate and vanilla.
***1 bag of dried fruit mix raisins golden raisins, and cranberries
*1 bag of Kind cinnamon oat clusters
*1 box of Goodie Girl chocolate stripe cookies
***6 mini bags of apple chips (I can't find them in larger bags, brand is Great Value)
If you mix this all correctly, you should have about two and a half big ziplock bags of trail mix. Though you may need two or more large bowls, depending on how large the bowls are. I recommend mixing as you go to see where you are balance wise. This should hopefully help avoid having tons of fruit in one bag and barely any in another, or some other ingredient. If you have to split over multiple bowls to mix successfully, try to be equal between the bowls, so for example, if you use 1/2 a bag of Gutino pretzels, then put 1/2 of that into each bowl, so about 1/4 should go into each bowl with half the bag left to be used later.
Now that I've given you the recipe to my specific mix, what I'm about to say is really important. Trail mix is a very versatile thing to make. Within reason (for example, I would not recommend putting Goodie Girl's thin mint cookies in there. It was alright in there, but nothing great. In fact, it was edible and that was about it. Though that's obviously my opinion.) But my point is feel free to experiment. The oats are in there for protien, but protien can also be gotten from nuts. So if you're not an oat fan, but like nuts, you can put nuts in your mix. The fudge covered Glutino pretzels are another example, as there's also a yogurt covered version. And Annie's gluten free bunny grams has a cinnamon version. Chex has so many different options that your combinations are endless. There's chocolate, vanilla, cinnamon apple, and probably more.
This is the most important part, as some people may need to know this due to allergies. Hopefully you read this far.

Hey Sam,
Not to be that person, but if you're doing gluten free baking/cooking and are worried about cross-contamination/the risk of allergies, you'll need to have specific utensils/bakeware/cookware that haven't had gluten products in them.
Found out the hard way with cake pans and my bowls and stuff when my nephew was diagnosed as not being able to have any gluten and most nuts and I made him a gf birthday cake but hadn't used brand spanking new bakeware.
No worries, I know how important it can be in terms of severe allergies. This batch isn't going to our young GF friend, deliberately, because I wasn't careful about cross-contamination; this was just a test to make sure they baked okay, since I was replacing dairy milk with coconut and I've never done GF baking before.
For example, you have to grease bowls, pans, and hands pretty thoroughly for this dough and I deliberately didn't use spray oil because it had sunflower oil in it, but then without thinking I used Crisco which has soy, something else he can't have. So the one major note for the recipe was COCONUT OIL FOR GREASING in big letters at the top. I feel like this poor kid probably lives on Rice Chex and coconut milk.
He is, apparently, not so sensitive that trace contamination is a concern except with peanuts, which I'm also allergic to so don't keep in the house. But if I'm going to bake for him on the reg I'll designate a special bowl, stirring spoon, and boiling pan for his bagels, just in case. Fortunately the recipe is relatively light on required cookware, unlike some of the bread I make.

Raspberry Sorbet! Not all desserts have to be chocolate, they don’t even have to be baked! This sorbet is fruity, frozen, and best of all, it’s totally vegan! All you need is some raspberries, lemon juice, and sugar. This recipe may be best for bigger kids or kids with the help of a CG as it does require a blender or food processor! Toadstool Salad! This salad seems especially well suited to any cottagecore kiddos out there! It also has very few ingredients so if you’re a baby on a budget this may be a great option! All you need is some lettuce, cucumber, tomatoes, mayo, and a few hard boiled eggs. (Skill level: ⭐️⭐️) 🥗🌾🥜🍭🔪

Gluten Free, Vegetarian, Quick Fixes
If you're gluten free and vegetarian like myself, and also struggle with low spoons, its hard to get food that's good with enough protein and vitamins etc. Here are some good things I've learned: Make a trail mix. Mine usually contains: - chex (cinnamon kind) - gf pretzels - nuts, good ones with protein and good fat are almonds and cashews but those are a bit more expensive. Mixed nut containers or simply peanuts will do as well. - dried fruit such as dried pineapple, banana chips, and raisins. You can also add chocolate chips or yogurt covered raisins if you feel like splurging, but I tend to stick to the healthier versions. Rice. I cannot emphasize how great rice is. You don't need a rice cooker to cook it either. Get a big bag of rice, because it won't spoil if you keep it tight (so critters like mice and bugs don't get in). To cook 2 cups worth, which is about 4-6 portions depending on how hungry you are. -get four cups of water boiling in a med. saucepan -throw in two cups of rice (always check the package, but for most long-grain white or brown rice this is the ratio) -turn heat down to simmer (a low setting, but not too low that there's hardly any heat) -cover and wait about 7 or so minutes. You might want to check on it and stir every once in a while. To make it more nutritional, get a few bags of those frozen veggies you can microwave or some canned mixed veggies and pop one (or two, depending on size but usually one is plenty) in the microwave according to their directions Stir the veggies and rice, add salt and seasoning, you can also add (only about one to four tablespoons! be careful its SALTY) of soy sauce if desired these are just two recipes I use, the trail mix takes about 2 spoons and can't serve as a full meal, but rather snacks in between meals and at school or on the job to help keep you going. The rice takes about two spoons as well.

This will be quick because it’s late and my memory Sucks, but July was Hot and mostly bad, but there were some notable high points!! One, I GOT A NEW MATTRESS FOR THE FIRST TIME IN LIKE TWENTY YEARS and I haven’t woken up in back pain since! It means I’m officially on a book buying ban because my money is g o n e but worth it. Two, i took not one but TWO trips to the Boston museum of fine art to see the Gender Bender in Fashion exhibit and I cried. If any of you are in Boston, it’s here for another week and I HIGHLY recommend going to check it out! It follows the history of fashion and how it’s been used to express gender, especially in the queer community! And at the end, they feature local people and how they use fashion to express themselves and their sexuality and their gender and I swear I cried so much it was so good. Also book club was this month and it was fun even though my baked good was a Failure and I had to resort to a back up plan (box brownies)(dont tell anyone).

Oh you guys! I’ve never made a Yule Log cake, I can’t believe I did it! I wasn’t sure if it would British Baking Show good... or Nailed It good! I’m so pleased with how it ended up! It’s also gluten free (totally flour free) and it even tastes good! Can’t wait to show Dan, he crashed early with a headache, so I’ll show him in the morning. . Everything is edible, the pinecones are peanut butter, Nutella, butter, and powdered sugar with a pretzel core and chocolate rice Chex! Sage and thyme from my garden sugared. The berries are sugared sour cherry candy. Hi!! Thank you for stopping by!! My name is Stacey and I am so excited to start this blog and share my experiences, thoughts, ideas, recipes and anything else I can think of. Just wanted to tell you a little bit about me. I am a stay at home mom of 3. I have twins that are going to be 25 next month. Geez, where did the time go. I also have an 11 yr old boy that seems like he will be going on 16 😂 My kids are my heart!! I love to craft and make things to make people smile. I have always wanted to start a blog to show my crafts and maybe give someone an idea that you would like to try. And since the holidays are here, I wanted to start this blog now and hopefully share some exciting things.
I also have Celiac Disease, which is an autoimmune disorder. For those of you that may not have heard of Celiac Disease, it is an immune reaction to eating gluten, a protein found in wheat, barley, and rye. Celiac disease is a digestive problem that hurts your small intestine. It stops your body from taking in nutrients from food. I was born with this disease, diagnosed at 9 months of age. The doctors back then told my mom that I would grow out of it. Well, for most of my life I can remember eating cookies, cakes, sandwiches, pretty much anything I wanted to. As I got older I was still ok, until I got pregnant with my twins at 26. Everything was going great until week 22 that’s when things got a little hectic. My twins were born at 22 weeks and 2 days, weighing just about a pound and a half at birth. We spent a long 3 months in the NICU. At that time, I was so sick. I couldn’t eat anything without feeling nauseous. Guess what happened! The Celiac Disease returned!!!! Needless to say I have been on a gluten free diet ever since.
So the first thing I would love to share is a recipe for Sugar Cookie Chex Mix that my family absolutely love to munch on and it’s gluten free!! This recipe makes 12 servings and takes about 30 minutes. The recipe is easy to make and is fun to do with the kids. It’s the perfect snack to gift in cute little tubs that you can get about anywhere. I get mine at the dollar store. During the holidays they have the cutest little tubs and usually come in a two pack, $0.50 cents each is perfect. Keep reading to try this yummy snack!!!
Gluten-Free Christmas Sugar Cookie Chex Mix
This is the perfect recipe to swap for those also yummy Christmas cookies. This delicious gluten free snack is made with sweetened, buttery vanilla mixture, powdered sugar and red and green sprinkles.
INGREDIENTS
6 cups Rice Chex™ cereal
1/4 cup butter
1/3 cup granulated sugar
2 teaspoons pure vanilla
1/4 cup powdered sugar
1 1/2 cups white vanilla baking chips
4 teaspoons gluten-free holiday-colored nonpareils or sprinkles
PREPARATION
Line large rimmed cookie sheet with waxed paper. In large microwavable bowl, add cereal.
In small microwavable bowl, microwave butter uncovered on High 20 to 30 seconds or until melted. Stir in granulated sugar; microwave uncovered on High 30 to 40 seconds or until sugar is dissolved. Stir in vanilla. Pour over cereal, stirring until evenly coated.
Microwave uncovered on High 3 to 4 minutes, stirring after every minute, until thoroughly glazed. Add powdered sugar to bowl, mixing well to coat cereal. Spread mixture on cookie sheet.
In small microwavable bowl, microwave chips uncovered on Medium (50%) 1 to 2 minutes, stirring after a minute, until melted and smooth. Transfer to small resealable food-storage plastic bag; cut off small corner of bag. Drizzle over snack mix; immediately top with sprinkles.
Refrigerate 20 to 30 minutes or until drizzle is set. Carefully break into bite-size pieces; transfer to large serving bowl.
