ive been thinking about the red string superstition recently and also sol bufo always and it makes me sick how uncannily caldwell tanner has made sol to perfectly target me personally

smug because we wanted to add some chiles to a dessert last night, and i managed to suggest The Right One (out of 10-15 options) from my memory of its flavor

#people don't even agree on what aleppo chiles are #so it's impossible for me to figure out how marash chiles relates to and is distinct from aleppo #i wish i had a cute food tag #there was Some Study done on people's sourdough starters #is it affected by the microbes on your hands?#and i think the answer was: nah. it's all your flour.#for satellite bakeries where it's important the starter has to be refreshed from the mothership's starter regularly #because the satellites are using flour from different mills #so i would expect with the chiles. is it really terroir? or are you just processing it differently?
