2 c. 13 bean mix
7 c. water
4 c. vegetable broth
1 bay leaf
3 carrots, sliced thin
2 c. celery, sliced thin
1 lg. onion, diced
1 t. pepper
1 t. salt
1 - 15 oz. can tomato sauce
1 - 14.5 oz. can diced tomatoes with liquid
2 T. garlic, minced
Optional: 1 bunch epazote leaves - dried or fresh
In a large soup pot, add beans, water, vegetable broth, and bay leaf. Cover, bring to a rolling boil. Add epazote (optional), carrots, celery, onion, pepper, salt, tomato sauce, diced tomatoes and garlic. Turn down to simmer for approx. 2 hours until the beans are tender.
