Everything Bagel Casserole

Ingredients
Cooking spray
4 everything bagels, chopped
1 1/2 cup shredded white cheddar
2 cup cherry tomatoes, halved
8-oz cream cheese, cut into 1/2” cubes
1/2 red onion, thinly sliced
8 large eggs
2 1/2 cup milk
2 green onions, sliced
Kosher salt
Pinch cayenne pepper
1 tsp poppy seeds
1 tsp dried minced onion (the stuff in the spice jar)
1 tsp sesame seeds
1 tsp garlic salt (sub garlic powder)
Instructions
0. Cut the bagels into pieces, halve the tomatoes, slice the onion, and cube the cream cheese. Slice the green onions and keep separate.
1. Preheat the oven to 350°F. Spray a 9”-x-13” (3 qt) baking dish with cooking spray.
2. Scatter about half of the bagel pieces in the baking dish. Top with half of the cheddar, half the tomatoes, half the cubed cream cheese, and half the red onion slices. Repeat to make another layer.
3. In a large bowl, whisk together eggs, milk, and green onions. Season with salt and a pinch of cayenne pepper.
4. Pour egg mixture over bagels, making sure to coat each bagel piece.
5. Sprinkle the poppy seeds, minced onion, sesame seeds, and garlic salt over the casserole
6. Cover with foil. Bake for 45 minutes.
7. Remove foil and bake until eggs are cooked through, about 25 minutes more.
8. Let cool at least 10 minutes before serving
the casserole will deflate, but that’s okay

Just the two of us so rather than the dining places that me and mum usually go to, I proposed Xing Hua Delights (回味轩兴化菜馆). What I liked about this place is their homey cooking style which matched my palate well. While waiting for the dishes to be served, we sipped on Barley Drinks. I had the cold version (S$1.80++) while mum took the hot drink (S$1.30++).
We started off with this small (S$11++) Stir-fried Green Beans (干煸四季豆) cooked with minced pork and dried chilli. The beans are still crunchy in the centre and the chilli gave it a little heat; nothing we Singaporeans couldn’t handle.
Normally we had the pig’s stomach in soup so we ordered this S$12++ plate of Flash Fried Pig’s Maw (爆炒豬肚) for a change. Came stir-fried with plenty of vegetables such as bamboo shoots, sweet peas, black fungus, carrots and onions plus spices like ginger and garlic.
Using the lees (红糟) left over from wine fermentation, the restaurant prepared this S$15++ portion of Red Rice Vinesse Pork Belly (红糟三层肉). The lees imparted the dish its alcoholic fragrant and taste. While the pork bellies aren’t too bad, I found them on the springy side. I actually preferred their chicken version cooked in the same style.

Hot Fried Beef and Sweet Potato
After a long, but interesting and rewarding arvo and evening at Auckland University, I wanted to cook something simple and tatsty for dinner. Something hearty and comforting too, for tomorrow we rise very early for an adventure, a day trip to Hibbiton and Rotorua. This Hot Fried Beef and Sweet Potato is exactly that, and plenty more!
Ingredients (serves 2):
1 tablespoon olive oil
1/2 red onion
350 grams/ounces Angus beef mince
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 sweet potato, thoroughly scrubbed and rinsed
1/2 green chili pepper
1/2 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1/2 large, ripe avocado, to serve
In a large, deep skillet, heat olive oil over high heat.
Peel and thinly slice red onion, and stir into the oil. Cook, a couple of minutes, until tender.
Stir in Angus beef mince, and fry, stirring often, until well-cooked, about 5 minutes. Season with dried oregano and thyme.
Halve sweet potato and cut it into thick dices. Once the mince starts releasing its fat, stir sweet potato dices into the skillet, coating in herbs and fat until golden. Cook, a couple of minutes. Cover with a lid, reduce heat to medium, and cook, another 8 minutes, until sweet potato is tender.
Finely slice green chili pepper, and stir half into the skillet. Season with fleur de sel and black pepper. Cook, 3 minutes more.
Pit avocado halve, and cut into quarters.
Enjoy Hot Fried Beef and Sweet Potato immediately, topped with an avocado quarter, reserved green chili pepper, and a generous dollop of sour cream, if you wish.

Normally mum will be out to Chong Pang for breakfast but today she stayed home to whip up this Fried Kway Teow Mee (炒粿條面) or in English means fried rice cake strips (flat rice noodles) and yellow noodles. In it she added minced pork, omelette, prawns and bean sprouts. For garnishing and added flavours, chopped spring onions and parsley. I also scooped a leftover dish of Stewed Dried Bamboo Shoots to go with the stir-fried noodles. Simple yet delicious meal to start the day.
