Rohi Macha Besara with Cauliflower
"Rohi macha besara" typically refers to a traditional Odia (Indian state of Odisha) fish curry, while cauliflower is a vegetable. I have prepared a fish curry with besara (mustard-based gravy) and include cauliflower, you might want to try a variation by adding cauliflower to the curry.
Ingredients:
Rohi fish (or any fish of your choice) Cauliflower florets Mustard oil Mustard seeds Cumin seeds Fenugreek seeds Turmeric powder Red chili powder Mustard paste Garlic cloves, minced Ginger, grated Green chilies, chopped Curry leaves Salt to taste Water Instructions:
Clean and marinate the fish with turmeric powder, red chili powder, salt, and a little mustard oil. Let it marinate for about 15-20 minutes.
In a pan, heat mustard oil until it reaches its smoking point. Then, reduce the heat to medium.
Add mustard seeds, cumin seeds, and fenugreek seeds. Allow them to splutter.
Add minced garlic, grated ginger, chopped green chilies, and curry leaves. Sauté until the raw smell disappears.
Mix turmeric powder and red chili powder with a little water to form a paste. Add this paste to the pan and cook it until the oil starts separating from the masala.
Add cauliflower florets to the pan and sauté for a few minutes.
Add mustard paste and cook for a couple of minutes, stirring continuously.
Add water to achieve the desired consistency for the curry. Bring it to a boil.
Gently place the marinated fish into the curry. Cover and let it simmer until the fish is cooked and the cauliflower is tender.
Adjust the salt and spice levels according to your taste.
Serve the Rohi Macha Besara with Cauliflower hot with steamed rice for a delicious and traditional meal. Adjust the quantities and ingredients based on your preferences and the number of servings you need.
