True price: the solution for food prices that are too low

In 2050 the world population will consist of 10 billion people. How to feed all these mouths sustainably and healthily is one of the greatest challenges of our time. Our current food system needs to change drastically to meet the ever-growing demand. And that is possible, argues Drees Peter van den Bosch, director of caterer Hutten.[1] “However you look at it, we have to start calculating with the actual price of food.”
“Our food system is a result of the Second World War,” says Van den Bosch.[2] “Due to the food scarcity at the time, policymakers set up a chain with only one goal: to produce as efficiently as possible, at the lowest possible price.” A logical perspective given the situation at the time. But for several decades we have known that this system is not sustainable. That is why Van den Bosch advocates a new approach. Together with a number of healthcare institutions and six food companies, he is committed to a sustainable and future-proof food system under the banner of the Foodsquad innovation network.
Need multiple planets
This is the starting statement: the world population will increase from 7.6 to 10 billion inhabitants in the next 30 years. Agriculture is now responsible for about 20 percent of global greenhouse gas emissions; two-thirds of this comes from livestock farming. If we do nothing, the environmental impact of food will increase by another 50 to 90 percent until 2050. In addition, agriculture is a major consumer in terms of land area (40 percent of the earth's land), water (70 percent of the total demand for freshwater), fertilizer (with harmful substances such as ammonia, nitrous oxide and nitrate) and the finite but essential raw material phosphate.
Food chains
“A hundred years ago one would have been considered crazy if he had explained to someone that humanity had to cut forests in Brazil to grow soy for Dutch pigs whose meat goes to China,” says Van den Bosch. “But now this is the most economically efficient system, because not all costs are taken into account.”
“The problem is that the price we currently pay for food is purely based on the economic costs incurred by the producer,” Van den Bosch continues. “All the other negative consequences of food production are transferred to the next generation. Think of soil depletion and contamination by pesticides and fertilisation.” But CO2 emissions from transport, biodiversity loss and underpayment also belong to 'externalities'; not included costs or damage caused by production. “In the meantime, there are enough alarming signals that the old economic model is not sustainable, whether they refer to global warming, underpayment or soil fertility.”
What is the real value?
What the ideal system looks like according to Van den Bosch is simple. “In fact, we should not take more than the earth can recover. The difficulty lies in how we realize this system.” According to Van den Bosch, a large part of the solution lies in calculating the actual price of food; including the externalities. “We can now make these calculations, for example with the True Cost Accounting method of Wageningen University[3]. Calculating this price is not the only goal. The aim is to minimize the identified externalities. One then puts the income generated by the remaining price of externalities in a fund for regenerative agriculture.”
And indeed, this implies that things are getting more expensive. “In my view, this dimension has been ignored for far too long. If we want to achieve the climate goals, the food economy must change drastically.” A task that, in his view, is too complex to be left to the sole consumer. That is why he sees a major role for governments and companies.
Step-by-step solution
Van Den Bosch understands that supermarkets do not raise their prices overnight. “Nevertheless, these parties must realize that they have created a crucial link in the chain over the past 50 years. These retailers have gathered enormous positions of power. Part of the responsibility of the solution lies on their plate too.” He argues for a step-by-step solution, in which supermarkets announce that they will calculate the real price of food within so many years. “You will see NGOs and politicians rallying behind these initiatives, increasing the pressure on competitors to do the same.”
Van den Bosch is also in a place where he can make an impact with his catering company on catering with externalities. “We develop a catering contract based on the real prices. We then have a financial incentive to keep these externalities as low as possible, for example by supplying local and organic food. At the same time, clients can also influence their employees by targeting meat- and dairy-free days.”
And that, according to Van den Bosch, is also the main difficulty of a future-proof food system. “Whoever includes today the real price of a cow fed with Brazilian soy in his calculation, will switch to locally grown feed tomorrow. If you want to contribute to a healthy system, you can adjust your diet. With locally grown vegetables and fruit from the season, protein from nuts and a little bit of meat and dairy. A new food chain really doesn't require us to go back to 1850.” There will always be food flows that travel thousands of kilometres, thinks Van den Bosch. “But the basis must be to close cycles closer to home. Ideally, we get 70 percent of our diet from a three-hundred-mile radius around us.”

@1taeng I don’t have time to make you a gifset or anything (which I’m still sad about TT idc if you say it’s ok) so I’ll write you a letter:
STEPH OMG YOU’RE 15!!! I wish I had some words of wisdom to share with you but tbh I have none. I guess what I can tell you is don’t be afraid to explore and go out of your comfort zone, make friends, join clubs, attend school events, and try your best in school, as annoying as it can be (seriously tho, colleges tend to look at sophomore and junior year the most so keep that in mind ^^ but do well senior year also lmao). But most importantly make your high school years as memorable and positive as you can, even if school is literal hell. It’s only four years so make them worth it! It’ll be tough, stressful, and frustrating at times (especially junior year rip me I was an emotional mess lmao) BUT YOU’LL GET THROUGH IT SO NEVER GIVE UP! High school is honestly the time to find yourself and find your interests so like I said don’t be afraid to explore and try new things. If you find something that makes you happy stick with it regardless of what the people around you say. You don’t need to make anyone happy but yourself okay~.
